I had a chance to try some of the new Sentry nigorizake. When we think of Senzou nigorizake, we have a strong image of the snowman that comes out in winter, but this is an organic nature nigorizake, made in a super ancient way, with a kamenoo, principle principle principle, wood vat, and no added yeast.
The aroma is like a pear.
It has a strong sense of sourness and rice flavor, which is typical of Sentry. It also has a white grape flavor and a silky taste. The supernumerary part is dry and not too sweet, but when the cage is mixed with it, the sweetness comes out.
It is a sake made in the traditional way, but it has a new taste. It is a sake that embodies the philosophy of "old and new creation" that Senju stands for. I have a lot of expectations for this sake.
