Sake received at the Sake World Summit. This sake is brewed with Ginbukiyo sake produced in Shiga Prefecture. The acidity and umami of the sake are well intertwined with each other. It was a delicious sake. It is perfect as an in-between-dinner drink. My wine-loving friend who accompanied me also accepted the taste of this sake made from the sake's "nama-hashiroshi" (sake brewed from the same yeast as the original yeast).

Purchased 👀 at Sazanami Sake Shop in front of the station during a day trip to Hikone. Beautiful, corner space and friendly staff. It was a nice store 😙. Since I was there, I chose Kazuhiro, a sake I had never had before from Shiga. It was full, slightly sweet, had a delicious rice flavor, and was very drinkable 😋. Paired with sweet ayu fish from Lake Biwa, it was delicious. ❤️ It is indeed a sake from Shiga, a rice-producing region 😇

Limited production local sake brewed with Teruhi rice harvested from reclaimed fallow rice fields damaged in the 2014 Hiroshima torrential rain disaster🍶. It is named after the Obayashi district where the rice fields are located, with the aim of "making the village prosperous for the next thousand years." Unfortunately, I saw a newspaper article the other day that the brewing of this season's sake was abandoned due to deer-eating damage this year. We are praying for an early revival. The first impression is a fresh aroma and fruity acidity, followed by umami in the back and a slightly spicy aftertaste, which is refreshing and white wine-like 😀. We opened a bottle of Daikoku that we bought today at Kado-ya Sake Shop. It is said that this sake is brewed with 100% Yamada Nishiki harvested in a special area of Hyogo Prefecture. It's rich and dry. The rich taste in the mouth and the long lingering spiciness are exquisite. I think it's a very cost effective sake.

This was the first time I drank Daikoku Masamune at home. I bought it at the direct sales counter of the brewery. The aroma is mild, but the taste is fresh and fruity. It was really good even when it was heated. The reinforced concrete brewery was demolished due to old age, and a prefabricated direct sales store was built on the site, with the rest of the land used for a convenience store and Marugame Seimen noodles. The rest of the land is used for convenience stores, Marugame Seimen noodles, etc. Now they are brewing in a rented part of Hakutsuru Brewery. I bought it because it was in Hankyu. I've had a sake called "Kaga no Tsuki no Niji" before, but I wonder if the contents are the same. It is thin and cloudy. Enjoy cheap sushi at Totoro, a popular standing sushi bar under the elevated railway tracks of Himeji Station. Although it is a stand-up style sushi bar, there is always a long line of customers because of the high quality of the food. Since I was there, I asked for a local sake, Yaegaki. It was not sweet, but it was not dry either. It was about medium spicy. I am not talking about curry. I had it cold, but I feel it is all-around good at room temperature or hot. It's great for a kotteri type of stuff.
