The first bottle we opened at the beginning of the New Year was a bottle of "Fuku Chitose Namae Junmai Dry Taste" brewed with the prefecture's original sake rice "Sakahomare", which was grown in Fukui. This is the third time this season that sake made with Sakahomare has been brewed. The sake brewery says that this is the third year they have brewed this sake, not the third year of honesty, but the third year of confidence. The warming sake was recommended, so we tried it lukewarm to finish the saké. The slight warmth of the lukewarm sake matched the umami of the sake, making it a perfect saké to drink with a hot pot on a cold day!

Today is my day off, so I took a walk around Sunpu Castle, Kunouzan Toshogu Shrine, and Nihon Taira! I've always wanted to visit Kunouzan and Nihondaira, but the view of the Pacific Ocean and Mt. Fuji from Nihondaira is fantastic👍. On the way home, I took a sip. When I opened the bottle, it had a melon-like aroma. The mouthfeel is refreshing, but the melon-like sweet and astringent taste comes through in a jiffy, giving it a gorgeous flavor. However, the assertion itself gradually settles down and changes to a spiciness, so it is not too heavy for a nama-zake and is easy to drink! Tomorrow is the second half of Shizuoka life. A "sacred" store found near Nishiki Market in Kyoto. Great cold drink when you are finally able to sit down after a long day of walking 😀. It was slightly carbonated and went down my throat so well I didn't mind the 19% alcohol content 😅. You can't tell the alcohol content in modern sakes. Beautiful construction.

Comparison of nigori sake (Wakayama's favorite nigori sake) Following Minakata, Chokyu ✌️ This is the fire-brewed version of the nigori sake we drank in February. I buy every bottle of Chokyu I see that I have never had before 😆. The first thing that surprised me when I drank it was that there was no fizziness at all 😲. The aroma is somewhat almond-like, and it's cloudy with a lot of orioles, so it's like diluted almond milk. But it also has a sourness to it, so I felt a bit unbalanced 🤔. I prefer nigori sake with a fizzy taste 😄.

Nigori Sake (Japanese rice wine) First time drinking Chokyu's nigori 😊. I always buy Chokyu when I see the new label ✌. The ori is quite a bit more and has a strong fizzy feel to it. It has a lot of umami and a hint of sweetness that is typical of Chokyu, and yet it has a clean dryness that makes it a dangerous sake that you can drink with gusto 🤭. The impression is quite similar to Hirotogawa's nigori👍 It goes well with western food, and the omelette was a nice match 😋.

This one is a bit different from the matured Omachi sake I had last year, and I have the impression that it swings in a very sweet and juicy direction. The aroma is tropical 🥭 and the flavor is perfect, with a long, sharp finish and a hint of bitterness. The umami flavor is firm, so it is easy to match with Japanese fried food 👍. I bought this sake in Shimane because of the impact of the label. It has an amber color with a sense of maturity typical of San'in sake. It does not have much sweetness, but has a rich acidity and rich umami flavor. Personally, I found it softer and tastier when heated than when cold. I opened the bottle because I simmered some oden, and it was the perfect combination when heated.
