The sake brewer is able to make a variety of unique sakes with different ideas.

After coming out of the ice compartment, it has a mild melon-like aroma.
It has a smooth but slightly soft texture on the tongue.
It has a gentle yet soft fruity flavor and sweetness, with a fresh sourness that lingers on the palate.
The finish is sharp and fades away quickly, leaving a sour and bitter aftertaste.
It is a low alcohol, alky, and seems to be good for a light meal.
It would go well with ginger and green laver sashimi konnyaku.

The same one we had at a previous tasting was purchased before the tasting.
It was served cold.
The color is yellowish.
The top aroma is slightly mature, with a hint of burnt caramel.
It has a viscous mouthfeel that clings to the tongue.
The taste has a milky acidity like lactic acidophilus that is assertive, but the mouth is filled with a thicker sweet and savory flavor.
After swallowing, a caramel-like hint of aroma escapes into the nose, and a mellow, brown rice-like quality spreads.
The aftertaste is a combination of sweetness and acidity, pulling the richness together and lingering.
The impression is still the same as when we tasted it, and it has a nice and unique character.

Sake made with cherry blossom yeast. I bought it because I like flower yeast. It is refreshing and has a trace of sweetness. A little floral, probably because of the floral yeast. I thought it needed a little more umami.
When I tasted another product at an antenna store before, I felt Fuku Chitose was a bit lacking, so maybe it's not a good match?
A light aroma spreads softly in the mouth.
After the acidity and umami are mixed on the tip of the tongue, a light bitterness is felt at the base of the tongue and flows away.
The overall impression is refreshing, and the sake moves quickly.
