I have been so busy lately that I have been skipping posts. This is a sake that I drank a while ago, but this time, it is a sake called "Kosu-Mori" (brewed in Niigata). It is a sake from Niigata. I have an image of Niigata as a light and dry sake, but nowadays there are many kinds of sake available. Kosumori is one of them. When you open the bottle, you will feel a slight carbonation. This was unexpected. It was unexpected. It is an oriented type with sweetness and acidity. It is easy to drink, and is very mainstream these days. To be honest, it is a little out of my taste, but it is a delicious sake. It has the ability to make me want to drink it again. I would like to drink some more of their other stuff. I would buy it again if I had the chance.

Today, it is Shichida. It is a sake from Saga Prefecture. Saga has many delicious and famous sake, and Shichida is one of them. When I drank it, I found that for a sake with a rice polishing ratio of 75%, it did not have much of a cloying taste. It has a nice sweetness and umami. The alcohol content is moderate. It seems to be a blend of several types of sake rice, but it is very well balanced. I remember it was quite inexpensive, but this is a very good deal. Is this a sake that is released every year? If they have it next year, I'm sure I'll be a repeat customer with plenty of time to spare👍.

Today I am thankful for the love of Daishinshu. In my opinion, this is my favorite sake of Daishinshu. I don't think you can go wrong with any Daishinshu, but it has an exquisite balance and a clear, dry taste. It is a sake that has a good sense of alcohol, and you can get drunk comfortably without feeling that you have had too much. The label is also interesting. I was thinking how delicious Nagano sake tastes no matter what you drink, and wishing I could visit Zenkoji Temple and eat soba noodles for the first time in a while. I've been so busy lately that I haven't traveled at all, and I want to go to Nagano.

Today's popular instrument Masamune. I'm looking forward to it because I love Fukushima Prefecture's sake. I guess it has been more than a year since I last had a bottle of Musical Instrument Masamune, partly because there are no special distributors in my area. This time I snapped it up when Rakuten offered free shipping. I bought it in a bottle due to the fact that I can't buy it often. I prefer to buy a bottle of fire-brewed sake because of its cost performance. I drank it right away and found it to be delicious. I have never had a bad experience with Masamune. I try to drink one sake a day, but I think I will run out of this one soon. I'm also happy that it's easy on the wallet, as I've decided to limit my sake expenses to 10,000 yen per month. I'll buy some more when I get free shipping again😊.

My relatives were returning to their hometown a month late, so I joined them for a drinking party. I brought Sogen, a sake from Ishikawa Prefecture. The Sogen I usually drink is a honjozo, but this time it was a junmai ginjo Omachi. It lacked the sweetness and umami that one gets when drinking honjozo, and was rather easy to drink and refreshing. However, as one would expect from Sogen, there is a certain aftertaste that is hard to describe. Because it is a Noto sake, it goes best with sashimi. It was the first Sogen in a while, and it was delicious. I am satisfied.

Today we have a purple space morning glory label. It is one of the best sake representing Iwate Prefecture. I had a bottle of Murasakyu's summer sake a while ago and enjoyed it very much, so I opened the bottle with high expectations. The aroma is quite mild. When I drank it, I found it to be umami, but there was definitely a moderate sweetness that came from deep within the umami. The acidity and spiciness are also very strong, so it is very sharp. There is also a sense of alcohol that seems to swell in the mouth. I tasted it quite seriously this time, and this balance is amazing. Personally, I would recommend the snow-cooled version. Well, I have more sake to look forward to. I want to try many different kinds, so I'll be following them for a while.

Today it will be a figure, Yamatanosugata. It is a Tochigi Prefecture sake. My cousin lives in Tochigi, so he bought it for me when he went back to his hometown for the Bon Festival. I drink Sake Sagata once in a while, but this is my first time to drink it. When I drank it, it was easy to drink, with a sweetness leading type. It is easy to drink, but at the end you can feel the sharpness like a dry sake. It also has a strong alcohol taste. This is the type of drink that you should be careful not to drink too much and get intoxicated before you know it😅. It goes well with the gyoza (dumplings) I bought with it. In return, I will send you crab and Kikuhime when winter comes.

