About 2 weeks ago, I declared that I was going to cleanse my cold-like condition with alcohol! I was on the mend, and as I was out drinking due to the season, I came down with the flu 😷🥵 and ended up back in a state where I couldn't drink for about 2 weeks 😭.
I'm sorry for the long preamble, but it's Hitogokochi, a new sake from Iraka.
When I opened the bottle, I heard a nice gassing sound.
The aroma is fresh apple and pear type 😊The taste also has a fruity attack with a chiri-chiri-type acidity 😁 But overall, the texture is dry bitter with a delicious rice flavor that is right up my alley and I can't stop drinking more 😋🤤😋😋😋😋.
I wish the price was a little more reasonable, but it's so good that I buy it 😅.
Iraka Silver & Ai Nama Sake

Rice: contract-grown rice from Matsukawa-mura, Kitaazumi-gun, Nagano Prefecture (specially grown rice); Alcohol: 15%.
The second version of Iraka is made with a 25-year-old yeast that was revived from a -80°C freezer. Grapefruit and white peach-like aromas simply spread and harmonize with the flavor, enveloping the body and leading to a straight line to the goal.
At a time when "alps yeast" produced in the same Nagano Prefecture was famous as an aromatic yeast, and it was said that one could not win a prize at the New Sake Competition without using this yeast, this yeast was derived from the "alps yeast" and successfully put to practical use by Mr. Tanaka.
Its aroma harmonizes with the flavor, wraps around the body, enhances the taste, and leads to the goal in a straight line.

For lunch, I tried to eat wasabi rice at Daio Wasabi Farm, but there was a huge line, so I gave up and came back.
When you put it in your mouth, you can taste the sweetness of soft rice, followed by a gentle acidity.
The aroma is like freshly picked bananas and white peaches! The sweetness and acidity that remind you of Japanese pear are fresh, and the smooth mouthfeel that you can't help but feel the goodness of water and the clear, light finish are also very pleasing.
