Yukichubai Junmai Ginjo Souin 720ml
Rice: Gohyakumangoku
Rice polishing ratio 50%.
Alcohol content 16
Last week at Nishizawa Sake Shop in front of Naoetsu Station.
It is a limited edition sake for Niigata Prefecture, with only 2,000 bottles available. I thought Yukinubai was the only sake that stuck to sweet heated sake without pandering to the times, but I was wrong. I was told that Souin has been on sale since last year.
No one can tell from the bottle that it is Yukichubai.
Well, let's open the bottle. Clear and modern, with just a hint of Yukichubai in the aftertaste.
I am looking forward to seeing how it will evolve and develop after this 😋.
Drinking at Tanuki Sushi, a sushi restaurant in Nihonbashi. There is no indication on the label, but the label on the side indicates that it is aluzo-sweetened.
It has a sweet taste, but it is refreshing. The sweetness disappears quickly.
It goes well with nigirizushi (hand-formed sushi) and you can drink it in large gulps.
Today I was allowed to practice sake tasting at my favorite liquor store. How extravagant. I was pretty confident, but I was sunk.
I have to train harder!
I wish I could understand my favorite sake, Yukichubai, after just one sip. Unfortunately, I couldn't understand it at all last time. But I learned something today. I always look for the good things about the sake while drinking it.
I always look for the good things about the sake while drinking it, but I was advised to look for the things I don't like about it. If I can verbalize it, I might be able to remember it. I see.
Soft, banana aroma,
Mellow and tender, with a gentle, elegant sweetness,
The balance between the mild, mild, elegant sweetness and the acidity is exquisite,
The mellow flavor spreads on the tongue and flows down the back of the throat,
The mellow flavor spreads on the tongue and flows smoothly down the throat,
Yum! This is it, isn't it?
You can tell even if you close your eyes!
Maybe it's the tiny plastic cup...

It has a strong minerality, acidity and umami. It is light and dry, but has a modern feel.
It is similar to the Garakudai we drank yesterday, but the acidity is much less than Garakudai, and the umami is more intense than Garakudai.
Polishing ratio: 50%.
Alcohol content: 16%.
The aroma is unobtrusive, but the sweetness spreads as soon as you put it in your mouth.
It goes down your throat without any spiciness.
Anyway, there is no sense of alcohol and it does not feel like a Niigata sake, but it is certainly delicious!
