Hoken純米吟醸 八反錦
じじ
At csw. This is a product of the Houken Shuzo brewery in Kure City, Hiroshima Prefecture. It is brewed with Hachitan-Nishiki from Hiroshima.
It does not have a flashy ginjo aroma, but it is sharp and I found it to go well with Western-style tsumami. If you look up the brand name, you can read the story of Tetsuya Doi, who took over the brewery at a young age, and his stoic approach to sake brewing.
