Rice used is something from Kyushu It was sent together with eel as a hometown tax return gift from Isahaya City❗️. It is a clear and dry sake with good sharpness ‼️. The sweetness is just a hint and goes well with eel. I was curious about the sake brewery that has the same name as Okinawa "Reimei", but I see they are related. It is interesting to see how many things are connected in this industry.

I got this on a trip to Nagasaki last year. I will have it while thinking back to the delicious Turkish rice and Sara Udon noodles 🤤. When you open the bottle and pour it, the aroma is sweet and fluffy, like pudding or custard. The aroma is gentle and soothing. The mouthfeel is smooth and silky, but as the aroma suggests, it has a pudding-like flavor and a moist sweetness that fills the mouth 🍮. On the other hand, it also has a slightly tangy and pungent acidity that gives it a lightness, so it has a good balance of depth of flavor and a sharpness that goes down your throat👍. In the latter half of the bottle, the astringent taste also comes out, so the flavor can be felt as caramelized. There are also the standard "Yokoyama Goju" and "Rokujyosu", and I remember that I had a lot of trouble finding a variety at the Nagasaki airport. I also drank Nagasaki sake several times, and it seems to me that the level of sake is as high as that of shochu 😌.

I saw this one at a store I sometimes visit and have been curious about it for a long time. I tried Kanenaka, a sake made by Nakajimaya in Shunan City, Yamaguchi Prefecture. The label is very cool. The manager recommended this sake, and it won a prize at a competition in Paris, so I opened the bottle with high expectations. The first saké was cold and the first saké was, "Hmmm? It has a strong unique flavor... It's a bit peculiar because it's a sake brewed from a traditional sake brewery... It's not a good match for me... I think it would be better to warm it up 🤔. I opened it for 2 days and drank it.... It has some kind of sweetness, and it's indescribably rich and delicious 😳. This is what I mean when I say that the taste opens up. It's not for everyone by any means, but I thought it was a good sake with a sense of the creator's commitment. Thank you for the treat 🙏.

On the way back from Yamaguchi, we had 4 hours, so we took the customary izakaya shinkansen (Japanese style bar). This time, we procured our alcohol at a liquor store in Yuda Onsen that has a pretty good lineup, so it's OK👍. Alcohol 16%, but it seems a bit stronger than that 😝. It's pretty tasty 😋. Last week I visited Dewano-Fuji at Hankyu Department Store, but I went to Umemoto Sake-ten in Nishinakajima because I thought I could find more variety at a special distributor. (Note that they have moved from the location shown on the map of Sake-no-wa, and they have a corner bar inside after 4:00 p.m.) I was a bit lost, so I asked the waitress and she let me try a sample. Melon-like fruity sweet taste. Slightly refreshing? It was delicious, but Junmai Arabashiri seemed rarer, so I bought that one 😊.

It is refreshing and crisp, but the screw was unusually hard to open, so I think it should be improved. The Junmai Unfiltered Nama-jyu I drank at the end of the year was cheaper and much tastier. I don't know if it's because they use Miyamanishiki, but it tastes a little like the Jokigen I had the other day. A bit 🍇ish.

My first time at Hanaizumi. And nigori sake! This season, there are a variety of nigori sake, which is very enjoyable. First, the top clear sake. It is moderately sour. After stirring it, it becomes more rounded. The texture is silky (is that the right word?). The glutinous rice is not perceived, though I like rice cakes. I like rice cakes, but I think it's dry. I want to eat Karami rice cake.

Hanaizumi Jungin Akkatsu Nigorizake 2023BY ✨✨✨✨ It was active, but since it had been absent for a while, it was easy to open the bottle. As usual, we will drink only the top clearings first. The 5th Shinmae Festival, the 5th Kanno Thanksgiving Mie Shinshu Matsuri (15) Mie Nishiki, which we have not seen very often. The Mie Nishiki on the back label seems to be limited to Morishita Sake Shop. I think bouken-san drank it before. We were told to drink our brewery's sake hot, so we tried heated sake for the first time. It was an aged golden color with an aroma of honey. When I first drank it, I was choked up, but when I regained my breath and drank it, the richness of the sake came through. Unlike the aroma, the spiciness of the wine is more pronounced, but as the temperature drops, the sweetness comes out. I enjoy the change in flavor, and I feel like I don't get drunk at all.

At home. This is the first time I have had Concept Workers Selection, Aged Sake. When I poured it into a glass, it was slightly colored, and the aroma had a strong liquor feel to it. When you put it in your mouth, you can feel a tingling sensation all over your tongue, and the alcohol that passes through your nose is very strong. I don't know if it's because I've heard it's an aged sake, but for some reason it feels like whiskey in the throat. This is the impression I got right after opening the bottle. I'd like to savor it slowly and carefully. On the second day, the fruity aroma and the mouthfeel became mellow.
