Iraka Ginmori.
Iraka Sake Brewery was reborn from a more than 350-year-old sake brewery through succession of the business.
The brewery is located in Matsukawa Village, Azumino County, surrounded by the 3,000-meter-high Northern Alps, and uses pesticide-free rice nurtured by the ultra-soft water that springs from the area. The rice is grown in the super soft water that springs from the area and is made without agricultural chemicals.
When the bottle is first uncorked, it has a lush, fresh nose reminiscent of apples and apricots. In the mouth, it has an extremely soft texture, and the lactic acid-derived umami, which is strongly drawn out by the Yamahai method, and a fruity sweet and sour taste like apples fill the mouth.
This is the first time I have tasted Iraka, and it is delicious!

It's been a little while since I've had an Iraka.
The 4th edition has a dazzling dark green etching, and since it's Yamahai Junmai, my expectations are high. ⤴️
The opening of the bottle was a nice gas release sound 😊.
The aroma has a refreshing pleasantness of green herb 🌿, green apple 🍏, and muscat, which is typical of Shinshu sake 👍 The taste has a light acidity and the sweetness of rice, while the aftertaste has a nice sharpness that is typical of Yamahai junmai. Overall, it has a light and modern sake quality with a spodoli-ish flavor, and this was one of my favorite bottles of the first half of the year, so delicious and so high on my list 😋🐴🎠💮.
