I drank the "fighting form" of the figure. It's a pure rice ginjo, unfiltered, unpasteurized sake made with 100% "Kitashizuku" rice from Hokkaido. I've never tasted a full-bodied syochu liqueur before, so I was looking forward to drinking it for a while. It has a discreet standing aroma. The mouthfeel is mild for a unpasteurized sake, and the aroma is gorgeous. It has a characteristic sweetness and umami like apricot, with just the right amount of acidity and a good balance. The overall impression is mellow, gorgeous and delicious. The overall impression of this wine is mellow and gorgeous. I've heard rumors about it, but it's a mellow and gorgeous sake. I'd like to try it in its other sake rice forms.

I drank Shichida's Junmai Ginjo 13. Shichida has a strong image of being a full-bodied rice drinker, but this seems to be a new product that aims to have both the low alcohol content (13%) and the typical Shichida flavor of rice while still being light in taste. Fruity notes of melon and pear. The mouthfeel is definitely light, with some gasiness like a fresh wine. The taste is fresh and sweet like a pear, with just the right amount of acidity. It is very easy to drink with a light impression. I drank a bottle of Shichida a long time ago, but it still doesn't have much of a Shichida feel to it. It must be difficult to balance the two. It's just plain good, and I would have liked it even better if it had more of the typical Shichida flavor.

I drank "S.tokyo" from Matsumidori. The unusual name "S.tokyo" comes from the legendary Saccharomyces tokyo NAKAZAWA, a yeast discovered in 1909, which was used to make this sake. This yeast is the second oldest existing sake yeast and has never been used to make sake. I'm excited just to hear this story! The stylish design of the bottle builds anticipation. The scent has a refreshing citrusy scent. The sweetness is on full display from the first sip. In addition to the sweetness, there is also a tartness that tastes like a white wine. In addition, it has a creamy or rich taste, which may be derived from lactic acid, so you can feel the volume of the drink, which is surprising. It's easy to drink, but it's also hearty, so you can't drink too much. It is easy to drink but not too much. This sake appears to have been designed for the Tokyo Olympics. Unfortunately, the Tokyo Olympics will not be held in 2020, but I hope they continue to make S.tokyo.

I tried the new, limited edition "Initial R SPEC II" from Tsuchida Shuzo. When Tsuchida Shuzo made the sake, they chose to use IDO yeast from among the yeast that were brought into the brewery. Initial R" sold out last year, and this year's sake is being sold again in limited quantities as "SPEC II". It has a banana-like aroma. It is soft on the palate and gently enters the mouth. It has a strong flavor with a slight acidity and a bitterness in the aftertaste. As the brewer said, it still has some hardness, and you can enjoy the changes after opening the bottle. As the brewer says it is recommended to be served at room temperature or warmed up, I think it is even tastier when warmed up. Personally, I enjoyed it better chilled than at room temperature. I thought it was a very quiet sake for an unconventional sake from Tsuchida. I guess if you drink it normally, it would be a very aggressive drink. I'm completely numb to it.

I drank the Collage's Junmai Ginjo, Akaiwa Omachi. This may be the first time I've tasted the Omachi in the Collage. When I bought it at the liquor store, there were two types, Bizen Omachi and Akaban Omachi, but I chose the Akaban Omachi. I was curious to see how much of a difference there was between the two types, but as expected, I couldn't afford to buy both. LOL! The aroma of this perennial Junmai-shu has a cemedyne aroma similar to that of a Junmai-Ginjo. The flavor is like the flavor of rice that is both tasty and sharp. The use of Omachi rice gives it a sense of volume, but it has a flavor that is typical of the Collagen. I realized that the way the brewery is built is more important than the difference in rice. However, after three days of opening the bottle, the sharpness I felt on the first day wore off and the flavor changed to fluffy and plump, and I felt the third day had more of the Omachi flavor. It was delicious, of course, but I personally like the classic Collage. I thought it would go well with the dry taste of Gohyakumangoku.

