1965 2025/12 Kozutsuru Shiboritate Yamahai Junmai Nama-no-Hara Sake Hyogo Kitanishiki 63 15° 25/11 A+ Kozutsuru, Kami Town, Hyogo 1800 3190 Although it is labeled "Yamahai", it is a medium-bodied sake with a light flavor and moderate acidity. It is a medium-bodied sake with moderate acidity and a light flavor. I would have liked to taste something a little more robust, but this was the original sake. Not too high in alcohol content, not too sweet, and light... I felt grateful, but also a little disappointed... Side note: It has been 20 years since Derek Bailey passed away. I'll be soaking up his sound for a long time after drinking this...

1964 2025/12 Kudokibe Junmai Daiginjo Shiboritate Junmai Daiginjo-Nama Sake 50% Hyogo Yamadanishiki -5 1.3 16° 25/12 A+ Yamagata Tsuruoka-shi Kame-no-i Shuzo 720 1760 It's been a long time since I've tasted Kudokibe. I had the impression it was sweet, but it is still sweet. If you compare it with other sake a little at a time, you can enjoy its elegant and robust flavor without getting tired of drinking it.

1963 2025/12 Taiheikai Unpressurized Junmai Ginjo Nama Shu Gohyakumangoku 55 +1 1.5 15° 25/11 A+ Ibaraki Ishioka-shi Fuchu Homare 1800 3765 I hadn't seen Taiheikai for a long time. It has been 25 years since I bought it and checked it after I went home. It is a little sweet but fresh and tasty. I guess you have to visit liquor stores here and there.

1962 2025/12 Koshino Katora Junmai Shiboritate Junmai Namaeshu 2025BY Gohyakumangoku, Koshibuki 65 +3 1.7 1.3 17-18° 25/11 A+ Morohashi Shuzo, Nagaoka-shi, Niigata 720 1436 It has a rich, drinkable taste. But you can also enjoy the flavor of new sake. This simple but robust flavor is good. Some liquor stores don't carry many Niigata sake because of the image of the "neat and dry" sake of a decade ago, but the Niigata sake I've had in the past three years has not been too bad. It's partly because I choose only hara-sake, but recently there are also lighter hara-sake? There are also some light sake.

This is the same brewery as Yamashiroya.

1959 2025/11 Izumo Fuji Sesshukuun Nigori Nama Sake Sakonishiki 65 15° 25/11 A+ Izumo City, Shimane Prefecture Fuji Sake Brewery 720 1716 No description, but it is made from junmai (pure rice). When the bottle was opened, a little lees came up, but it is an elegant nigori with mild effervescence. It is not too sweet, but has a mild and mellow mouthfeel that goes down smoothly.

Mutsu Hachisen Nouveau Nao Kumi Special Junmai Namaeshu 2025BY Koji : 55% Kake : 60 16° 25/11 A Hachinohe Shuzo, Hachinohe City, Aomori 1800 3850 Hachisen's first in a long time, but the sweetness keeps the volume down. It might be the difference from the red label we drank several times before, but when we checked, all the previous bottlings were all 17 degrees. Is it a difference of only one degree? Or is it a change in taste?

1957 2025/11 Banjo Kotobuki Junmai Ginjo Shiboritate Kiarashi Junmai Ginjo Namaishu 2025BY Koshihikari from Namie-cho 55% Shagin 15° 25/11 A+ Namie-cho, Fukushima Suzuki Shuzo Brewery 1800 3630 This is the first Iwaki Kotobuki brewed at the Namie brewery in a long time. The taste is soft and a little sweet. The clean impression remains the same, and the sake is gentle and easy to drink.

1956 2025/11  刈穂 山廃純米生原酒 番外品 60% +22 19° 25/10 A 秋田 大仙市 秋田清酒 1800 3300 新酒を探しに行ったけど、低アル気味が多くて迷っていた時に+22の19度というこれを見つけて。 で、久しぶりの刈穂、辛口というより甘さを感じさせず、山廃という感じもなくあっさり。 燗にしてみると柔らかな旨味を味わえたので以後は燗にて。 余談ですが、今は刈穂酒造の表記は無いんですね…

1955 2025/11 Ninja Junmai Ginjo NEO Unfiltered Nama-shu 100% Yamadanishiki produced in Shiga 60 17-18° 25/10 A Koka City, Shiga 1800 3520 This is a sake from Koka. I bought it because it was the first brand I had ever seen and it was a draft sake. My first impression was that it was similar to the Kikuyu Iyu I had just had, but richer and deeper. The acidity and flavor balance was better when it was heated, so I will try it warmed.

