Rice used is Yamae Nishiki It is supposed to be a sake that goes well with mushrooms, but in the end I did not pair it with mushrooms. However, it has a gentle sweetness, and it was just plain delicious. It also had a mushroom-like flavor, though it was only vaguely. Bitter and astringent tastes are close to that. It's a sweet sake, juicy, but clear and elegant on the palate. It was well balanced and certainly seemed to go well with mushroom dishes.

The aroma is a little bit sweet. I don't know if it has any particular characteristics. If I had to say, it's a bit like the Sentori we drank last year. Then, take a sip. It has a sweet, berry-like aroma, but the flavor of the rice spreads quickly. ❗️ sweet and juicy 🍶. The aroma is much stronger in the mouth, more complex and a bit peculiar. It's not the ramune juwa~❗️ like Yamamori, but this is a delicious one that you will want to repeat. It's hard to describe, but it was that kind of sake that felt fun to drink 🍶.

Drinking outside for the first time in a long time 2 Daiginjo-shu from local Ibaraki It's a quintessential Daigin, and the cleanliness is outstanding. My personal preference is for a sake with a little more coarseness and I prefer a sake with a little more coarseness and I think I like it better. Don't get me wrong, as a daiginjo-shu, I think it is a wonderful sake!
