June 3, 2023 At Japanese Sake Satou in Matsuyama, Japan. I took a new employee to my favorite restaurant to drinking sake. The last and seventh drink of the day was Koei Kiku Tsukishita Muyori. It is a mellow, sweet and delicious sake, easy to drink easy to drink without feeling the alcohol content. It is easy to drink without feeling alcohol content. It was delicious with grilled sea eel and I enjoyed it with grilled sea eel and tanzaku yam.

This is the hiyaoroshi of Shimoetsu Shuzo's Kirin. The name "Kirin" comes from "Kirin," one of the four spirit animals, and is said to be an omen of good things to come, or in other words, to appear at good omens. Slightly melon-like aroma 😊Smooth on the palate, with a refreshing umami and acidity 😚Smooth, clean finish 🥰Overall, not flashy, but would go well with any dish 🥳👍.

I've always wanted to drink Taniizumi! I wasn't sure which one to choose, but on the other hand, it looks like the regular sake is harder to find, so I chose this one😃! It's a regular sake, but apparently it's Fukuroshibori! The first sip gave me the impression that it was a traditional sake☺️. The first sip was like a traditional sake ☺️ I could taste the strong grain flavor but then the sweetness and mellowness came through 😚 it wasn't dry 😆.

The third group of the Sake Rice and Yeast Association is Gintome and Yuko's Idea from Iwate Prefecture. Iwate is often named after the pure-heartedness of the Tohoku region or after Kenji Miyazawa, and the rice is Gintome, which is a Gin user. Yuko, the yeast, seems to be named after the developer, Ms. Yuko Yamashita of the Iwate Prefectural Industrial Technology Center. It is a clear, dry sake. Sake from Iwate is interesting in many ways. Since it's spring🌸, I think I'll have another bottle of sake with spring in it. I bought a bottle of Shunshin by Nishide Sake Brewery in Komatsu City, Ishikawa Prefecture. I've been curious about this sake for a while but never got around to it. I will have it with boiled flounder 🙏. I thought it might be a bit strong, but it wasn't. It has a nice richness, sweetness, acidity, and a mellow feeling 😆. It's a bit like a lighter version of Tamagawa. As the label says, I preferred it at room temperature rather than chilled 👍

I saw it for the first time at a department store tasting sale, so I bought it. It's not listed on the label, but according to the brewer's description, it's unfiltered undiluted sake. It says "light nigori" but it's not cloudy at all (laughs). It's refreshing and easy to drink. The acidity in the second half is impressive.

@sakebar Fukuzo Fire-brewed sake using Fukuoka Prefecture's original yeast called F44. Slightly sweet aroma of 🍍 on the nose. The palate is slightly sweet with a hint of 🍍. The aroma is as if it was made with hana-yosuyu in mind. However, the aroma is weak because it is fire-aged. The sweetness is also weak due to the weak aroma. I am a little curious to see how it would be like if it were a fresh sake. It was delicious ✨🍍.

One day when I was about to take a rest day, my colleague came to me with a bottle of sea urchin. ‼️ My colleague's wife's father is a kelp & sea urchin fisherman! Great 😆I have no choice but to drink it 😁. The drink was also a souvenir from my boss's trip to the Chugoku region 📦️ I've only had Gozenshu and Kamishin for Okayama sake so I was looking forward to it 🎵. It has a nice firm umami and a good acidity of arabashiri 😋 It was delicious~ ✌️ We had a lot of sake from my coworkers 😅

Rice used is Yamae Nishiki It is supposed to be a sake that goes well with mushrooms, but in the end I did not pair it with mushrooms. However, it has a gentle sweetness, and it was just plain delicious. It also had a mushroom-like flavor, though it was only vaguely. Bitter and astringent tastes are close to that. It's a sweet sake, juicy, but clear and elegant on the palate. It was well balanced and certainly seemed to go well with mushroom dishes.

This is the first Gassen in a year. It has a fruity aroma with a hint of acidity. Let's try it. It is a little sweet, but the acidity makes it not at all bitter! It is different from Natsuzumi and Yukizumi from the same brewery in both mouthfeel and feel.　A liquor store I am familiar with said confidently, "It's our hit product!
