This sake was made in December last year in a brewery that was burned down last December, so it is believed that it was made just before the fire.
This year they are going to borrow facilities from Kurosawa Brewery in the same Nagano prefecture to manufacture this sake, and I hope that a new brewery will be built as soon as possible 🙏.

Good evening, Mr. Jive. I opened Ohsawa. I was so disappointed about the fire because Wawa was highly recommended to me on my trip to Nagano last year and it was delicious. But I am happy to be able to support them in this way and hope for their revival 😀.

Aizan, which was held for the hanpukai by the Furuya Sake Brewery, which unfortunately suffered a fire late last year, is now brewed on consignment at the Osawa Sake Brewery, which also brews Meikyojimizu in Saku City.
It has a muscat-like nuance on the nose, a spread of sweetness that is typical of Aizan, and a full flavor spread, while the acidity stands out and finishes crisply with a pleasant bitterness.

On this day, my seniors were also going out for drinks, so we went to the restaurant we went to on the day of the big snowstorm. My first choice restaurant was not available again and I wondered when I would be able to go there.

I hadn't had the Wawa Wawa on the far left of this menu last time, so it was the toast of the day 🥂.
It is slightly sweet, but the acidity is noticeable. It's refreshing and cleanses the inside of your mouth. Also, my stuffy nose feels clear 😅.
We drank one gou of each of our favorite sake by hand to drink at our own pace, and before we knew it, we had both drank 5 gou 😆.

This is the second time. The fruity taste is not significantly different from the image of the first time.
However, when opening the mouth, there is a slight carbonation piquancy that is stimulating to the tongue. The ethyl acetate sensation felt last time is not present this time.
The aftertaste is clean, but the bitterness lingers on the back of the tongue for a while.
It is hard to say that the brewery was burned because I like the taste so much.

Smells like diluted Fujiya Nectar. Oriented. Slightly effervescent. Slightly sweet, with a fruity acidity that makes you salivate. A little bitterness at the end. Very tasty.
I posted the same sake of R5BY in April 2012, and I still like it. I love it.
Picture 3 shows ramen noodles with clams steamed in Miyamazakura. The sake enhances the clam and the clam enhances the ramen. Winner.

The brewery caught fire last year on 12/23. Even if it could reopen, it seems to take more than 2 years.
When I go to Saku for ramen, I always see the burnt ruins of the brewery because it is located along the road I always pass by.
Due to a combination of factors that moved me as described above, I ended up transferring the money to the support fund account opened by the Nagano Sake Brewers Association. I know it will be very difficult to get the building and equipment ready again, but I am supporting them in my small way.
