As soon as I arrived there, I started looking for Masamune and found it 🤩. It's sake 🍶. It has a crisp, Hakka-like aroma. It is also very refreshing on the throat. The umami of the rice is subdued, and then there is a subdued sweetness and an equally subdued acidity. Overall, it has a light and simple taste 😙. It is probably best suited as a food sake 🍶. I had been wanting to drink this for a long time and got a bottle of "Ousai Macho" from Makino Shuzo.... I'm also interested in the other macho series...I'm sipping it with cod roe tempura and black shrimp tempura...I think it goes well with strong-flavored snacks and dishes. Kumamoto's local sake, Sanzanmura Slightly sweet ginjo aroma A light, sweet mouthfeel with a soft acidity. Like drinking fresh green apple juice I drank too much and my memory is fuzzy I'm not even sure of the notes I wrote at the time😅. Anyway, it's delicious! Sake brewed with sake rice grown by a pesticide-free method called "Koi Farming" in Sanzan Village! Using the carp farming method, carp are released into the rice paddies 🌾🌾 to get rid of pests. A few years ago, I drank Manbo from Kumamoto Kameman Shuzo, which was a sake made using the duck farming method🦆! There are many people in Kumamoto who practice natural farming methods 🫶.

This is a unit work of three breweries in Joetsu: Katafune (Takeda Sake Brewery), Koshiji-no-Kenbai (Kubiki Shuzo), and Chiyonomitsu (Chiyonomitsu Sake Brewery). Kura-kept yeast, fresh yeast, and shibari. The proprietor introduced that there is a new trial in Niigata as well. Delicious! It starts with a light sweetness, followed by acidity and a sharp bitterness. This complexity is good. I couldn't take my eyes off of the sake from Joetsu. There is a recommendation from Takeda Shuzo on the back label, which is also interesting.