The izakaya in Shinjuku West Exit. One of the sake they offer is highly recommended by some of my seniors at work, and today I finally got to taste it. The sake is called "Kuramusume", and it is made by the much talked about brewery, Okiyoyoshi, which brews "Shizengo" and "Gakki Masamune". This "Kuramusume" has been discontinued, and we were fortunate enough to be able to drink it while there were only a few bottles left at the store. It was truly a once-in-a-lifetime encounter. The key flavor is that it is easy to drink and clean without any hint of Alzoe. It has a fruity taste like apples in the beginning, but the aftertaste disappears quickly. It goes well with meals and can be drunk easily. The fruity taste in the beginning may be inherited by Instrumental Masamune. By the way, I can't find this liquor on the internet, so I'm guessing it's a liquor that's only available in a limited number of restaurants. It seems to be a brand that has been loved in this restaurant for many years, and after drinking it today, I understand why people love it. I'm really glad I was able to drink it at the end.

When I went to Watanabe Sota Store in Aizuwakamatsu City, I bought this "Kikuzumikawa" in my recent trip to Fukushima and Niigata. It is a local brand "Izumikawa" ginjo-shu from Hiroki Shuzo of "Hiroki". There was a "Izumikawa Junmai Ginjo" in the shop, but I had drunk this one before, so I dared to buy the "Kikuzumikawa" from Alzoe Sake, which I had never drunk before. A gentle aroma wafts through the air. It is very gentle on the palate and smoothly enters the mouth. The taste is very calm, with a hint of rice and alcohol. It's a gentle, gentle taste, and it's a sake I'd like to drink forever. I like it very much because it's a sake that gives you a sense of peace of mind, even though it's similar to Feiroki. I'm jealous of the locals who can drink it at any time. It's a bottle I want to keep in my house.

During my recent trip to Fukushima and Niigata, I visited Gonoi Sake Brewery in Aizu Bangecho. A minute or two away from Gonoi Shouten, there are two breweries, Hiroki Shuzo and Akebono Shuzo, and Akebono Shuzo has a particularly rich lineup of products. I was overwhelmed by the depth of the store and the sheer number of refrigerators on our visit. The "Oh" I purchased this time is from Akebono Shuzo, and is an original product from Gonoi Shouten. I was overwhelmed by the vast array of sake available at the store, and I was overwhelmed when I saw it for the first time. I chose the "Fukudare, Junmai Ginjo, Yamada Nishiki, Nakagumi" from among them. I chose "Fukudarire, Junmai-Ginjo, Yamada-Nishiki and Nakagumi" because I thought the specs were unmistakable. I mailed it when I purchased it and it arrived today, so I drank it right away. It has a fruity yet refreshing aroma. It's unpasteurized, but the taste is calm and soft. The taste is impressive with a rich sweetness that reminds me of a pineapple. However, it is not sweet and has a good balance. Since it is an unprocessed sake, it has a high alcohol content, but you can drink it down easily. In a way, it's a dangerous drink. I was curious to see how many people were drinking it at SakenoWa, and I was convinced that it would be popular. I bought another bottle and I'm looking forward to opening it.

Izumofuji楽登(Lacto)生酛

I drank Izumofuji's Lacto. This sake is made from the traditional sake brewing method using wood vats, and although it is not a special sake, it has a high specification of 45% rice polishing ratio. The name "Rakuto" seems to have a meaning of the world where the lactic acid created by Lactobacillus brings order and peace to the sake. The aroma is fruity like a pear. The taste is lactic acid, just like the sake brewing business. I think it's close to Shinsei in the strain, but it's more rough. There is a bitter aftertaste. On the second day, the corners are removed and the taste is more round. Overall, I got the impression that it was close to Shinsei. We don't know about the yeast, but I'm convinced that we have a lot in common with the wood vat brewing in the Ikizukuri style. Fuji Shuzo started making the sake brewing this year, so we are looking forward to seeing more of this product.

