Taga is really my favorite brewery. It is refreshing for summer, yet has a great umami flavor. It's also good for a lunchtime drink with some pickled vegetables ✨.
Although it is described as a dark nigori sake, it is very easy to drink, and if you close your eyes when drinking it, you may not even think it is nigori.
Aged for 10 years. The aroma of maturity is well controlled, but it is not too twisted and is very easy to drink. The label on the back says it is an introduction to aged sake, and it is.
It's been a little while since I've been to Chung An Liquor Store. I have not been here for a while, and there are a few things I have never had before. I started with this Junmai Ginjo Nama Sake, which does not seem to have much freshness.
Taga-san's Junmai Nigori is my super favorite, but this brewery also has a great selection of all their sake, so please try them when you come to Shiga.
From the tangy mouthfeel of the direct-drafting, it is enveloped in a delicious fruity aroma and well balanced with a hint of acidity, giving it a high degree of perfection.

The acidity is moderate, but it is a delicious nigori sake. The label on the back of the bottle says it is also good heated, so I would like to try it heated next time.
There are several places that serve freshly squeezed sake of the morning under the name of "This Morning Shibori", but this one is from Hagi no Dew's place. As the name suggests, it is fresh.
This is the third of the Uchinomi Junmai extra edition. It is hiyaoroshi-no-goshi, so it is an autumn sake, but I drank the last one. If I find it this fall, I will try it again.
We received the one that arrived from the warehouse today before the fire. The handwritten characters of 24 solar terms, "Keihinetsu" (meaning that spring has come and insects are starting to move), are good.
It has a deep, slightly twisted flavor, perhaps because it is fire-brewed but has been laid down for a year and a half. The name is foreign, but the taste is for the experts.
