I used only ayu (sweetfish) for this dish. I also served bonito and Spanish mackerel tataki with a lot of myoga. It has a slightly high alcohol content and sweetness for a Niigata sake, so it went well with the ayu fish, bonito and Spanish mackerel. It was a good evening drink.

At home. This is the first time I've had sake from Hokkaido. I thought that Hokkaido's sake was more alcoholic, but it was completely different. You can feel the sweetness of the rice, and there is a bitter taste at the end. It is a refreshing type and very easy to drink. A Drink to Remember Series (5) In the early summer of 2015, I planned to take my car on a ferry to Wakkanai, Hokkaido, and when I arrived safely in Wakkanai, I had a drink at a yakitori restaurant for the first time in my life 🍶. The memory reminds me of the faint muscat-like aroma and sharp sharp sharpness 😋. The beauty of the label with the brand name, the wish behind the name "Fuyu Hanabi", and the taste of the local sake when you drink it on a trip...it was one of the reasons I became a sake lover 🎵. I still see it at Sake-no-wa from time to time, so I couldn't help but fish it out from old photos 😆. This is a unit work of three breweries in Joetsu: Katafune (Takeda Sake Brewery), Koshiji-no-Kenbai (Kubiki Shuzo), and Chiyonomitsu (Chiyonomitsu Sake Brewery). Kura-kept yeast, fresh yeast, and shibari. The proprietor introduced that there is a new trial in Niigata as well. Delicious! It starts with a light sweetness, followed by acidity and a sharp bitterness. This complexity is good. I couldn't take my eyes off of the sake from Joetsu. There is a recommendation from Takeda Shuzo on the back label, which is also interesting.

Good evening, it's Shamrock, a parallel world from Manazuru in our first series ☘️☘️☘️. Not a Yotsuba, but I'm opening this bottle to pray for Japan's 🇯🇵 soccer team to win tonight✨ It has a sweetness that is typical of rice, lactic yogurt and acidity, and is delicious 🐴🐴🐴🐴, but it has a high alcohol spiciness on the back end that makes it very drinkable. I had a puku puku brew the other day. I think it is similar to the junmai sake I drank the other day from Pukupuku Brewing (that one is Koshihikari) 🤗. I heated it up to lukewarm to try it out and it doubled in flavor 😋.

The word "limited" makes me weak 😅. The last sake we had at Kyoto Stand Kiyo Kiyo was "Toyoyo Junmai Dry Musou" by Mukai Shuzo, also from the Tango region. The rough and powerful label may represent the fishing scene in this area. When you put it in your mouth, you can feel the umami flavor and the aroma of rice is crisp and full. Even though it is called "Dry Musou", it has a hint of sweetness, which makes it a delicious cup. It has been a long time since I have had a good drink, and the best part of drinking outside by myself is that I can drink slowly while considering what to drink and what snacks to go with it, while keeping an eye on my pocketbook. I returned home refreshed both mentally and physically. From next time, I will introduce some of the sakes I took at the beginning of the year!
