The 5th Shinmame Festival, the 5th Kanno Thanksgiving Mie Shinshu Matsuri (10) I was a little excited to see the brewer of Shinra Sake Brewery, who was a part of the Mie Sake Enjoyment Group event, but he did not show up this time, which was a shame. ◉Yumemado Tokubetsu Junmai Sake Genshu This sake is produced in extremely small quantities. It has a thick nutty flavor. It has a chocolate and caramel taste, which is also quite unique. The richness has a classical feel to it. I think I can understand why the brewer made old, matured sake. I bought it at the Mie Sake Festival, and it's sitting in the fridge, but I might leave it alone for a while.

bouken-san, I bought the same one in Mie 🍶. The brewer said that all Koshoku Souzen is matured in its raw state and if it's not matured in its raw state, it won't mature well😊.
