I used only ayu (sweetfish) for this dish. I also served bonito and Spanish mackerel tataki with a lot of myoga. It has a slightly high alcohol content and sweetness for a Niigata sake, so it went well with the ayu fish, bonito and Spanish mackerel. It was a good evening drink.

At home. This is the last in the Shiga Sake series. It has a gorgeous aroma, sweetness and acidity in the mouth, and a very refreshing taste that finishes with a light bitterness. I had three kinds of Shiga Sake, Taga, Laughing Season, and Nikkoku-Tsuchisei, and I would like to try the other kinds again.

Tonight's sake is a Shiraito Brewer's Nigori sake from the famous Shiraito Shuzo, which I had the pleasure of meeting at the brewery during my trip to Fukuoka in late May. When we visited the brewery, the proprietress and her little son were very attentive to us, and we were very grateful for the free tasting, which they usually don't do 😊 We bought a bottle of one of our favorites, so we're going to open it now 🙌! The rice polishing ratio is not stated, but I think it is more than 70% polished. The aroma has a soft lactic acid nuance that is not typical of sake. The taste is easy to drink with a slight sweetness of rice in the supernatant and umami flavor 😋 It becomes completely cloudy when mixed with a significant amount of lees, but it has a smooth mouthfeel and is more delicious 😋😋😋😋😋.

Tonight, I feel like I've been shvitzing at the gym for two days, but drinking this is a negative rebound, but when it comes to horse mackerel and monkfish sashimi, it's a MUST 🍶. Unlike Tanaka Rokujugo, this sake seems to be distributed within the prefecture, but it is a 100% Yamadanishiki Junmai sake from Itoshima, and when I tasted it, I enjoyed this lowest-purity sake 😋. The sake has a very clear and clean structure, with a hint of sourness from the ginjo aroma of the cucumber, and the rice is sweet and full. The last sake we had at Kyoto Stand Kiyo Kiyo was "Toyoyo Junmai Dry Musou" by Mukai Shuzo, also from the Tango region. The rough and powerful label may represent the fishing scene in this area. When you put it in your mouth, you can feel the umami flavor and the aroma of rice is crisp and full. Even though it is called "Dry Musou", it has a hint of sweetness, which makes it a delicious cup. It has been a long time since I have had a good drink, and the best part of drinking outside by myself is that I can drink slowly while considering what to drink and what snacks to go with it, while keeping an eye on my pocketbook. 7/10 Mukai Sake Brewery is well-known for Ine Mangaka. The image of the brewery is that they have a variety of challenging sake. This one is a crisp sake made with 100% Awa Yamadanishiki. It is said to warm up well, so I tried it at room temperature, lukewarm, and even hot. It certainly has a fuller flavor.
