Back in the day, Niigata's Sanbai was an extremely hard-to-find brand. I often visited Niigata Takata on business and was often presented with it. At the time, I had no interest in sake at all and almost never went through with it. Now, in 2021, Koshino-Kanbai is easily available at Aeon. Mine-no-Hakubai is also often seen as Hishiko at local liquor stores. However, Yukinubai is not so easy to find in my hometown. So, I got it on a business trip to Joetsu. I paired it with a taste of spring, firefly squid and broccoli with olive oil. It has a moderate aroma of cemedine or banana. It is sweet. It harmonizes with the sweetness and bitterness of firefly squid and broccoli. Lastly, there is a final bitter taste that is refreshing and delicious in the mouth!

It is a gift from my brother back home. We drank the rest of the sake at the New Year's party. We had a stable Honjozo and a more beautiful Daiginjo. Both of them were good sake.

When I went to Kobe Kita Aeon today, Daimon Shuzo was there. I heard that it was brewed with Gohyakumangoku (five hundred million stone), so I decided to try it. This is my second sake from Osaka. My favorite robust dry sake. It is delicious.

@sakebar Fukuzo This sake is from the same Kobayashi Shuzo Honten as the "Hakata no Mori" I posted a while ago. Mandai must be more famous locally 🤔. It will be pressed on the morning of Risshun 🍶. The aroma on the nose is fruity🍍 and sweet. When you take it into your mouth, it has a deep, mild sweetness and umami that is typical for a draft sake, and it finishes with a slight astringent taste. It was delicious 🍶✨.

Shikoku x Sake Country 2025 Sake Brewery Wonderland On Osaka - A Spectacle of Sake and Food in Shikoku ⑭ Kawazawa Sake Brewery has been on my radar ever since I saw the news about the brewery's birth. The brewery owner's son? An elementary school boy was going around handing out flyers 😊. Seeing something like this makes me want to support them🤗. We drank Clouds on the mountain Zaagusaag Special Junmai Gohyakumangoku, 60% polished rice I got the impression that it was a dry sake with a good sweetness and umami. Yama ni Kumo no Karara Karara Junmai Daiginjo Gin no Yume 50% polished rice The aroma is sweet. It is sweet and fruity. The acidity is fruit-like. Low alcohol content, light and easy to drink. Expect to find it in the antenna store at KITTE.

Shikoku x Sake Country 2025 Sake Brewery Wonderland On Osaka⑭ The booth of "Clouds in the Mountains" in Kochi. This is the newest brewery in Kochi, established in 2024 by Takahisa Kawazawa, the toji (master brewer) of Kameizumi Sake Brewery. Yama ni Kumo no Karara Karara ◉Yaman ni Kumo Karara The sake rice is Gin-no-Yume and the yeast is AA-41, which I had heard tends to give a banana taste, but this one has a sharp citrus acidity. It has a Junmai-shu character and is somewhat modern. Clouds over Mt. Sake rice is Gohyaku-Man and the yeast is AC95-80. This one has a milder acidity and is more like a standard sake. Sharp standard.

Yahiko Sake Brewery in Yahiko Village, Niigata Prefecture. The main brand was "Echino Hakusetsu," but it appears that "Yahiko" will be the main brand from now on. This Junmai Ginjo is also made from Yamadanishiki produced in Yahiko Village, and is a good sake, not fruity, but calm and soft. Yahiko Village is where my mother is from, and I spent a lot of time there as a child when I was sent to my mother's home, so it is like a second home to me. Yahiko Shrine, the first shrine in Echigo, is located there.

Yahiko's regular sake, Aozae, by Yahiko Shuzo Sake rice is Koshibuki produced in Yahiko village. Aozae has a refreshing, watery quality. Aozae is a perfect evening sake without any peculiarities. Yahiko Shrine is the largest shrine in Echigo Province. My mother is from Yahiko Village and I used to stay at her parents' house in Yahiko Village when I was a child, so Yahiko is like my second home.

We opened a bottle at the office. This is the first time we have had "Shirasagi no Shiro", another name for Himeji Castle. The location changed and we went to Hyogo Sake EXPO 2022, a local sake event in Hyogo, at Kobe Hankyu. I tasted a regular product, a draft version. I had tasted the hi-ire version before, so I wondered what the draft version was like. It was easier to drink than the hi-ire version, but not to my taste. I prefer the Shirasagi no Shiro (castle of the egret), which is made with Nojoho.

The only place I can think of that uses Nojoho is Okutanba. The overall impression is gentle and the taste comes slowly. It looks like wood, grass, or herb. It also has a classy atmosphere. The sake here is not my favorite, but when I find it, I buy it for some reason.
