This sake is as rich and matured as its name. The flavor is robust, but the sweetness is moderate and the acidity is firm, so you can drink it one after another with good sharpness.
Rich, sweet and umami taste
The color has a plum wine and port wine feel, and the mouthfeel has an old sake feel, with a hint of oak, and a very dry, clean finish.
It looked like it was fermenting. The color was light brown, and it did not look like anything else. It was almost like shochu, but with a strong peculiar taste. I felt the atmosphere was similar to that of Nara-zuke, a type of rice wine.
As the amber color indicates, the mouthfeel is quite peculiar, with a viscous and sweet taste. The lingering aftertaste is long, but also has the sharpness of sake.
It is expected to go well with thick dishes such as simmered fish.
I went to Hamada, Shimane, the sacred land of Nodoguro, and drank some of the local sake recommended to me by the reaper.
