Today it will be Tanizumi.
It is a sake from Noto, Ishikawa Prefecture.
There are two versions of the sake called Tonrai, a mother version and a daughter version, and this time it will be the daughter version.
It does not have much sweetness, but has an umami flavor. It is super dry, just as the label says. It is not the type of sake to be drunk by itself.
It is probably best drunk with fish caught in the Noto Peninsula.
I think it has been a while since I had a sake with a solid spiciness.
It is strange to think that this is still being made by a young master brewer.
But when I think of Noto's local sake, sake that is rooted in the region, I think, yes, this must be it.
It is clearly different from the latest fad, but it is a sake that is commonly drunk in the area. It reminded me of the kind of sake I wanted to drink.

I happened to be able to get this at a local liquor store.
I have the image of many sakes these days that are dry but have a strong sweetness to them, but this one was really dry.
It was the most interesting sake I've had in a long time 😊.