Today is Active Summer by Choyo Fukumusume. It's a sake that feels like summer. This is my first time to drink Changyang Fookmusume. I think I prefer dry junmai ginjo the best among the various specifications, so I opened the bottle with high expectations. The aroma is not spectacular but it has a nice aroma 😃. When I drink it, it feels dry at first, but soon the umami and sourness comes. I think the sweetness is moderate. It finishes with a nice kick. I have the impression that this is a very good food sake. I like the design of the label, and I may try another one soon. I'll put it on my list of favorites.

Today, it is Haneya. It may be my favorite in Toyama Prefecture. But I honestly feel uncomfortable with hiya-odori in this hot weather. When I drank it, I got the impression that it was very calm for Haneya. I imagined it to be more of a gorgeous sweet and umami type, but it was more of a mild umami type. Well, it is a hiyaoroshi, so it is natural, but it was an image that I did not expect from Haneya. I may have drunk this one a little too soon. Maybe I should have waited a little longer and paired it with seasonal food later in the fall. Nevertheless, it was a delicious sake. I thought it was one of Haneya's best sakes, especially when paired with food.

I heard on the news about a super El Nino phenomenon that came for the first time in several years, but I don't know anything difficult 😅. Well, today is Ding's summer growth. I bought this one last year and it was delicious, so I bought it again this year. It has a good balance of Ding, but with a little more acidity. It is easy to drink and tastes like a summer wine. The entrée is all raw vegetables these days, and that is enough for me. I'm drinking summer sake and thinking that it's time for me to start drinking hiyaoroshi.

Sake I brought to a drinking party at a relative's house. It is Yuho. Some relatives are coming back to their hometowns from outside of the prefecture, so I thought it would be nice to welcome them with a local sake, so I chose this one. This sake has the umami flavor typical of Yuho, but as the temperature rises a little, the sweetness also comes out and it is easy to drink. Yuho is also a delicious sake when heated, but the recent hot weather has not inspired me to do so. It is an excellent food sake that goes well with sashimi, meat, simmered dishes, fried foods, and everything in between.

Drinking party at a relative's house during Obon. Sake prepared by relatives, it will be Tateyama. In Hokuriku, the Tateyama Brewery is a major sake brewery that even people who do not drink sake know about. It is almost always on the menu at izakaya (Japanese style pubs). This sake is very fruity, sweet and tasty, and easy to drink. The bitterness and acidity are moderate. In a word, it is elegant. It has been a long time since I had tasted Tateyama, but it was a stable taste. It went well with sashimi.

Since the space in the refrigerator is running low, I decided to drink the oldest sake first. Today's sake is Tasake Junmai-shu. I've been consciously trying not to hoard sake lately, but I feel uneasy if I don't have at least 10 bottles. I guess this is a common thing for sake and wine drinkers😃. I try to fill more than half of mine with food, especially if I'm using Lemacom, because I'm a hoarder. Now, as for the Tasake, my impression is that it is surprisingly sweet and has a bitter taste. It is like a more balanced type among the balanced types. I remember that when I bought it, I was told that the rice was milled to a flat ratio, and I wonder if that is the reason why I don't feel any bitterness and have a refreshing impression for a 70% rice. Anyway, it was delicious and cheap, as I recall. For someone like me with a small allowance, it was a very good sake. It was a delicious sake that made me want to buy it again next year 😊.

