Today it will be Hato Masamune. It is a sake from Aomori Prefecture. I was interested in buying it because I saw that the reviewers, whom I personally trust, said it was delicious. I'm also happy that the price is low😃. When I tried it, it tasted like a grapefruit with a moderate sweetness. It has a pleasant fizziness and is perfect for this season. There is plenty of ori, and you can really taste the umami. The impression I got was similar to that of Beaumichel, but it has a more sake-like flavor and higher alcohol content than Michel. I think it is quite cosy for this taste and price. I can confidently recommend this summer sake. It was very tasty 😊.

Today it will be Tanizumi. It is a sake from Noto, Ishikawa Prefecture. There are two versions of the sake called Tonrai, a mother version and a daughter version, and this time it will be the daughter version. It does not have much sweetness, but has an umami flavor. It is super dry, just as the label says. It is not the type of sake to be drunk by itself. It is probably best drunk with fish caught in the Noto Peninsula. I think it has been a while since I had a sake with a solid spiciness. It is strange to think that this is still being made by a young master brewer. But when I think of Noto's local sake, sake that is rooted in the region, I think, yes, this must be it. It is clearly different from the latest fad, but it is a sake that is commonly drunk in the area. It reminded me of the kind of sake I wanted to drink. It was delicious!

Hi Chaso, 🌈 I'm so glad you were able to get your hands on some 😭! I'm usually more of a sweet person, but I've been wanting to try this sake for a while now ✨That's your seal of approval 👍.

Hello, yum yum 😃. I happened to be able to get this at a local liquor store. I have the image of many sakes these days that are dry but have a strong sweetness to them, but this one was really dry. It was the most interesting sake I've had in a long time 😊.

Today it will be Koshi. It is a junmai daiginjo, which is rare for me. As a commoner, I consciously avoid daiginjos because of their high price. When I open the bottle, it has an apple-like aroma. It is gorgeous. There is a good amount of sweetness. The acidity is moderate. It is not sharp, but the lingering sweetness is pleasant. The alcohol content is 13%, so it is very easy to drink. It is a beautiful Junmai Daiginjo-style sake with a good flavor when you taste it thoroughly. The price was about 1,800 yen, so I think it was a good deal. It was a very good sake.

Today it will be Echizen-misaki. It is a sake from Fukui Prefecture. I have heard that Tanabe Shuzo and Kuroryu Shuzo are related, is that right? The aroma is mild. When you put it in your mouth, you can feel the rich umami flavor. It feels like it is a Hokuriku sake. Basically, I think it is a sake that falls into the classic category, but it is not a traditional sake. It's not a traditional sake, it's a modern sake disguised as a classic. It's hard to tell😅. But still, this is delicious. Honestly, it exceeded my expectations. I will almost certainly repeat the experience.

Today it will be skunk cabbage. It's the Nagai Sake Brewery in Gunma Prefecture. I personally have an image of beautiful sake. The aroma is gorgeous. It is fresh. The balance is good, but it is a bit sour due to the fact that it is a summer sake. The bitterness is also present, and it has a nice sharpness. I think the alcohol content is good for a summer sake. It is very easy to drink. It is orikarami, but the orikari is only a little. My impression is that it is a beautiful sake. It has no habits and is easy to drink. It is a typical summer sake. However, I personally wish it had one more feature. It's still delicious enough though😅.

Today it is Yuho. The sake rice is Hyakumangoku No Shiro, which is limited to Ishikawa Prefecture. The sake is limited to Ishikawa Prefecture and the rice is Hyakumangoku no Shiroi. When I drank it, I found a sourness reminiscent of yogurt, a firm umami, and a slight sweetness. There is a slight bitterness in the aftertaste. The aroma is also lactic acidic. This is delicious ❗️. This is the best Yuho I have ever tasted. I don't know if I am the only one to say this, but I felt that Yuho has risen to a higher stage. I'm glad it's a local sake. I have more to look forward to😊.

