Taga-san's Junmai Nigori is my super favorite, but this brewery also has a great selection of all their sake, so please try them when you come to Shiga.
From the tangy mouthfeel of the direct-drafting, it is enveloped in a delicious fruity aroma and well balanced with a hint of acidity, giving it a high degree of perfection.
The label says so, and it is true. LOL!
The acidity is moderate, but it is a delicious nigori sake. The label on the back of the bottle says it is also good heated, so I would like to try it heated next time.
There are several places that serve freshly squeezed sake of the morning under the name of "This Morning Shibori", but this one is from Hagi no Dew's place. As the name suggests, it is fresh.
This is the third of the Uchinomi Junmai extra edition. It is hiyaoroshi-no-goshi, so it is an autumn sake, but I drank the last one. If I find it this fall, I will try it again.
We received the one that arrived from the warehouse today before the fire. The handwritten characters of 24 solar terms, "Keihinetsu" (meaning that spring has come and insects are starting to move), are good.
It has a deep, slightly twisted flavor, perhaps because it is fire-brewed but has been laid down for a year and a half. The name is foreign, but the taste is for the experts.
It has a robust flavor and a delicious mouthfeel that can be enjoyed quickly. This is a sake that is not a major player, but you should try it when you come to Shiga.
It is also not modern, but as the label on the back says, Kirakucho's goal is to make a "gentle" sake, so it is one thing not to follow the latest fads.
This is EX2 of Uchitonomi Junmai Extra Edition from Kamikai. 300ml bottle only. It is a slightly effervescent, light nigori (a light cloudy color), modern style, and super tasty. I wish they would release it in a 1.5 liter bottle or a 4.5 liter bottle.
Fujimoto Shuzo's main brand is Kamikai, which often appears in Shiga as a consecrated sake at ground-breaking ceremonies. As the name "uchinomi" suggests, this is a delicious sake to drink in the comfort of your own home.
This is Haginodoro's Amedare light nigori. It has the flavor of rice and is very easy to drink while retaining the sake-like character. It is a cup that connects sake lovers and sake beginners.
The name "Misato" (beautiful village) means "to preserve the unique terraced rice paddies of Japan. The drinking comfort of this 80% polished sake is magnificent.
