This was my first Koganezawa, a gift from someone. It is a Junmai Daiginjo made from Gohyakumangoku, so I had an image that it was quite refreshing, but it tasted just as it should. But it also has a strong umami of rice and is easy to drink without any peculiarities 😆 It is easy to pair with meals and I was off in no time 🤣. It was easy to match with meals and we finished it in no time 🤣.

Purchased at Ponshukan. It has a cute design that does not look like a cup of sake. The sake is brewed with four varieties of rice produced by four farmers in the Nishigama district, located in the far west of Niigata Prefecture. So that's what the grains of rice on the label mean. That makes sense. The sake was served cold in the cold sake corner at the store, so I chilled it well at home. It has a well-balanced taste, not too sweet or dry. It is easy to drink and delicious. The sake rice is Gin-no-sato, developed by the National Institute of Agrobiological Sciences for western Japan. This is the third bottle of sake rice research. We were careful to open the bottle. It erupted at the same time as the bottle was opened. A sparkling toast? It is good on its own. The dryness of the sake's 15% sake level comes out in the latter half of the bottle.
