First new sake tasting in 5 years. The first was a new brewery started by a toji from Oshinshu who took over a 350 year old brewery in Nagano Prefecture.
It has a fruity aroma with a hint of sourness, a carbonated mouthfeel, and a refreshing finish. It has a modern taste, but the full-bodied flavor comes off too quickly and gives a thin impression. I feel that the quality of the sake is what you would expect from a modern sake, but at this price, I would not buy it. おっIraka Sake Brewery
The aroma is like rum raisins. The flavor comes from the depths of the micro-foaming stimulation. It is dry, and the bitterness tightens it up. The aroma is showy, but strangely enough, it does not disturb the meal. It's nice. It is delicious.
