1883 2025/1 Noto Suehiro Shiboritate Junmai Sake Junmai Unfiltered Nama-shu 2024BY Gohyakumangoku 65 17° 24/12 A+ Nakajima Sake Brewery, Wajima City, Ishikawa (Production site: Azuma Shuzo, Komatsu City) 1800 3740 This sake has a rich, umami taste with the flavor of a pure sake, and a strength that is commensurate with its strength. When heated, it becomes softer on the palate and the strength is more pronounced, making it a delicious sake that is drinkable either way. It seems that this sake was brewed at the Kamiizumi brewery (Higashi Shuzo) after the brewery was destroyed in last year's earthquake, and the collaboration not only in the production but also in the label is quite nice.

I enjoyed the rest of the bottle about 3 days after opening the mouth and found the latter half to be more mellow.

1881 2025/1 Oroku Junmai 80 Unfiltered Nama Sake 2021BY Yamadanishiki 80 17.5° 24/12 A+ Matsue City, Shimane 720 2420 This sake has been aged for over two years. It has a rich, robust flavor that retains the raw taste. When heated, it has a softness and a different taste.

1878 2024/12 Wakanami Junmai-shu Nama-shu 65% +3 1.8 15° 24/11 A+ Wakanami Shuzo, Okawa-shi, Fukuoka 1800 2860 Fresh mouthfeel. The medium-bodied mouthfeel is firm and the umami is supported by a refreshing acidity with a slight bitterness that finishes off the palate. Delicious sake.

1877 2024/12 Junsei Hyogo Yume-Nishiki Namaishige Junmai Ginjo Nao Kumi Yume-Nishiki from Kasai City 60 17° 24/12 A+ Kasai City, Hyogo Tominishiki 1800 3300 There was also an orikarami, but I went for the direct-kumi version. It is not so much a clear sake as a hazy one. It has the lightness of a new sake, as well as an acidity and umami that give it depth. It is indeed Fukunishiki that you never get tired of drinking.

1875 2024/12 Soutenden Tokubetsu Junmai Taregara-mi Freshly Shiboritate Nama-no-Umamoto Sake Manamusume 100 from Miyagi Prefecture 60 +2 17° 24/10 A+ Miyagi Kesennuma City Otokoyama Honten 720 1595 This year too, they sold out of the 1-sho bottle, so we had 4 gou (4 liters). The impression of new sake was the same as last year, but it was a little milder or quieter, and when we checked the impression, we found that the rice used was different. The impression of the drinker changes as well.

1874 2024/12 Mimuro-Sugi Junmai-Ginjo Yamadanishiki Oorigarami Junmai Ginjo Unfiltered Nama Sake Yamadanishiki 60 13° 24/11 A+ Imanishi Shuzo, Sakurai City, Nara 1800 3740 It's been a while since I've had a Mimurosugi. I thought I was being careful while holding the cork, but the cork flew off while I was removing the aluminum cap and blew up so fast that about 3 gou of it went from the table to the floor. ...... By the time I cleaned up and got back to work, the wine was in a good, slightly fizzy state, sweet but light, so it didn't drag. But the whole room smelled of the new sake and it was as if we were in a brewery. It's like being in a brewery. ......

The flavor gradually increases on the third and fourth days after opening.

1872 2024/11 Tsururei Nigori Sake Junmai-shu Nama-shu 60% 17° 24/11 A+ Aoki Shuzo, Minamiuonuma-shi, Niigata 1800 3641 This is a new sake from Tsururei, which was very good last year, and this year it is nigori. It has a pleasant flavor on the palate, a little bit of the strength of the pure sake in the clear sake, and a touch of gentleness and sweetness when the lees are involved. While enjoying the difference in flavor, I drank too much and fell asleep because both were so delicious. On the second day, I drank three more gos of sake, although I was careful not to drink too much. In the end, I emptied the bottle in three days with only cold sake.

The first sip is refreshing with a slight effervescence. It is sweet, but the acidity is also effective and the flavor is robust, so you will never get tired of drinking it.

1870 2024/11 Toyobai Junmai Shiboritate Junmai Namaisake Koji 55, Kake 60 +1 to +3 1.4 to 1.6 In-house yeast 16° 24/11 A Hirosaki-shi, Aomori Miura Shuzo 1800 3630 This is the first Toyobai Shiboritate in a while. It has a mild flavor and taste but seems lighter than the Shiboritate I remember. Checking the old records, I found that the previous bottles were 17-18 degrees Celsius. I checked the old records and found that the previous bottles were 17-18 degrees, but this one was 16 degrees, so maybe that's the difference?

1869 2024/11 Chichibu-Nishiki Special Junmai Nama-shu Shiboritate 2024BY Nagano Miyamanishiki 60 +2.6 1.9 18.6° 24/11 A+ Yao Honten, Chichibu-shi, Saitama 1800 2860 The third new sake is Chichibu Nishiki. It has a firm umami taste with a freshness and youthfulness that is typical of new sake, complemented by the acidity. The best thing about it is that the 18% alcohol content doesn't make you feel it's too much. Like "Kasumi", I really appreciate the fact that they can brew such an easy-drinking and tasty sake without using low alcohol.

1868 2024/11 Hiroki Sparkling Special Junmai Activated Nigori Nama Sake Hitomebore from Iwate 60 ±0 15° 24/9 A+ Shiwa Shuzo Brewery, Shiwa Town, Iwate 720 1650 When I turned on the cork, the foaming was mild... but it almost blew out as soon as the lees came to the surface and I hurriedly closed the cork. The bottle was opened after about three minutes while slowly stirring the lees. The taste was clean with a moderate sweetness, and the lees did not touch the tongue at all despite its richness.

1867 2024/11 Mousou Sangyu Dry Junmai Ginjyo Oorigarami Nama Iwafune Koshitanrei 55 15° 24/4 A+ Niigata Murakami City Taiyo Shuzo 1800 3300 The Sanyu was delicious last year. I decided not to drink it right after it was released from the brewery in the spring, so I kept it over the summer as I did last year. The first sip has a fresh flavor with a slight effervescence. It has a subtle leesiness and umami supported by acidity. Although it is said to be dry, it is moderately sweet. It was kept cold and was empty within 3 days.

The slight bitterness in the aftertaste, however, helped me to drink it without dragging it down too much.

1865 2024/10 Choryu Sobo Junmai Genshu Aged Sake H29BY Rusubafu 65% -8 2.5 -8 2.5 Yamanokami yeast 13-14° 23/11 B Nara Hiroyo-cho Choryu Shuzo 1800 2640 24/10/12 (Taste test) The Futaho was impressive at the Choryu brewery. Although there is no mention of it on the label, I was looking forward to drinking it as it was aged for 7 years in H29BY (7 years old). The aroma was mild at room temperature, and no matured aroma could be detected. I expected it to be a darker, sweeter sake because of its low alcohol content, but it was unexpectedly light and easy to drink (later I checked the sake's nihonshudo (sake alcohol content) level and found it to be -8, which is quite different from my impression of the sake). The acidity only slightly subsides when heated, so I decided to refrigerate half of the bottle and leave the rest at room temperature for a while in anticipation of changes after the bottle is opened. 10/28-: After about half a month, there was not much change, so we kept it chilled and heated.
