It is delicious. When I read Shinzo, it was Kagura. I bought it at Shimada Sake Shop because I thought the typeface of Shinzo was cool. As it says, "the corners are removed and the sake becomes rounded." It is delicious!

I was deleting photos and found an unposted one. I'll register this brand because I don't drink much. I was attracted to this sake because it is "limited to restaurants". The fact that it is not limited to Izakaya (Japanese-style pubs) is very Kyoto-like. I remember we were all oohing and aahing over the cool label when the bottle came out!

Chiyoroku given to me by a friend. It's my first time 🙌 It's a junmai daiginjo, but it's so refreshing and easy to drink 😆. It has a moderate sweetness and a slight bitterness with a nice sharpness. The alcohol content is 16%, but you don't feel it at all😅. It was a very light summer sake 😆.

Hitogochi rice is used. I got the impression that the freshness and fruity sweet/umami taste was accented by a slight bitterness. I think I prefer the Misuzu Junmai Ginjo I drank before, which has a stronger sweet/fruity flavor. I think it gets sweeter and better after a longer time than when it is freshly opened.

This one was given to me in return for sake I sent to my boss, and it's my first Fukuoka Prefecture sake! I didn't know what to choose when it came to Fukuoka sake, so I'm very grateful to be able to drink it in this form! It is a well-balanced and delicious sake. The most wonderful thing about this sake is that it is fire-aged, so it is hard to lose this flavor. It tastes great even after a few days. Although there is sweetness, it does not bother you too much because the main flavor is umami. What is this feeling of being able to drink without getting tired of it? It is not so much sourness, bitterness, or astringency, and it is strange that it is smooth but somehow deep and earthy. Actually, I forgot to post this post after drinking it, but I had this one for New Year's Day. This kind of aromatic and light sake was definitely a good match for Japanese dishes like Osechi. My first Fukuoka sake was a simple and good sake.

No.12, Makiki. This Kyuneki dry sake was from the famous Takachiyo Brewery 😳. I had no idea 💦. When I tried it, oh my! Nice sake✨! Sharpened and clear, followed by umami and dryness 💪. Light but powerful 💪. Goes well with fish 🐟.

GW has been too hot. It's over 30 degrees Celsius again today 😱. So, I wanted to drink a crisp sake, so I opened a bottle. I wanted to try Makiki. If Takachiyo is good, Makiki must be good too, right? Yes, it is good. It has an apple aroma and a bit tangy. It's a refreshing adult cider-like sake with a moderate sweetness. It is a perfect drink for when the weather is getting hotter.

I asked if there was anything cold? I asked and a rare sake was served 😳. This Kikutaka is no longer available 😊. Thankfully we had it 😃. It has a rich flavor as if it is unfiltered Yamahai, and the acidity is quite strong and peculiar 😊. I think it is a good choice for those who drink it 😊.

At home. First time on Mt. Ena ~ ‼️ I thought it was absolutely delicious and bought it. And I opened the bottle immediately. Well, the aroma is gorgeous. It is smooth, fruity, and has a perfect balance of sweet and sour tastes. ‼️ It is also very easy to drink, so it was a perfect choice. ‼️ My son, who was with me, took a sip and tasted it. He said, "It has a noticeable sourness. He understood very well. I felt that our family's level of Japanese sake tasting is improving little by little.

It's not a scent... it's more of a... distinctive smell... and I can definitely tell it's fermented... lactic acid bacteria? Strong acidity! It's a very unique wine, so I think it's a very special drink. I think the flavor is a little more mellow on the second day after opening. It was well preserved, but... but does it really taste like this? That scent? It smells like fresh laundry... like an old wooden tub... and I don't like it... I don't...

This was also purchased at Oka Sake Shoten, the same place as Unjaku. The aroma is mild but unique. The aroma is mild but unique, and it has a light aged feeling, probably because it has been shipped for a long time. If you drink it cold, it has some peculiarities, but overall it is flat. The umami acidity has a strong impact. It would be good to warm it up as well. According to the staff at the store, they won't be making PURE PINK this year. When heated, the sweet and savory flavor really shines through. I definitely recommend it over cold sake.

The rice used is Omachi from Okayama Prefecture. It has a dark mouthfeel and a bit of maturity, but as the days go by, it becomes more rounded and changes to a level where even those who are not good at it can go. However, even though it has become more rounded and easier to drink, the sweetness and strength of the Omachi can still be clearly seen, so there will be different tastes. For me, it's a very interesting sake! The first day I opened the bottle, I thought it might be too peculiar to pair with a meal. However, from the second day onwards, while maintaining its richness, it gradually becomes lighter and lighter, and is not bad as a food sake. If you roll it around in your mouth, it is a nicely aged sake, but if you drink it with gusto, you can drink it without worrying too much. Still, I want to enjoy the aged feeling of this kind of sake, so drinking it a little bit every day is good for me.
