I bought a new product from Aizu-Miyaizumi. It's a junmai ginjo brewed with "Fukunoka," a newly developed rice suitable for sake brewing in Fukushima Prefecture. This is the second time for me to drink a sake with Fukunoka, following "Kaito Otokoyama".
The aroma is reserved but fresh.
It's light on the palate. It has a sweet and sour taste, but it is subdued, and I got the impression that it was relatively dry. It is light but has a good flavor. The bitterness in the aftertaste is characteristic and crisp.
It seemed dry when I opened it, but after the second and third days, it became sweeter and more gorgeous and tasty as time went by.
Fukunoka is characterized by the impression that it has a light and tasty taste. The dry aftertaste is also characteristic, and I think I'm starting to understand the characteristics of this second type.
