The delicious flavor and sweetness of fine rice is wrapped in a lemon-like citrus sensation by the intricate handmade koji, which enhances its flavor. The aroma is mainly berry, with notes derived from delicate apples and cedar expressing its complexity!
Carbon dioxide gas derived from fermentation is dissolved, softening the texture and spreading rich umami, sweetness, and fullness, while clean acidity, soft bitterness, and astringency create the flavor profile.

The concept of "Iraka Gin-Ai" is "light flavor spread and sharp texture.
In addition to aromas reminiscent of citrus, banana and mango, it brings out depth in the aroma.
Fresh carbon dioxide gas is dissolved into the liquid, and the crisp acidity tightens the soft umami with an elongated texture.
The wine has a refreshing sweetness with a dry, slightly bitter finish. Light bodied.
I had the first time to try "Iraka" (tiled roof).
It was sweet, tasty, clean, elegant, and delicious!
The bitterness of Kinmon-nishiki did not come out.
Continuing on from last week, Iraka Shuzo, a local sake brewery in Kita Azumino, Nagano Prefecture, released "Shiraka (Sincerely Respectful)", a local limited release.
Super tasty, even drier and mellower than the regular red.
Star 🌟🌟🌟🌟✴︎, it was my very favorite sake.

Highly recommended! Sold exclusively in Matsukawa Village. It is fresh and fruity to a great extent. It has a dry aftertaste with a clean and sweet taste of rice. It seems to go well with Italian food.
