A special order from Meishukan Takimoto. When I opened it, I heard a powerful popping sound. It is a lightly fizzy, fruity and sweet sake. The sourness comes in at the end. Kawatsuru is always delicious no matter what you drink.

The bottle was opened without any sign of carbonation. The whey-like smell is gorgeous. The taste is dry and rice-like. It finishes with a sense of rice and acidity. It is a taste you can find when you drink orikara-mi. The sweetness is added by mixing in the ori that has accumulated at the bottom, and it is just right. It is delicious. As you get used to drinking it, it becomes more familiar to your tongue and you can drink it in large gulps, and it is irresistibly good as you continue drinking it. It tastes even better after a year in the refrigerator, but I can't wait that long.

I bought two bottles of Nara sake since I've been skipping it for a while. Let's start with Kuramoto-san, a famous sake from Toki Touyama 😋 I've never tasted a new sake before, but this one shows off the charm of Yamada Nishiki to the fullest. Good evening, again for our first series, this time from Nara Prefecture, this brewery 💁♂️ KURAMOTO Ym64 SAKE-TEN 2022BY✨ This is a historical sake brewery, but they have changed their production in recent years to create a more modern lineup. They were recently featured on "Wakate no Yoake" (Dawn of the Young 🙌). This is the latter of the two lines, STANDARD LINE and BIT LINE. The taste also has a clear acidity on the attack for a moment, but soon bursts with a rounded sweet flavor and richness that is typical of kijoshu 😊The finish is light and dry and crisp, and you can just enjoy the lingering taste. I prefer the fresh one, but this sake has the goodness of aging and is very tasty to drink 😋.

Nabari City, Mie Prefecture. Sawa Sake Brewing Company. Sangu Special Junmai Sake Tsukiyomi Sangu" which seems not to be drinkable any more. It was too good to drink, but I opened the bottle because I thought it was better to drink it before it got twitchy. We drank it cold. The first aroma is mild, citrusy, and alkali aroma. The color is clear with a slight yellow tinge. The taste starts with a slightly sharp acidity, and the nose is filled with a fluffy, mature aroma and a gradually swelling umami flavor. A slightly bitter taste lingers on the tongue and is slightly spicy. Maybe not my favorite... I think it is suitable for warming, so I tried heating it up. First trip to Nobee Yokocho this season! When heated, the acidity mellows out, the sweetness spreads as if the entire tongue is coated, the umami is more easily felt, and the acidity is calmed down. It is best when heated from about 50℃ and cooled down to lukewarm or lukewarm. I tried it when pyonpyon told me that heating it up softens the edginess, and it was perfect 😉. Purchased at Umeda Department Store. (Hankyu or Hanshin) One of seven breweries in Nara Prefecture that belong to the Nara Prefecture Bodai-Hashimoto Sake Research Association. See label on back. Rich, mouthfeel It is a sweet type, but the far and spreading umami and bitterness It was delicious and matched well with food. It became mellow and mild when heated to lukewarm and I could enjoy it with ease 😁. I am interested in the history of sake only when I taste Bodaihashi.