[10/17-18 on vacation] At the second restaurant we visited in Niigata. The food here was delicious and the drinks went on and on. Sorry for the rough impressions, but here are my impressions of each drink (1) Katafune Junmai Sake ...An apple-like aroma. The taste is clean and refreshing with a hint of apple. (2) Takachiyo Blue Label ...I had heard that Hiragana Takachiyo was sweet, and it was true. It was characterized by its rich sweetness. 3. ...It is very easy to drink, and gives the impression of being THE Niigata. Tsururei Junmai Ginjo ...This is a well-balanced sake that is easy to drink with a hint of rice flavor. (5) Niidashi Zensyu Junmai-Ginjo ...Fruity and juicy like a melon. It's honestly delicious. 6. Ganjin Yamahai Junmai Ginjo Original Sake ...It was a delicious drink to drink warm. We ate and drank a lot of things, but the food and sake in Niigata is delicious!

[10/17-18 on vacation] Comparison of Japanese Sake in Niigata. At a restaurant reserved for me by my colleague at my company in Niigata. It looks like a place where you can compare 88 different types of junmai sake from 88 different breweries in Niigata. The system is similar to that of a sake brewery. We drank many different kinds of sake, so I'll post them all at once. (It just smells like a hassle to post them individually lol) (1) Takachiyo Junmai-Shu ...It was dry but full-bodied and rewarding to drink. (2) It Key ...It's a very sweet sake when it's opened, but it has a sour taste that makes it easier to drink, probably because of the time it took to open the bottle. (3) Benihisa Kubota ...Kubota, who doesn't drink for any reason. The entrance is clean, the aftertaste is crisp and easy to pair with a meal. Minenohakubai Junmai Sake ...A full-bodied, sweet, honors sake. 5) Abe Junmai Sake ...The sweetness is there, but it's still a modern flavored drink. (6) Hakkisan Junmai Ginjo ...It's a slightly dry and unconventional drink. There's no doubt that it's easy to drink. 7) Itaru: Junmai sake ...Sake from Sado Island. It's quite fruity and I personally liked it.

[10/17-18 on vacation] We drank some sake at an izakaya in Aizuwakamatsu. We drank various kinds of sake, so I'll introduce them all at once. The level of sake in Aizu region is very high. We drank almost six cups of sake in total. From noon to midday, we drank almost one cup of sake. 💦 (1) Tenmei Sarasara Junmai ...We had some left over. It has a clean, mint-like flavor. (2) Shinsei No.6 S-type ...Fresh and mild. It's unquestionably delicious. (3) Sharaku Junmai-Ginjo Nagoshi sake ...Shalaku's hiyaoroshi. The taste is typical of Sharaku, but it is slightly rounded. 4) Nara-man Junmai-Ginjo ...It has a rich flavor and goes perfectly with heavily flavored foods. (5) Tenmei Turtle's tail, squeezing out of a tank ...I have to admit that I didn't like the twang of the turtle's tail, but this is pretty easy to drink. (6) Aizu Lieutenant General Nagahoya ...Very clean flavor. It was last, but it was clean and easy to drink.

[10/17-18 on vacation] We continued the zero-sequence party. We drank the Shizengo Sawayaka Honjozo that we bought at Sota Watanabe. The Oki Daikichi Honten's Honjozo is called "Gakki Masamune", but I was curious to see what this one tasted like. It smells like an apple. The aroma is quite strong. The sweetness is rather subdued and crisp. There is a sense of brewed alcohol, but that is not a concern. The aftertaste is nice and crisp. It's different from the sweet and juicy "Gakki Masamune", but it's more like an old-fashioned orthodox sake. I felt the breadth of the sake made by Oki Daikichi Honten.

