Iraka Gin-Akiraki 2024BY ✨
This is Iraka's 5th release? This time it's a pure rice with a raw yeast yeast yeast. This time, it is a pure rice sake spec.
From the aroma, it is colorless, odorless, and almost clear, with a slight lactic acidity from the sake yeast. On the palate, there is a firm acidity and juiciness like the title of the bottle, Dawn Orange or 🍊 honeydew, and then the wild, rough dryness of the sake comes through and finishes with a crisp, sharp finish.
Refreshing, juicy, dry classic taste that I like 😋😋😋😋.

It's been a while since I've been to this standing bar, partly because it's been remodeled for a while.
I went in with a "let's drink" attitude.
First of all, Shinshu Kamerei Junmai Hitogokochi, which just came out, yes, it's really good and easy to drink 😊It's really good when the bottle is just opened (from my reflection the other day).
I haven't been able to go to Ueda recently, but I wonder if I can get a bottle if I go there?
Next up is the new Iraka Ikaimoto, which I was able to meet the toji when I visited here in June, and he told me that he was going to make the next one. It is very mellow and has no noticeable acidity, which is typical of nama-moto. I say "for a nama-moto sake" because I drink it with information, but if I drank it without knowing it, I wouldn't understand. It is delicious.
It's expensive, but 💦 it's good.
I wanted to try it. It's a cool visual when you see it in person!

Iraka Ginmori.
Iraka Sake Brewery was reborn from a more than 350-year-old sake brewery through succession of the business.
The brewery is located in Matsukawa Village, Azumino County, surrounded by the 3,000-meter-high Northern Alps, and uses pesticide-free rice nurtured by the ultra-soft water that springs from the area. The rice is grown in the super soft water that springs from the area and is made without agricultural chemicals.
When the bottle is first uncorked, it has a lush, fresh nose reminiscent of apples and apricots. In the mouth, it has an extremely soft texture, and the lactic acid-derived umami, which is strongly drawn out by the Yamahai method, and a fruity sweet and sour taste like apples fill the mouth.
This is the first time I have tasted Iraka, and it is delicious!
