( ꈍᴗꈍ)🍶🍶🍶🍶 I just had a bottle of Koshinotaka that I bought when I went to Fukui Prefecture on an errand the other day 😀. The aroma is subdued, and in the mouth you can taste a slight banana🍌 sweetness 😚 clear flavor and dry aftertaste 😊 good sharpness 🥰 good sake to drink during a meal 🍶.

First Eagle of Koshi. Dry, clear and light. A little sweetness and acidity. The last taste is a bit bitter and lactic acidity. The impression is that it is a food sake type. Souvenirs from my husband's business trip to Fukui I have been enjoying it slowly since the weekend. I guess it is the type of drink I don't usually drink. I felt it was dry. This is also a 3-day record. Chiebijin was not enough, so I threw in a small bottle. This is the pink label of Yatsuka, which I have come to like! It feels more rounded than Chiebijin. Delicious!

The brewery is more impressive for its shochu Ginza no Suzume than for its sake. Tasted and purchased. It has a gorgeous aroma and is fruity even when drunk. 1801 yeast is used, making it a sweet and fruity sake that is easy to understand. I wish they would release a fresh sake of this one. I felt it was sweeter and fruity at room temperature than when it was chilled to the perfect temperature.

First brand name Kita no Hana. It is a backroom deal with a sake teacher. Even if I say it is a backroom deal, he will sell me any rare sake at the same price I bought it from the liquor store, and even if I tell him I will take care of the transportation costs, he stubbornly refuses to accept it. I told them that if I sold them at a higher price, the liquor store would take me on as a reseller, and after that, they would never sell me rare sake. The fact that you can normally drink Jyushiyo at home is based on the mutual trust between the seller and the buyer. Kita no Hana, the label is very attractive. I don't detect much of the Kamitatekoso, but there is a round, unfamiliar aroma in the back of the bottle. The mouthfeel is moist, calm, and elegant with sweetness and soft umami, and the rounded aroma in the aftertaste is fruity. The acidity and bitterness are both moderate, and it has a mysterious sharpness that just flutters and closes. It is really a round, gentle and mysterious sake, and this must be one of its balances. Purchased at a liquor store specializing in Hyogo sake with mofu. There were many people drinking sake in the store and the atmosphere was bizarre. When I asked the store staff if it was an event, he told me that they were people who had come from Ozeki's brewery open at a nearby store. The smell of squid filled the air, and the waiter said he was sorry for the smell 🤣. This sake is brewed with salvia yeast collected by students at an agricultural high school. After 3 days, a little bit of rum raisin taste. Definitely tastier than freshly opened 😋.
