Since it's spring🌸, I think I'll have another bottle of sake with spring in it. I bought a bottle of Shunshin by Nishide Sake Brewery in Komatsu City, Ishikawa Prefecture. I've been curious about this sake for a while but never got around to it. I will have it with boiled flounder 🙏. I thought it might be a bit strong, but it wasn't. It has a nice richness, sweetness, acidity, and a mellow feeling 😆. It's a bit like a lighter version of Tamagawa. As the label says, I preferred it at room temperature rather than chilled 👍

I saw it for the first time at a department store tasting sale, so I bought it. It's not listed on the label, but according to the brewer's description, it's unfiltered undiluted sake. In preparation for the upcoming season, I bought a copy of Nonbei Yokocho, which I also saw at Sake no Wa ✨. We also bought a cup of sake at a nearby liquor store to check the operation and had it hot ✨. Sipped at room temperature, it is a refreshingly spicy sake with a deliciously mellow flavor. Warmed to lukewarm, it has a tingling sensation on the tongue. Hot-warming lightens the taste and makes it refreshing to drink! I have had hot sake before, but I was indifferent to the brand and taste and drank it with the mindset that the alcohol would not linger the next day, so I would like to taste it this year 🥰.