Today it will be W. Watanabe Sake Brewery, right? It is my favorite sake in Gifu Prefecture. When you put it in your mouth with high expectations, you first get a fairly firm sweetness. From the moderate umami, it finishes with acidity and some bitterness. The sharpness is quite good, and in a good sense, it feels like nothing is left behind. It is completely modern and easy to drink. By the way, is Senbon-Nishiki a sake rice that easily produces sweetness? I feel like I am drinking Aizan sake. It was a satisfying sake😊.

The second bottle today will be Basin No. 2 from Tenka Nishiki. It is from Fukumochi Sake Brewery. I have had a Honjozo in the past, but this will be the first time. I remember that it was originally delicious, but I have the impression that the quality of the sake has improved considerably. The aftertaste from the umami type is sour and rather refreshing. I remember this aftertaste from my memory, and I found it to be Niimasa No. 6. To be honest, I got the impression that this sake is not at the same level as ordinary sake. I would like to pay attention to this sake brewery, even though it has a very small amount of stones. I think it has the potential to become the No. 1 sake brewery in Mie in the future.

Nice to meet you, Chaso 😃. Amakanishiki is delicious, isn't it? I've only had the honjozo, but if I see it in Tokyo, I'd love to buy it 😍.

3KAN4ON, thank you for taking the time to share this with us😊. I think it is not so well known because of its small production, but those who have had it know it is delicious. It is my first priority to buy it when I see it.

Today, chrysanthemum from Chrysanthemum Princess. I drink chrysanthemum often as it is always available. Kikuhime is a rich, mellow, umakuchi (flavorful) sake. That is really the only word I can use to describe it. It is easy to drink, with a hint of sweetness. It can be served cold or hot. The sake I have drunk the most so far is Kiku Hime's Kiku. I will probably continue to drink Kiku Hime no Kiku the most in the future.

Today is my favorite, Tamitsu. I always drink it quickly, so I bought it in a bottle. The aroma is mild. When you put it in your mouth, it has an excellent balance that is typical of Tamitsu. The bitterness and the alcohol that rushes up the throat are also very nice. I thought it would be a bit more classic since it is a junmai sake, but it is more fruity. I knew it was delicious. I wonder how it would taste if it were heated up? I'll have to try it when the fire-aged version comes out. I'm looking forward to having some of Tamitsu's summer sake in the fridge. I'll be following you in the future😊.

Today it will be Shirakiku from Okunoto. It is one of the sweetest sake in Ishikawa Prefecture. Since it is a local sake, I have a rather good chance to drink it. It is a little viscous and sweet like honey, but umami and acidity follow. The sharpness is not so great. The sweetness lingers for a long time. I feel more alcohol than the alcohol content, but this may be a physical condition problem😅. I think this sake has both modern and classic elements. The label is also cool, just like sake, and it is one of the top recommended sakes in Ishikawa.

Today it will be Genmai. It is my rather favorite sake in Nagano. The image I have of Genmai is that of a clean and refreshing sake, and this one is no different. The balance of sweetness, umami, and acidity is excellent. You can hardly feel the alcohol. It is really easy to drink. It is so easy to drink that I have nothing to say about it. Recently, it has become one of the hard-to-buy sakes, so I have fewer opportunities to drink it, but when I see it, it is one of the sakes I buy with the highest priority. I don't particularly chase after it, but I'd be happy to have another chance to try it.

It's getting hot and humid as we enter the rainy season. Today's nostalgic summer labels will be impressive only. The aroma is extremely mild. When you put it in your mouth, you can feel a little sweetness, but it comes with a surprisingly strong punch for its 15% alcohol content. It has a classic umami taste. The toji is a disciple of Mr. Noriguchi, so the impression is that it is relatively close to the umami type sake from Ishikawa Prefecture. This sake is very delicious. I have been drinking a lot of fruity sake recently, but when I drink a rich umami sake like this one once in a while, I think it is really delicious. The label says, "Nature was my best friend back then. It reminded me of my childhood.

