The second bottle was a local sake from Itoigawa that I purchased at the Niigata Sake no Jin event in Abeno.
It was a classic sake with a slight mild rice flavor 🍶.

Perhaps because Yukitsuru is made from natural spring water, the impression of minerality remains the same.
I drank it twice before at a tasting event and one of those times was with the brewer, so he told me a lot of stories about how difficult it is to make the same flavor every time, or how he once made one for an overseas market but the intermediary company didn't work out.

I had never seen it before, so I bought it at a tasting event at Hanshin Department Store.
I had no prior knowledge of the brewery, so I didn't talk much with the brewer.
I had it cold.
The color was clear, almost colorless, but with a hint of yellow.
The top aroma is mainly alcoholic, with a slight graininess.
It has a fine, mineral-like mouthfeel and flows smoothly into the mouth.
It has a minerally, yet gradually delicious flavor, with a slightly bitter aftertaste that stimulates the tongue with a slight spiciness.
There is a little bit of nuttiness in the umami.
It is a little more light and dry than other sake, but it is a very typical sake that you will never get tired of drinking.

I did it. I underestimated the cautionary note about opening the bottle. All I could do was watch as the cork popped and half the bottle flowed out before I could remove the aluminum lid. Good thing I opened it in the kitchen.
Almost no aroma, firm and smooth (I guess), and clean on the palate. I bought it because I wanted to drink something like this in the summer, but I ended up drinking half of it.

It's a sake from Itoigawa City, Niigata Prefecture. I think I have heard that Niigata sake is often dry...it leaves a long lingering taste in the back of the throat. It is the kind of sake that you want to savor rather than drink it quickly. I always drink it in a very quick and easy way, so today I would like to drink it slowly.
