At home. This is the last in the Shiga Sake series. It has a gorgeous aroma, sweetness and acidity in the mouth, and a very refreshing taste that finishes with a light bitterness. I had three kinds of Shiga Sake, Taga, Laughing Season, and Nikkoku-Tsuchisei, and I would like to try the other kinds again.

Purchased at Ponshukan. It has a cute design that does not look like a cup of sake. The sake is brewed with four varieties of rice produced by four farmers in the Nishigama district, located in the far west of Niigata Prefecture. So that's what the grains of rice on the label mean. That makes sense. The sake was served cold in the cold sake corner at the store, so I chilled it well at home. It has a well-balanced taste, not too sweet or dry. It is easy to drink and delicious. Good evening, it's Shamrock, a parallel world from Manazuru in our first series ☘️☘️☘️. Not a Yotsuba, but I'm opening this bottle to pray for Japan's 🇯🇵 soccer team to win tonight✨ It has a sweetness that is typical of rice, lactic yogurt and acidity, and is delicious 🐴🐴🐴🐴, but it has a high alcohol spiciness on the back end that makes it very drinkable. I had a puku puku brew the other day. I think it is similar to the junmai sake I drank the other day from Pukupuku Brewing (that one is Koshihikari) 🤗. I heated it up to lukewarm to try it out and it doubled in flavor 😋.

Tonight's sake is a Shiraito Brewer's Nigori sake from the famous Shiraito Shuzo, which I had the pleasure of meeting at the brewery during my trip to Fukuoka in late May. When we visited the brewery, the proprietress and her little son were very attentive to us, and we were very grateful for the free tasting, which they usually don't do 😊 We bought a bottle of one of our favorites, so we're going to open it now 🙌! The rice polishing ratio is not stated, but I think it is more than 70% polished. The aroma has a soft lactic acid nuance that is not typical of sake. The taste is easy to drink with a slight sweetness of rice in the supernatant and umami flavor 😋 It becomes completely cloudy when mixed with a significant amount of lees, but it has a smooth mouthfeel and is more delicious 😋😋😋😋😋.

Tonight, I feel like I've been shvitzing at the gym for two days, but drinking this is a negative rebound, but when it comes to horse mackerel and monkfish sashimi, it's a MUST 🍶. I bought this 💁 at a brewery when I was in Fukuoka. It's Shiraito Sillite 70 ✨. Unlike Tanaka Rokujugo, this sake seems to be distributed within the prefecture, but it is a 100% Yamadanishiki Junmai sake from Itoshima, and when I tasted it, I enjoyed this lowest-purity sake 😋. The sake has a very clear and clean structure, with a hint of sourness from the ginjo aroma of the cucumber, and the rice is sweet and full. The finish is very crisp and very excellent. ☺️ It is best when it returns to room temperature from chilled. ⭕️

The last sake we had at Kyoto Stand Kiyo Kiyo was "Toyoyo Junmai Dry Musou" by Mukai Shuzo, also from the Tango region. The rough and powerful label may represent the fishing scene in this area. When you put it in your mouth, you can feel the umami flavor and the aroma of rice is crisp and full. Even though it is called "Dry Musou", it has a hint of sweetness, which makes it a delicious cup. It has been a long time since I have had a good drink, and the best part of drinking outside by myself is that I can drink slowly while considering what to drink and what snacks to go with it, while keeping an eye on my pocketbook. I returned home refreshed both mentally and physically. From next time, I will introduce some of the sakes I took at the beginning of the year!
