Special Junmai Unfiltered Nama Sake Omachi from Okayama 58 +1 1.5 1.4 17° 24/12 A+ Katanozakura Special Junmai Omachi Direct Kumi ver. 720 1815 The recent past has seen a series of relatively light and soft sake, but this is the first simple, rich and umami sake in a while. While there are more and more delicious sake with different tastes these days, this one made me feel like I was back on my home turf.

1893 2025/2 Akishika Junmai Sake Aragoshi Nama Shu Akebono 70% +7 2.0 1.7 601 16% 24/12 A+ Nose-machi, Osaka Akishika Shuzo 720 1375 The first Akishika in a while was a nigori. When I turned on the perforated cap, there was no fizz at all. But since we are here, we had a clear sake for the first drink. There is no effervescence, but the acidity is pleasantly refreshing and dry, but the taste is firm. When I mixed it with thick lees, it became a little more robust, but it was not sweet, so the cup went on drinking. It might have been different if it had a fizzy taste, but I think I preferred the clear sake this time.

1892 2025/2 Seiki Sama Junmai Ginjo Yumenokou Nama-genshu Yumenokou from Fukushima 50%. +3 1.5 16° 24/12 A+ Fukushima Shirakawa City Aruga Jozo 1800 3520 The first sip gave the impression of dragging a bit of sweetness, but it settled down from the second day, and the acidity and slight bitterness seemed to tighten it up. Koikuma was also made at this brewery.

1889 2025/2 Tanaka Rokuugo Junmai Namaishu Itoshima Yamadanishiki 65 14° 24/12 A+ Shiraito Shuzo, Itoshima City, Fukuoka 1800 3630 I tried this one even though it was supposed to be 14°. It is light but has a firm taste with lees involved. It is easy to drink, so it is easy to go on drinking.

1888 2025/1 Seimasa Happo Shiboritate Junmai Namaisake Yuyamanishiki produced in Nanto City, Toyama Prefecture 60% 15° 24/12 A+ Toyama Nanto City Narimasa Shuzo 720 1540 It's been a long time since I've seen this Narimasa at the local liquor store. The lees are slight but the pleasant effervescence, as it claims to be effervescent, enhances the robust flavor of the sake, which is not too sweet and is not too strong.

The freshness of the sake and the strength of the raw sake with a strong acidity make me feel the pleasure of drinking sake. This kind of sake makes me happy.

1886 2025/1 Koshinotaka Araubashiri Nama Junmai Ginjo Green Hawk Gohyakumangoku 50 +8 1.4 1.2 17° 25/1 A Fukui-shi, Fukui Ito Shuzo 1800 3740 We had a hard time deciding between this and Junmai Shiboritate (Kasumishu). The overall impression is clean and clean, and the alcohol content is not too high. A little bitter on the palate, but it settled down as I drank more. I would like to try the Junmai next time.

1884 2025/1 Takeba Junmai Unfiltered Nama Sake 2024BY Noto Gohyakumangoku 60 17° 24/12 A+ Kazuma Shuzo, Noto Town, Ishikawa 720 1870 This is the first Takeba in three years. The acidity supports a fairly rich umami with depth of flavor for a raw sake. Takeba is still delicious.

1883 2025/1 Noto Suehiro Shiboritate Junmai Sake Junmai Unfiltered Nama-shu 2024BY Gohyakumangoku 65 17° 24/12 A+ Nakajima Sake Brewery, Wajima City, Ishikawa (Production site: Azuma Shuzo, Komatsu City) 1800 3740 This sake has a rich, umami taste with the flavor of a pure sake, and a strength that is commensurate with its strength. When heated, it becomes softer on the palate and the strength is more pronounced, making it a delicious sake that is drinkable either way. It seems that this sake was brewed at the Kamiizumi brewery (Higashi Shuzo) after the brewery was destroyed in last year's earthquake, and the collaboration not only in the production but also in the label is quite nice.

I enjoyed the rest of the bottle about 3 days after opening the mouth and found the latter half to be more mellow.

1881 2025/1 Oroku Junmai 80 Unfiltered Nama Sake 2021BY Yamadanishiki 80 17.5° 24/12 A+ Matsue City, Shimane 720 2420 This sake has been aged for over two years. It has a rich, robust flavor that retains the raw taste. When heated, it has a softness and a different taste.

1878 2024/12 Wakanami Junmai-shu Nama-shu 65% +3 1.8 15° 24/11 A+ Wakanami Shuzo, Okawa-shi, Fukuoka 1800 2860 Fresh mouthfeel. The medium-bodied mouthfeel is firm and the umami is supported by a refreshing acidity with a slight bitterness that finishes off the palate. Delicious sake.

1877 2024/12 Junsei Hyogo Yume-Nishiki Namaishige Junmai Ginjo Nao Kumi Yume-Nishiki from Kasai City 60 17° 24/12 A+ Kasai City, Hyogo Tominishiki 1800 3300 There was also an orikarami, but I went for the direct-kumi version. It is not so much a clear sake as a hazy one. It has the lightness of a new sake, as well as an acidity and umami that give it depth. It is indeed Fukunishiki that you never get tired of drinking.

1875 2024/12 Soutenden Tokubetsu Junmai Taregara-mi Freshly Shiboritate Nama-no-Umamoto Sake Manamusume 100 from Miyagi Prefecture 60 +2 17° 24/10 A+ Miyagi Kesennuma City Otokoyama Honten 720 1595 This year too, they sold out of the 1-sho bottle, so we had 4 gou (4 liters). The impression of new sake was the same as last year, but it was a little milder or quieter, and when we checked the impression, we found that the rice used was different. The impression of the drinker changes as well.
