Today, I accidentally, inadvertently, drank a glass of "Amabuki". I drank all of it, so I'll have some more. It is a junmai ginjo sake from the only sake brewery in Fukushima City, Kinsho! Today's Chuaiai from Shimonokuni! The red shiny ✨ label is beautiful 🤩. Now, how does it look like? It's called "orikarami," but there's very little of it in the bottle. Unfortunately, I bought this bottle at Hanasaku, a shop under the elevated railway tracks of Shin-Sapporo station, which closed at the end of the year. Today we have "Urasato", Ogawa yeast. Ogawa yeast was discovered and nurtured by Chikara Ogawa. It was first used by Akari Sake Brewery (Mizuhu Pride). Is it now flourishing? Is it? It is light and watery But it has a deep flavor. Sweet and umami? Deeply nourishing.... I feel pineapple and cotton candy in the distance.
