Weak grapefruit type aroma and acidity. It has a strong sake quality, yet it has a light and refreshing taste, which is very strange. The umami is not strong when you drink it, but it leaves a strange aftertaste that lingers for a while. It is a unique sake that is beyond my imagination.

Hiyoroshi, as expected, has a calm taste. It's similar in direction to the special junmai nama sake, but this one has a more gentle taste 😌.
Sanriku pike with autumn eggplant pesto 😋The fatty, huge pike is dried to remove excess water. The skin is cooked properly and the flesh is rare. I'll be back soon!

The first night of the trip was spent at the famous Italian restaurant Badalone in Hanamaki 🍽️ A banner in front of Hanamaki station celebrating Otani's 50-50 achievement 😆.
Fresh✨Sweet and sour. A little grassy but with a darker fruitiness. Gentle but strong and rich with a rice feel. I had a sweetfish from Toyosawa river, between confit and fried, with a salty taste.

The neighbor also gave me some crustaceans and I really appreciate it...

I think this is new sake brewed with Ginga.
This was delicious.
I wonder if it was directly pumped, there was some gas, and the fresh taste was very nice.
Surprisingly, as the temperature rises, it has a more subdued depth, which is enjoyable.
I wish they would do something about the fact that I can't convert kanji characters.

It is an old sake that was brewed and laid down in 2018, so it has a yellowish acidity and a flavor unique to old sake. It has a strong alcohol taste that hits the back of the throat, but it is not bad because it has a gentle sweetness and umami behind the old sake's unique flavor.
It goes well with Camembert cheese. It was also good with simmered thick fried tofu and scallops.
It seems to go well with all kinds of dishes with a strong flavor.
