The second glass at the izakaya (Japanese-style pub) where we were traveling. The taste of ginjo spreads on the palate. It is dry with a strong acidity.
Aroma with a hint of savory flavor. There is no unpleasant alkali taste. It is dry, but the corners are removed and the mouthfeel is mellow and full of the umami of rice. It is sharp with a hint of acidity and bitterness, but has a lingering aftertaste. It is recommended to drink on the rocks. Miyamanishiki. Young corn (olive oil, salt, mayo, soy sauce, seven spices)
It is very tasty without being nigori (sweet sake) like!
The moment you put it in your mouth, a slight carbonation bursts out. The moment you take a sip, a slight carbonation pops in your mouth. It is a strong taste, but the slight carbonation makes it easy to drink.
I don't know if it's because the brewery is good, or because it's new sake, or because it's unpasteurized,
I would like to try other nigori sake.
