My wife has a slight taste disorder, but since she couldn't spend time at her parents' house 😊, we treated her to another New Year's meal 🎍. The wine to go with it was "Kyo no Hana" purchased at our favorite liquor store in Kushiro, Sagajo Shoten. I was torn between this and "Tatsusen" brewed by the same brewery, neither of which I had ever tasted before, but I chose this one because of the "fantastic rice" description 😊. Kyo no Hana No.1! There really are a lot of different sake rice varieties available: ‼️ It has a sharpness that is typical of Fukushima sake, but at the same time, it has a moist and gradually delicious flavor 😋.

Kyo-no-Hana from the sake bag I bought in Fukushima. It is sweet but not too sweet, so it is very tasty. Today I paired it with chawanmushi (steamed egg custard), grilled hanpen cheese with mentaiko (cod roe), and ahi jio with nori (dried seaweed), all of which went very well together.

This was also purchased at Oka Sake Shoten, the same place as Unjaku. The aroma is mild but unique. The umami acidity has a strong impact. It would be good to warm it up as well. According to the staff at the store, they won't be making PURE PINK this year. The rice used is Omachi from Okayama Prefecture. It has a dark mouthfeel and a bit of maturity, but as the days go by, it becomes more rounded and changes to a level where even those who are not good at it can go. However, even though it has become more rounded and easier to drink, the sweetness and strength of the Omachi can still be clearly seen, so there will be different tastes. For me, it's a very interesting sake! The first day I opened the bottle, I thought it might be too peculiar to pair with a meal. However, from the second day onwards, while maintaining its richness, it gradually becomes lighter and lighter, and is not bad as a food sake. If you roll it around in your mouth, it is a nicely aged sake, but if you drink it with gusto, you can drink it without worrying too much. Still, I want to enjoy the aged feeling of this kind of sake, so drinking it a little bit every day is good for me.

Junmai Daiginjo-shu bought at Chapinstow, London. It is a raw sake. It has a dry taste. Unpatseurised sake. Unpatseurised sake. Dry taste. Weak smell and aroma, you can feel the taste if alcohol. 3.5/5 ✖️ don't buy again: it's a welcome change from the softer Junmai Daiginjo we usually have, but it isn't my favourite.
