I was curious about this sake when I saw it on Sake no Wa before. It was given to me as a present by chance. It has a spreading umami and a bitter finish. It was a delicious sake. The "Recommended for you" list has become full of Hokkaido sake 😀.

I opened a bottle of "Hokuto Zuisho", a souvenir from my recent business trip to Hokkaido, which I purchased at a liquor store in Kitami called "Mayanagi Sake Shop"! My business trip was via Sapporo, Obihiro, Kushiro, Nemuro, Abashiri, and Kitami (Memanbetsu Airport) on my way home. Naturally, I went to an izakaya (Japanese-style pub) on the way, but I decided to limit myself to sake from Hokkaido, so I had a bottle of Nemuro's "Kita no Katsu Shiboritate" in Kushiro. I asked for a recommendation for sake from Hokkaido and was recommended "Kaminokawa Taisetsu". However, I had drunk it some time ago, and after much deliberation, I chose "Hokuto Zuisho," which I had never heard of, and it turned out to be the right choice. It is a beautiful, well-balanced sake with a slightly sweet, fragrant, and crisp taste. It is made from Hokkaido rice, with a rice polishing ratio of 45% and an alcohol content of 16%. Delicious!

This is a unit work of three breweries in Joetsu: Katafune (Takeda Sake Brewery), Koshiji-no-Kenbai (Kubiki Shuzo), and Chiyonomitsu (Chiyonomitsu Sake Brewery). Kura-kept yeast, fresh yeast, and shibari. The proprietor introduced that there is a new trial in Niigata as well. Delicious! It starts with a light sweetness, followed by acidity and a sharp bitterness. This complexity is good. I couldn't take my eyes off of the sake from Joetsu. There is a recommendation from Takeda Shuzo on the back label, which is also interesting.

6/10 This is an autumn sake targeted in its name to be drunk with Akitonou fish. It is designed to be paired with fatty swordfish, which gives it a strong umami flavor. Am I right? It is a beautiful sake with acidity, so it has a lot of flavor, but the second half of the sake is very smooth. It certainly goes well with the Akinatai fish! This kind of thing is a strategy.

Wow...the aroma of rich Yamadanishiki rice with 80% polished rice...the mouthfeel is sweet but thick... This is a very rich wine! I had been wanting to drink this for a long time and got a bottle of "Ousai Macho" from Makino Shuzo.... I'm also interested in the other macho series...I'm sipping it with cod roe tempura and black shrimp tempura...I think it goes well with strong-flavored snacks and dishes. I bought this Wakaba unfiltered sake in the summer and felt it was still young, so I let it sleep in the closet. It has a good balance of flavor, with the punch of unfiltered sake, but without losing the simple country feel of Wakaba. I put it in the closet again, but it was good enough. It's not Wakaba, but Higuchi Shinyo, a triple axel that is anything but rustic! The ROC is still very difficult, but I hope the Japanese will do their best to get on the podium!

I was wondering what the same company that did Tenka and Shihu would do with the Meimon Shukai now that they've taken over the business? I was wondering what they were going to do with the prestigious sake associations, and then they released it 😊. Slightly effervescent, sweet and sour. Is it white malted rice? It's so acidic that I thought it was white malted rice. It also has a slightly dry atmosphere. It has a unique taste, but it is delicious. I wonder if the product for the Meimon Shukai that was sold before was Yuyamanishiki, but instead of using Yuyamanishiki, they used Gohyakumangoku to separate it from Honami.

Now Igarashi Sake Brewery is complete 😝.
