This is the back label. I like that it is handwritten at the rice polishing ratio 😁. The rice is Yamadanishiki and Yuyamanishiki. Drink it between cold and chilled. It has a graininess and dried grape-like flavor. It has a strong full-bodied flavor and raisin-like aroma. The acidity is also strong, making it easy to drink without feeling super spicy. This is interesting! It's really very raisin-like 🤣. What the heck is this 🤣 I think it's a bit peculiar and unique too 🤔. I've tasted their raw sake in the past but it smelled like pickles so I quit buying it 🙄. I thought this brewery was closed, but I wonder what's going on now? I heard that they are making a little bit of sake... I don't see any sake coming into our distributor in Osaka. I took the express from Tsuruhashi to Isuzugawa on the way there, but I wanted to take the express on the way back because the long seats were too painful 💦. On a side note, I thought the Ise-Shima license plate number was cool 🚗. I heated it up 🍶. More rounded than cold sake or room temperature, but I got the impression it was a little stronger 🤔.

This is a sake from my hometown - Echizen Ono (Ono City, Fukui Prefecture). It used to be sold at roadside stations, but I looked for it again on my return trip, but I didn't seem to see much of it in the city. I wondered if they are limiting the amount of brewing - or if they are just out of stock. This is the one I found in my parents' fridge. Cool and pungent. A cool spiciness, followed by a nice, clean rice flavor. Then, a strong wave of spiciness hits you. The spiciness swells up while accepting freshness, umami, and sweetness. The intense flavor is intoxicating. After all, Genpei is delicious. I found out that Genpei Shuzo went bankrupt last November, and the direct sales shop was closed. The story of the bankruptcy and revival of the brewery was also seen in the morning drama "Ranman," and I look forward to the time when I can experience the taste of Genpei again.

Yamatsuru is the closest sake brewery to my house, but I haven't had much of it lately. The last time I drank it I got the impression that it was peculiar and not really my cup of tea, but not this Junmai Daiginjo! Clear and fruity, good balance of flavors. It's also gorgeous😋. The price is reasonable for a Junmai Daiginjo, but I think it's worth it🧐 I can't underestimate local sake 😚

Low-polished Junmai-shu from Yamatsuru, a local sake brewery in Ikoma, Nara. The name is Choyao. It was a gift, but it looks like it will cost a fortune💧. I heard it was brewed using a method described in a wooden letter from the Nara period. I wonder if it is true. Anyway, let's try it. Wow! It is indeed as rich and sweet as I had heard! The sake level is a whopping -40❗️ But the aftertaste is refreshing. Surprisingly easy to drink and delicious 😋. It's pretty good 👍I'll have to try this one too 😙.
