わらびもち
I bought this one on a trip to Toyama. I knew the name but had no knowledge or experience of drinking it, so I chose this one out of curiosity. When I opened the bottle, I could smell the sweet ginjo aroma, but there seemed to be no carbonation. When I drank it, I found that there was not much acidity, and the sweetness was followed by umami. The sharpness of the taste may be due to the strong alcohol content, and this may be a matter of taste preference, but in general it is a refreshing and tasty sake. This one does not seem to be from the standard line, so I would like to try something else next time.

I bought it around October and left it in the fridge, so I opened it in a hurry. There is no gassy feeling and the aroma is just a hint of wafting. It has a strong sweet taste, but it is not harsh and mild, so it is easy to drink. The alcohol content is low, so the stimulation is weak and you can drink a lot. I enjoyed it by itself, thinking it was like a dessert, but it might go well with sweets as well.

I bought this on a trip to Toyama and brought it home. As it popped when I opened the bottle, it has a gassy and fruity aroma. When you take it to your mouth, the clear and beautiful sweetness is impressive. It is a carefully crafted sake with little miscellaneous flavor. It was worth the trouble of carrying it in a cooler bag with ice. Postscript When I drank it after a period of abstinence from alcohol for a medical checkup after opening the bottle, the gas was completely gone and it tasted flat and mainly sweet... I could understand how the subtle bitterness, acidity, and texture from the carbon dioxide gas affected the overall flavor, and it reminded me of other brands, so I learned a lot. The label says it is a "nama-shu," so it is best to finish it within a few days.

I bought this sake in Shimane because of the impact of the label. It has an amber color with a sense of maturity typical of San'in sake. It does not have much sweetness, but has a rich acidity and rich umami flavor. Personally, I found it softer and tastier when heated than when cold. I opened the bottle because I simmered some oden, and it was the perfect combination when heated.

Although it is a local sake from Aichi, I had never had it outside of izakaya (Japanese style pubs), so I dared to buy it on my trip. The sake has a good amount of gas and is very easy to drink with a refreshing aroma and acidity. The lingering aftertaste was pleasantly enjoyable.

I chose this from several recommendations at a tavern. It is moderately sweet and has a refreshing acidity. It is amazing that this refreshing taste can be produced at a rice polishing ratio of 88%.

We had it at an izakaya in Toyama. The aroma is subdued and the mouthfeel is slightly sweet and umami, and the sharpness of the wine makes it disappear like delicious water. I have had it many times, and it really goes well with seafood in Toyama.

I was enjoying seafood with Kurobe Gorge (Nodoguro label) when the sake ran out first, so I opened the bottle with gusto. The aroma was moderate, and the sweetness and umami were only slightly sweet and refreshing. I felt that it left a lingering aftertaste, better or worse than the Kurobe Gorge that I had drunk earlier. (I like sake, but it is not strong, so my impression of this second drink is vague...)

This is Kurobekyo x Nodoguro, part of a series released simultaneously on November 1 by the Toyama Sake Brewers Association under the name Toyama No Sake to Sushi. I paired it with seafood, and it went well with the modest aroma with a slight sweetness and umami that quickly faded away. It was so easy to drink as a food sake that I would like to try the regular Kurobekyo sometime.

It is a slightly different variation from the Marufei we drank before, but it has the same delicious characteristics with a pronounced sourness and sweetness. The aroma is subdued and the taste is refreshing. It is still easy to drink and I think I prefer Hiraizumi.

I bought it at a liquor store next to the hotel where I stayed in front of Yonago Station. The lid has a hole for venting gas, so it must not be tipped over. This is doburoku, but it has a slight ginjo aroma, probably due to the 50% rice polishing ratio. The store owner asked us to drink the top clear liquid without mixing it at first, so we tried it and found it to be a clean sweet sake with a gaseous taste. When mixed, the sourness becomes a little stronger, but both are delicious. I would like to buy this sake again if I have the chance.

I couldn't wait to open the bottle after buying several bottles of a densely packed sake on a trip to the San-in region. It has an amber or slightly yellowish color, and the nutty and pickled ginger-like aroma gives it a sense of maturity. The taste is a strong mix of sourness, umami, bitterness, and astringency when cold, but it mellows out when heated and is delicious. As the reputation goes, this is the kind of sake that "comes to life when it is heated up. Sake in this direction is also enjoyable. Postscript As the store staff told me, if you let some time pass after opening the bottle, the aroma and taste will become rounder and more drinkable and delicious. It is the exact opposite of a fresh sake, and gives a sense of the breadth of sake.

When I uncorked the bottle, I felt a slight gasp. The aroma is moderate, and when you put it in your mouth, it starts with sourness and carbonation, followed by a slight sweetness, and then a mild bitterness that is not unpleasant. It may be the type that the flavor changes to a milder one as time passes after opening the bottle.

The label says it is citrusy, and it has a refreshing acidity. It is a very easy-drinking sake with a hint of sweetness that disappears after a few moments. Even my parents, who are not fond of classic sake, enjoyed it easily, so I think anyone can enjoy it.

It is a dry sake with almost no sweetness, with umami and acidity coming to the fore. It has no strange aftertaste and is refreshing, making it perfect as a food wine. It was delicious with bonito tataki and squid salted with salt.
