It's almost time for yellow-tail season.
We will be serving Tohoku Izumi Hiyoroshi.
It has a sharp spiciness with a hint of sweetness. Don't be fooled by the junmai ginjo, this is a spicy sake.
However, it is a delicious sake that does not limit what you drink. Even those who do not like spicy sake should be able to enjoy drinking it with a cup of sake.
Tohokuizumi Junmai Daiginjyo 1018 Nama-unpasteurized sake
Sake with fresh flavor.
The owner of HISA-YA had this sake filled at the brewery.
It seems to be easy to drink. Dangerous
This sake is a sweet sake.
It is a very tasty sake with a refined acidity and umami flavor.
Since this sake is from Yusa, I served it with omizuke (pickled radish), dashi tofu, and salted natto (fermented soybeans).
I love salted natto💕.
Yamagata Prefecture has a lot of good sake. Or rather, there is nothing but good sake everywhere in Tohoku.
Since it was getting a little cold, I drank it at room temperature. It is a mild sake with a clean taste typical of the Tohoku region. When you finish it, you can smell the aroma.
The moment it is swallowed, it has a slight sweetness from the rice, followed by a firm spiciness that spreads on the palate.
There are almost no peculiarities.
It seems to go well with anything, whether light or heavy, but when I paired it with takaimo (sweet potatoes), the bitterness stood out, so it may not go well with sweet foods.