1954 2025/11 Kikuyu Amezure Daisen Junmai Sake Junmai Namaishu 65% 16° 25/10 A Isehara City, Kanagawa 1800 3420 I thought it was "Kiku Isami", but it was "Kiku Yuu". I thought it was "Kikuyu". I never had a chance to pick it up because I was under the impression that Ameyu was low-alcohol, but when I looked at the label, I saw that it was 16%, so I decided to give it a try, thinking this was a chance of some sort. The first sip had an acidity that preceded the taste, but I was a little concerned about the aftertaste. The next day, however, the acidity subsided, and when I tried heating it up, it became softer and more drinkable. If it weren't so low-alcohol, I'd probably try the rainfall, but some people want that, and I guess each person should choose the sake they like best. On a side note, I would have liked to drink the 36th draft sake again....

1953 2025/11 Hoshiboast Special Junmai Unfiltered Nama Sake Shiboritate new sake 2025BY Koji : Miyamanishiki 23 Kake : Takaneminori 77 Koji:50% Kake:55 -3 1.6 No. 9 series 18° 25/10 A+ Kitakata-shi, Fukushima Kitanohana Sake Brewery 1800 3135 Of all the sake I've had in the past, Hoshi-Hoast has left a particularly strong impression on me. It has been a long time since I found a new sake, so I didn't hesitate to get it. The taste in my memory is hazy, but this time it was a little sweeter. In retrospect, I think it may be the difference between the +5 I drank before and the -3 I drank this time. But I never get tired of drinking new sake with its youthfulness, strength commensurate with its strength, and robust flavor.

1952 2025/10 Koshinohomare 90YELLOW Junmai Unfiltered Nama Sake 2025BY Hazuki Minori from Kariwa Village 90 -4 2.8 1.5 Association No.701 16° 25/10 A Niigata Kashiwazaki City Hara Shuzo 1800 3300 This is the first new sake of the season. It is 90% sake, but unexpectedly it is not peculiar. The acidity is quite strong, but there is also a robust flavor that does not lose to the acidity. It may be the character of the rice...but as the amount of sake goes on, it becomes a bit hard to drink.

1949 2025/10 Yamaboshi Junmai Bakurai Dry Dry Mouth Nama Shu Nama Shu Dewa-no-sato 70% +28 1.3 18° 25/10 A Yamagata Higashine City Rokkasen 1800 3278 I had seen Yamaboshi many times, but this was the first time I checked. +I opened it and found the aroma to be unexpectedly refreshing. When I drank it, I found it to be a little stimulating, but the overall flavor was clean and refreshing. When I tried heating it up, the aroma didn't seem to match the sake, so I kept it cold for the next few days. The sake was finished with a surprisingly light and refreshing taste.

1948 2025/10 Yumemado Tokubetsu Junmai Nama-nazake 60% 17° 25/8 A+ Matsuzaka City, Mie 720 1776 This sake is a pure sake that has been aged for a long time. The aroma is mild on the palate, and the flavor is somewhat nostalgic, but with a robust taste and a bit of character behind it. It was my first time drinking this sake, but I got the impression that it was a simple but very tasty sake I used to drink in the past. When heated up, the flavor became more mellow and different from that of cold sake. While everyone is trying to be modern and end up with the same old thing, this is a sake that is safe to drink and tastes like the old-fashioned way, I am thankful for the old-fashioned sake that I can drink with peace of mind. Although the type of sake is a little different, I felt happy to have found a new sake in the same Mie region as Miyamasugi, which I can no longer drink.

1947 2025/10 Kyuyo Masamune Junmai Sake 65% 14° 25/5 A 720 At the place we visited. I was offered a rare one. It has a light but pleasantly sweet taste with a firm flavor. It had been a while since I had had a fire-brewed sake, but I thought it would be nice to have one like this once in a while, and the cup was quickly consumed. Later, I checked to see if it was from the Koro-no-Kura, and it was.

1946 2025/10 Tanigawadake T4 Nama Sake - 1.7 1.2 K1801 16° 25/4 A+ Kawaba-mura, Gunma Nagai Shuzo 720 1750 This is a junmai nama-shu, though no details are given. Just before drinking, I noticed the Floral Blue label... But the aroma is not so strong and does not interfere with the taste. It is good for casual drinking. I found out later that the yeast is 1801, which I had been a little reluctant to use, but it seems to be just right.
