I've had Kanazawa-ya from the same brewery at an outing, but this is my first time drinking it. I had never heard of rice called "Takaneminori" before. It has a fresh aroma with a hint of cemedine. The impression is that it fades out after a pause from the refreshing feeling, followed by a gutsy sweet flavor. It is a new sake, but it has a strong umami.

Junmai nama-shu YAMADANISHIKI 90 Rice polishing ratio 90%❗️ This is the challenge sake of Michiko Urasato, the female toji of Yui. Yamada Nishiki is brewed at 90% polishing ratio without polishing. The taste of the rice is rich and intense❗️, but there is a light fizzy feeling. There is also a little bit of orage mixed in. This is why it is milder and softer in the mouth than I expected. The aftertaste is refreshing. It's amazing. Michiko Urasato, Toji 💡. I had it with ginger yaki, and it was delicious. The sake and side dishes go well together😆. I've heard that if you let it sit for a few days, you'll get a different taste of the rice, so I stopped at halfway today. I heard it's also good at different temperatures.

I thought, "I have no choice but to buy it! I want to cherish my good luck! I took it home and opened the bottle, thinking I would drink it as it was cold there. No blowout. First, the supernatant. I could feel some acidity. After that, I stirred it well, poured it into a glass, and drank it! It is sweet! As soon as you think that, it goes from dry to sharp. And then the four-pack was gone.
