First "shellfish" restaurant I've ever been to. Kikuyu with hot sake (it was a little cold and rainy) 🍶. My oldest son's wife is a sake drinker, so it was perfect! This is my first time drinking it! And I don't usually drink it hot, so I don't know what it is, but it's nice 😋. I can feel the acidity. And the aroma comes in fluffy. I guess I was right in heating it up. The taste is rich but light on the palate. It is even softer when heated. It has a moderate aromatic richness and a little bit of spiciness. It has a good balance and can be served with a wide range of food. It is a limited edition sake, but it has a standard taste. Mr. Ota lives in Kamakura. I was there just two and a half months ago, so I missed it a lot! Once again, Kamakura is a wonderful place! The restaurants that were introduced to us were all very unique and the food looked delicious!

I bought this Wakaba unfiltered sake in the summer and felt it was still young, so I let it sleep in the closet. It has a good balance of flavor, with the punch of unfiltered sake, but without losing the simple country feel of Wakaba. I put it in the closet again, but it was good enough. It's not Wakaba, but Higuchi Shinyo, a triple axel that is anything but rustic! The ROC is still very difficult, but I hope the Japanese will do their best to get on the podium!

The rice polishing ratio is 35% following the previous 50%. This sake is brewed with Gohyakumangoku from the brewer's hometown. It is sweet and sour, with a slight bitterness. My favorite type. It's good, I want to drink it again.

This is the 5th bottle of this year's Maikaze series! It's been a while since I've had a "Kantou no Hana", but this is the first Maikaze type, so it's one I've been looking forward to👍. When I opened the bottle and poured it, it was clear and had a slightly fruity aroma. It has a crisp mouthfeel and a gaseous feel, making it refreshing and sharp. I was surprised at the dry taste, which is outstanding among the Maikaze series and other sake from the same brewery that I have had! However, it is not only spicy, but also has the mild sweetness and umami of "Maikaze". The freshness of the lush, raw sake and the bright astringency are also present in this well-proportioned taste ✨. The aftertaste is also refreshing. The aftertaste is also refreshing, similar to that of a Ramune or cider! I was surprised at how different it was from the "Sei", "Meiho Akagi", and "Hizirizm" I have had in the past! New Year's sake (2) - Women's tears When I went back to my parents' house, my father bought this sake. It seemed to be a recommendation from Aoki Shoten. With all due respect, I had never heard of this sake and it was unknown to me. When I opened the bottle, there was not much aroma. When you put it in your mouth, you can feel the sweetness and gradually start to feel the alcohol, and it ends up being dry. From the naming, you would expect it to be intensely dry. I had been wanting to drink this for a long time and got a bottle of "Ousai Macho" from Makino Shuzo.... The sake is made and labeled in a way that takes advantage of the climate of Oarai, Ibaraki. It is refreshingly dry when served cold. When heated, it becomes more floral and friendly. I'd like to try it with sea bream or flatfish from Oarai.

Rice used is Oarai-grown Chiyonishiki It is more rough than fresh. However, it is not rough at all. It has a refreshing taste, and the umami of the rice spreads slowly. I've had many Tsuki no I's with this kind of atmosphere! I think it will probably become milder and more flavorful with aging, but I like it better as it is because it has its own personality.

Outside drinking. Ordered by the impact of the name. When poured, it smells moist and sweet. The taste is as expected (?). The sweetness is strong. When tasted, it has the flavor of rice. It is a mellow, sweet sake, and you can sense the careful craftsmanship. Later I looked it up and found the word "Toyobai" 😳. I didn't realize it was so 😚.

This is a unit work of three breweries in Joetsu: Katafune (Takeda Sake Brewery), Koshiji-no-Kenbai (Kubiki Shuzo), and Chiyonomitsu (Chiyonomitsu Sake Brewery). Kura-kept yeast, fresh yeast, and shibari. The proprietor introduced that there is a new trial in Niigata as well. Delicious! It starts with a light sweetness, followed by acidity and a sharp bitterness. This complexity is good. I couldn't take my eyes off of the sake from Joetsu. There is a recommendation from Takeda Shuzo on the back label, which is also interesting.
