The fresh fruity sweetness that is typical of Iwashimizu rises up in a straightforward manner, and the mouthfeel is smooth. The sweetness alone does not push it over the edge, but the clear acidity and slight bitterness that appears in the middle of the bottle keeps the whole structure tight and does not let you down as you continue drinking.
The balance between gorgeousness, transparency, and drinkability is very good, and while it can be enjoyed without hesitation, it is a bottle that gives a strong sense of the Iwashimizu character.

It will be pressed in 2022 and aged at -5°C for about 3 years. 200 bottles per year will be sold in a 10-year plan. The koji ratio is 50%.
The taste has a gorgeous sweetness reminiscent of fruits and flowers typical of Iwashimizu, followed by a slight bitterness and clear acidity in the latter half. While it has the thickness and depth that comes from aging, it is not heavy and is very easy to drink.
This is good. This is a bottle that you will want to spend a lot of time chasing after.

It is also very sweet with 12 degrees of alcohol. It is a juice. It's a sweet sake aimed at women who don't know about sake. On the contrary, I think it is too sweet for women who know sake. By the way, it was written in the explanation of the store that it is a sake for women.

It is made with a luxurious 80% koji ratio. We bought two bottles, one rough and one medium. This one is the rough runner and probably has a cleaner impression than the medium runner. The fruitiness and aroma are gorgeous, and while delicate, it is also complex and delicious with depth and umami.
As the name suggests, you can feel the philosophy of Iwashimizu. It goes surprisingly well with meat dishes, with a sense of unity that overlaps the deliciousness of meat and meat. The balance between sweetness and a hint of bitterness is superb.
50% koji rice. It has a rich sweetness and umami, yet is so elegant that it is hard to believe it is a pure sake. Souplesse is an orikara-mi (orikara rice) sake with 20% koji rice because it is a "niwari" nengo. It is clean, modern, and pleasantly refreshing, like a summer sake. It gives the impression of champagne, and I thought it would go well with the appetizers of the course meal.