[10/17-18 on vacation] After lunch, I went to the Aizu Higashiyama Onsen to warm up my body, because there was time to drink at night, we had a zero-sequence party at the hotel. I drank Snowdrop Takada Ume from Akebono Shuzo, which I purchased at Sota Watanabe Store. This liqueur is a blend of Akebono-iro plum wine made from Aizu Takada plums marinated in sake and yogurt. The sourness of the yogurt comes immediately after you drink it, and the sourness of the plum comes into play a little later. You can taste the thick, rich flavor of the yogurt, but the acidity makes for a very refreshing finish. It is good to drink as an aperitif or dessert.

[10/17-18 on vacation] We had one more drink at a restaurant in Aizuwakamatsu where we had lunch. We asked for a cup of sake from Tsurunoe Shuzo, the brewer of Aizu Nakasho. I got an impression of sharpness, but I can also feel the taste. As expected of a lieutenant general of Aizu, it is usually delicious. The sauce and cutlet bowl was heavily seasoned, but it was neutralized by the clean tasting alcohol and I didn't feel like I was leaning back after the meal.

[10/17-18 on vacation] I'm going on a trip with my co-workers for two days and one night. I want to drink as much sake as I can in Aizu-wakamatsu on Saturday and in Niigata on Sunday. First of all, we had a lunch in Aizuwakamatsu. We went to a ramen and sauce katsudon restaurant for tourists. Our car driver said we could drink, so we ordered some sake. I asked for a local sake from Aizuwakamatsu, Nakurayama. Specs are unknown. A refreshing yet robust taste. It's a food saké that doesn't lose to heavily seasoned dishes. It was like a local drink. An extra snack (fried noodles?) It was also delicious.

The second drinking with my boss. Since we have tomorrow, we asked for a special junmai of Hitoroki at the end of the day to finish it there. Definitely delicious. It's not flashy, but it's delicious with a strong sense of flavor. There's a sense of mystery and relief when you drink it. It was a great way to have a good talk with my boss while drinking good drinks. It's nice to drink at home, but it's also nice to drink outside with people you know well. Now I will be able to do my best at work tomorrow.

At a sushi bar with my boss. The first drink is Sharaku. Excellent stability. The next one I asked for was the Fumotoi's Bishaku Dry Taste, which was on the restaurant's menu. I have had Fumotoi once before, but this was almost the first time for me to try it. The taste is crisp and clean, which is what we call dry. It's beautiful, but it has a solid structure. I don't usually drink this type of sake, but I enjoyed it very much. The boss I drank with was drinking Eiko Fuji's Black Fox, which he said was also very tasty.

I was able to buy a bottle of Miyamanishiki at a nearby liquor store, so I tried it. Kawanakajima Genmai is a sake that I have a special attachment to. Until then, when I drank it, I only thought it was easy to drink and tasted like water, but the first time I drank it, I thought it was delicious! The sake that I thought was "good" was this Kawanakajima Genbu. At the time, I didn't know words like "mellow" and "umeguchi" and the only thing that came out of my poor vocabulary was "delicious! That was one word. Gorgeous aroma like a melon. It has a slight gasiness and a freshness that is typical of fresh sake. From the moment you take a sip, you can feel the concentrated sweetness and flavor. It has a sweetness like chocolate. The acidity and bitterness in the aftertaste make it a good choice. This is the one you can drink by itself. It's a very greedy sake (a compliment, of course) with a gorgeous aroma, freshness, rich sweetness and deliciousness, and a crisp finish. As always, it's "delicious! Yes.

I drank "Mohawk Girl" by Miura Shuzo, famous for "Houpai". I read in the introduction of a certain online shop that this sake was created in collaboration with the TV show "Shinnisha-san iran" several decades ago. Also, the Junmai sake "Mohawk Musume" (is it the Aji no Machidaya collaboration product?) was sold in part in the past. It seems to be a new product for 2020, a separate product from the The naming and label of this drink has a strong impact on me. LOL. The aroma is a bit more subdued and banana-like. The taste is refreshing, but the rice gives a rich flavor, which makes it useful as a saké. It's hard to imagine from the flashy label, but it's a calm, mature sake.