It is a little late in the season, but today will be 88 nights at Sakaya Hachibei. I bought it when I went to Mie for personal business some time ago. I have had several bottles of Hachibei, and they were all delicious, so I opened the bottle with high expectations. When I drank it, I found it to be a modern type with very good balance. It is delicious as expected. It is not a low alcohol, but it is easy to drink like a low alcohol. There is no specification on the bottle, but I guess it is a Junmai Ginjo. I wonder what it is. I feel it is a sake from Mie. I don't know if it was made with a focus on terroir, but I have a vague idea of what Mie sake tastes like. It was delicious. I want to drink Hachibei Sake again.

Today it will be Banshu Aizan from Kuroemon. This is a sake from Nagano, which has recently gained so much momentum that it is safe to say that it is the new sake kingdom 😊. The aroma is gorgeous and apple-like. In the mouth, the sweetness and umami typical of Aizan spread out with an apple-like acidity. When you taste it thoroughly, there is also a slight bitterness as an accent. It does not have a sharpness, and there is a lingering sweetness. I guess it depends on your taste, but I prefer a little more sharpness. I have the impression that it is quite similar to the Aizan from Kaze no Mori that I had a while ago. It is a sake with a strong Aizan flavor, and I think it will be popular among women. Kuroemon is also a very talented brewery that brews a wide variety of flavors. Nagano is a place to be feared.

It's getting hotter these days. It's time for summer sake, and today it will be the cicadas of the sea of turtles. The bottle and the label are all emerald green, reminiscent of muscat. When I drank it, I found it to be muscat. It does not feel alcoholic and is easy to drink. The sweetness is moderate and the acidity comes forward, but it is perfect for this season 😊. I think this is one of the baddest drinks. Also, maybe it's just me, but while I was drinking this, I had Niimasa No. 6 in my head. I'm looking forward to more from this brewery.

Today it is Hayashi's Yamadanishiki. It was purchased at the same time as Gohyakumangoku a while ago. This one is a bottle. The aroma is mild. When you put it in your mouth, the umami spreads from a moderate sweetness. A moderate acidity and a spiciness that is typical of Hayashi come later. It also has a sharpness. You do not feel much alcohol. The sense of balance is outstanding ❗️I have the impression that I drank a sake with a high degree of perfection. Personally, I like this more than Gohyakumangoku. I think I will buy another bottle and give it to my relatives for Obon. I think they will probably be pleased☺️.

Today it will be Zhuyin. It is made by Shuho Shuzo. There is no description, but it is said to be Junmai Daiginjo. The aroma is gorgeous. The sweet mouthfeel is followed by sourness and a slight bitterness. I thought it had a strong alcohol content that seemed to rush up the throat, but the alcohol content was 17 degrees Celsius. That's a bit high for a recent sake 😉. There is a lingering sweetness, but it's not clingy and delicious. I thought it was the first time in a while that I had a sake that was typical of Yamagata's ginjo-shu. The label also has a modern feel to it, which I like. I am very satisfied with this bottle.

Today we have Hayashi, a famous sake from Toyama. I bought this one because there was a four-pack bottle available. The aroma is gorgeous and almost melon-like. It has a slight effervescence in the mouth. It has a moderate sweetness and sourness, but it is followed by a slightly stronger bitterness and spiciness. There is a moderate sense of alcohol. The overall impression is of a well-balanced dry sake. It is somewhere between modern and classic. And Ihyakumangoku from Toyama is still excellent. According to the manager of the sake shop, the four-part bottles will be available only this year so far. The brewery is small, so it is difficult to make a four-pack because it takes a lot of time and effort. If it is well received, they will think about it again. I hope they will continue to use Yongbottle because it is very convenient ☺️.

Today will be Banshu Issen's Aizan. It is my favorite Aizan, so I have high expectations for it. It has a gorgeous aroma. When you put it in your mouth, the sweetness spreads slowly, and the slight bitterness and sourness give it a sharp finish. It is not very sharp, but there is a lingering sweetness. You don't feel much alcohol, so be careful not to drink too much. When I was drinking it, I somehow thought of Kaze no Mori's 807 Aizan. I forgot to take a picture so I didn't post it, but it was very tasty and impressive too. I want to buy Banshu Issen again. I'm looking forward to the next one.