Today is a breakthrough for Saijotsuru. Hiroshima Prefecture. It has been quite a while since I have had Saijotsuru sake, and I am glad because I have been wanting to try this Saijotsuru Hatenraku, but never had the chance and put it off. As I opened the bottle, I guess it has a modest aroma. When you drink it, you can feel the spiciness, but then you can slowly feel the umami and acidity. The end result is very sharp, just like a super dry wine. No, this is delicious 😊. I think the most appropriate way to describe it is that it is classic, light and dry. It is also excellent as a food sake. Saijo sake is good after all. It's as good as Nada or Fushimi 😊. I am very satisfied. ❗️

Well, today, I will be in the purple space. I think it is the most popular sake in Iwate Prefecture right now. I am drinking it for the first time. As soon as I opened the bottle, I found a great balance between umami and acidity. I was expecting it to be sweetness-driven, so this was unexpected. This may be because it is a summer sake. And what was the aftertaste? What I thought was the aftertaste. It was a strange feeling that I had never felt before, a feeling of alcohol expanding softly in the mouth. It was interesting. With such a great drinking experience, it's no wonder it's so popular these days. I would like to drink this sake again next year. I also bought the morning glory label, so I will review it again next time.

Today is a summer sake from the Gazan style. It will be a Yamagata Prefecture sake. The morning glory label is cool. When you open the bottle and drink it, it has a unique aroma in the mouth. It gives an herb-like impression. However, it is not negative and is one of the characteristics. Overall, the flavor is reminiscent of melon, and the slightly low alcohol content makes it easy to drink. When you press it tightly against your upper jaw with your tongue, you can feel a firm spiciness. This spiciness and the sharpness of the bitterness are perfect for the image of a refreshing summer sake. As a dry sake lover, I was satisfied with this bottle. After all, Yamagata Prefecture has a high level of quality👍.

Today is Takeba after a long time. It is a sake from Noto, Ishikawa Prefecture. To be honest, I was getting a little bored with all the summer sake, so I chose this one for a break. I have a bit of a cold, so I can't really smell the aroma, but it seems mild. To put it simply, it is a dry, crisp sake with a low sweetness and a focus on umami and acidity, but it has a lot of umami. I can feel the umami of the rice more than any other sake I have had this year. The acidity is also strong, as it is Yamahai. The alcohol content is 17%, so you can feel a sensation of heat in your chest. It also has a nice sharpness. Hokuriku sake has an image of being dry and sharp, and this is no exception. I know I'm rambling, but it's very tasty. For the first time in a long time, it seems to be right in the middle of my tastes. I'm drinking it at room temperature, but I have a feeling it would be good warmed up a bit, so I might try heating it up to human body temperature tomorrow. It will probably be delicious 😊.

Today it will be Sweet Emotion. It's Ryoseki Brewery in Akita. I have only had Hana Yuu so far, and this will be my first time. When I drank it, I didn't notice much aroma, but first I felt sweetness. Right after I thought it might be quite sweet, the bitterness and sourness came. As a result, it is a well-balanced sake that does not drag on afterwards for the sweetness you feel at first. It is very easy to drink. However, to be honest, I don't think I would repeat it. The reason is that I didn't find much of its characteristics. I am confident that I would miss it in a blind tasting. I think it's a luxury item, so I have this impression, but it's a good drink in general, so I think you should enjoy it without worrying about it.

Today it will be Kamikigen, a famous sake from Yamagata. It has probably been about 2 years since I last had a chance to drink it. As soon as the bottle is opened, it is as shwashy as its name. It is sweet and tasty, with a bitter taste in the latter half, but it finishes with a pleasant carbonation. Yes, it is delicious. It is a refreshing and refreshing sake that makes you forget the hot and humid weather. The name and label are nice. Especially the label reminds me of a wind bell or a goldfish bowl. It was my first Kamikigen in a while, and I was quite satisfied with it. It is a quintessential sake brewery with a lot of talent. It was delicious👍.

It was hot today, so I chose a cool looking sake. It is Hanagaki, a famous sake from Fukui Prefecture. It's slightly sparkling and full of ori. When you open the cork a little, the ori will mix with the automatic stirring 😊. When I drank it, it was more umami than sweet. There is also a strong bitterness. The taste or concept of this beer is similar to that of Beaumichel and others. It's easy to drink and schwashy. It also looks nice. The blue bottle and the feeling of the oli pooling in the bottle is cool. I thought it was highly complete as a product. This was a sake that made me want to drink it again next year.
