I bought this bottle because of the stylish bottle. It is brewed with 80% Nara's sake rice, Rohafu. It has a gorgeous, complex flavor that is practically a ginjo-shu, although it cannot claim to be due to the rice polishing ratio. The cemedine-like aroma is like playing a bad game. Surprisingly, it goes well with rice cake-type Japanese sweets. I tried pairing it with yubeshi, and the strawberry flavor hidden behind the complex flavor came out.

Exports are booming, and an innovative sake brewery, Iwakuni Asahi Sake Brewery in Yamaguchi Prefecture, has finally established a brewery in the United States. For the sake of Japan and the future of sake, we hope that they will continue to earn foreign currencies. The sparkling daiginjo is, as usual, recommended by Ms. Seiko Yamauchi, a sake master of my heart. The bubbles from the second fermentation in the bottle are strong and almost champagne-like. It goes well with sweet sweets. There was a note to be careful when opening the bottle, but perhaps because it had been sitting in the refrigerator, it did not blow out.

It can be purchased at a local supermarket for a little over 1,000 yen, so it has become a regular sake that is excellent in terms of cost performance. This junmai-shu is produced by Miyazaki Honten in Yokkaichi, Mie, which is famous for its Kou shochu, KINMIYA. Slightly sweet like a rice cake, this sake is suitable for a leisurely evening drink. It is a soothing sake to drink when you are down in the dumps. It is good at room temperature, but even better warmed.

Tokamachi's local sake, bought on a business trip to Niigata. Most of the sake is consumed within the prefecture. It tastes sweet and heavy, and is slightly different from the light and dry image one has of Niigata sake. It is made from Koshihikari rice, so it tastes like eating rice.

Outdoor drinking again. Grilled ray fins for entrée. Sakurabana Ginjo was launched in 1980 and has been a long seller for over 40 years. It is a standard ginjo, but I thought it had the advantage of being delicious in a normal way.

In her essay "Late Night Sake Reviews," Seiko Yamauchi, a sake master in her own right, praised it highly for its unobtrusive yet unique depth. I bought it on a business trip to Gunma, but since it is recommended to drink in chilly weather, I decided to drink it. It has a slightly yellowish, sweet, acidic, and rich taste. It is just barely balanced without being overpowering. Many people on the internet recommend heating it up, but I prefer it at room temperature.

Junmai sake from the Ozawa Sake Brewery in Okutama, Tokyo. Sawanoi-en, a sake brewery attached to the brewery, is famous as a spot where you can savor a cup of sake on your way home from a hike. Made from Koshiibuki, a member of the Koshihikari family. It tasted fresh and light, as is typical for a sake made from sake.

Junmai-shu by Sakura Masamune of Nada, the originator of Masamune. This bottle has a cute cherry blossom label, but as retro as it looks, it tastes a bit classic. It was better chilled. After a little while after opening the bottle, the taste calmed down and it became a soothing taste at room temperature. I heard that it is suitable for warming up, so I will try it next time.

A bottle I got at the "NEW NEW SAKE WEEK" event at Newman Shinjuku. It was purchased from a brewer named haccoba in Namie, Fukushima Prefecture. When the bottle is opened, gas and oli float to the surface at once. It is said to be brewed with a kind of hop called Karakaso, so it is like drinking a juicy grapefruit. When you peel off the bottle exterior, a poem describing the countryside appears, making it a refreshing pop sake.

Purchased at a supermarket on the way out. At room temperature, the alcohol taste was not so strong, but when heated up, the taste became rounder and more pleasant. As it is a Toyama sake, it went well with yellowtail sashimi.

Drinking comparison at danchu festival. The brewer poured us a glass. As the name suggests, the taste was clean and refreshing, but Hitogokochi had a better acidity and tasted better. I thought, "I'll buy it next time! I looked up the price and found that it was at a premium everywhere, so it will be a while before I can drink it again.

The Shirafuji Sake Brewery in Wajima was severely damaged, but they will continue to brew sake at the Yukawa Sake Brewery in neighboring Nagano Prefecture. This is a bottle brewed with pesticide-free rice. The first sip is a bit harsh on the throat, but the taste is refreshing. I felt it was suitable for a mealtime sake that goes well with Japanese food. After a few days after opening the bottle, the flavor becomes more rounded, and it is a real treat.

In "Late Night Sake Review," an interesting sake essay by Seiko Yamauchi, a sake master of my heart, this bottle was introduced with unusual enthusiasm: "Local people drink a lot of this sake on a daily basis and make me drink it," "I want to prepare at least two bottles because I can drink it quickly," and so on. On a business trip to Gunma, I bought it at a convenience store in Takasaki, where it was normally sold. It is a man's sake! It is easy to drink with a fresh fruity taste, and I thought it could be a good choice for both men and women.
