Birth sake. Sake from a new brewery. When I bought it, the shopkeeper told me that it was made by someone who used to work in Daishinshu, so I knew it would be delicious. Delicious. Just the right amount of umami and sweetness.

Same impression as the last time, a delicious sake that seems to be popular nowadays.
I'm not sure about national pre-sake, but I'm happy to see a tasty addition to the local Shinshu sake. And I'm totally satisfied with it.

A bad one came out! Raw karasumi (dried mullet roe)
The kalasumi here is delicious, but now it's even better!
After eating this restaurant's raw karasumi, you will find that the ones from other restaurants are not as good as theirs!
I could drink two gou of sake just from this, but I've already drunk five gou...

The same gentle aroma as the first sip, soft rice flavor and sweetness spreads with a thin acidity and a slight gassy feeling, with a slight bitterness and a woody aroma in the back, and it finishes quickly.
It is a well-balanced and beautiful sake that is easy to pair with meals, and is of course delicious on its own as well!
It went well with seafood pasta in tomato sauce.
The amazake made with Iraka sake lees, which was given to us at the time of purchase, had a very nice aroma and the grains were fine and tasty!

It was snowing (and still is) when I arrived in Nagano yesterday. It's winter, isn't it?
After the work, we went to the usual bar for a drink. It's the last one before the end of the year, so I'm going to have a drink to say hello. Which is the priority? 🤣
The owner says, "Most of the menu hasn't changed," but I remember, so I point at Iraka, saying, "Hey, this drink wasn't here last month 🫵."
They were doing a two black and white drink comparison, but since I am a big customer 😆, they extended it to a three drink comparison of black, white and indigo. First of all, white is a little sharp, black is mild compared to it, and indigo has more rice flavor. Ai is delicious. But black and white are also good. All in all, they are delicious 😋The owner says, "It has a nostalgic feeling. It's a taste that makes you feel at home. It's true. I wanted to drink more. I want to drink one cup at a time. If I had the money, I could 😄.
The owner called me a sake collector because I always leave the sake that I have to drink early. I'll be back after the new year 😁.

Takatsugu
Iraka Shuzo, the "newest sake brewery," completed construction of a new brewery and started brewing in the fall of 2024. We opened a bottle of "Ai" following the previous "Kuro".
Ai" is a beautiful sake with a fruity, clear, refreshing flavor that easily fits on the tongue. It has a clearer taste and moderate acidity than the "Kuro" and is easy to pair with food.
Although it is unfiltered raw sake, the alcohol content is only 15%, so it has a good balance of drinkability.
It is a little extravagant sake, but we have high expectations for next year's sake and beyond. Delicious: ‼️

This is a newcomer in Nagano and I was very interested in the quality of this sake. When I tried this, this is amazingly tasty, aromatic and fruity. I really love this and this bottle made me acknowledge that water is the key for brewing sake.
