Gifu's Watanabe Sake Brewery is known for its "Hida no Dobu" and "Irootoko. Every year in March, they invite Yoshimoto and hold a grand opening of the brewery, and the bottles of sake that were served at the festival were found at a local supermarket, so we protected them. I found a bottle of sake bottles that were served at the festival washed up at a local supermarket, so I protected it. I'm tired from working late-night overtime, so I'm going to open it. This is the third collaboration between SENKOKU and SAKELABO TOKYO, a direct-drafted, unpasteurized sake. Slightly effervescent, harmonious balance of acidity and sweetness. SENKYO is still good. Rice: Domaine Sakura Yamadanishiki Polishing ratio: 50% for Koji rice, 60% for Kake rice Alcohol content: 14%.

This bottle is from Yamaguchi Shuzo, a long-established sake brewery in Kurume, Fukuoka Prefecture. I bought it because of its cute retro label with a Japanese bush warbler on it. The refreshing sweet and sour taste is like Calpis for adults. On a hot day like this, it is best served chilled. I can imagine how it would be like if you put ginger in it to make it more like a chilled candy. It is also a good idea to add ginger to it to make it more like a chilled candy. Rice: Yume-Ichiken Rice polishing ratio: 60 Sake meter : -74 Acidity : 4.0 Alcohol content : 6%.

A bottle of Hachinohe Sake Brewery, Aomori Prefecture. It uses Kyokai No. 77, a yeast that produces high levels of malic acid. It has an astonishing sake degree of minus 68, making it almost like apple juice, even though it is a junmai sake. The low alcohol content makes it an aperitif. Rice polishing ratio: 70%. Alcohol content: 7%. Sake meter: -68 Acidity: 4.7

A product of Yamanashi Meikozo, a long-established brewery in Hokuto City, Yamanashi Prefecture. It is made with water from Hakushu, famous for its whiskey. The entire bottle was cooled with water and served to us. The refreshing acidity was impressive and perfect for the hot and humid summer. It was served with stewed motsu (pork cutlets). Rice polishing ratio: 70%. Rice used: Hitogokochi, Asahi no Yume Alcohol content: 15%.

A colleague who is from Yamagata Prefecture brought this sake to a farewell party (for the sender). It was supposed to be dry, but it tasted like banana melon and disappeared at the speed of light. This local sake is produced in Yoshino, Nara Prefecture, famous for its cherry blossoms, by the Kitamura Sake Brewery. Gin-no-sato is a member of the Yamadanishiki family of sake rice, and the rice used for this sake is from Yoshino. I first tried it on the rocks because it is a pure sake, but this was a bit of a mistake as it is not spicy. It has a sweetness that is not too sweet and a firm umami flavor, so it is best served at room temperature. Rice: Gin-no-sato from Yoshino-cho, Nara Prefecture Rice polishing ratio: 60 Alcohol content: 17%. Sake meter: -3 Acidity: 1.6

After "Comet (Char)", I drank "Saku (Zaku)"! So, we tried one from the famous Shimizu Seizaburo Shoten in Suzuka, Mie Prefecture. This is a long-selling junmai sake for plum wine made with locally produced rice. Compared to making white liquor, only half the amount of glacial sugar is needed, so we pickle one kilogram of plums and 500 grams of glacial sugar to one kilogram of Fukyu-nishiki. I tasted a little bit of the original sake while I was making it, and it was a delicious sake with a deliciously bitter taste. We are looking forward to seeing the finished product in half a year! This is a bottle with a surprisingly good sense of naming that makes the word "comet" read "sha". It is a product of the Endo Sake Brewery in Suzaka, Shinshu. The brewery's website says only that it is as impressive as a comet! It is probably a reference to Char Aznable, the Red Comet, but it is too early to say. I had been curious about this sake for a long time, so I picked it up at the sake corner of Bic Camera Shinjuku West Exit Store. The refreshing acidity is a modern taste. It is fruity and easy to drink, and I could drink it three times as much as usual. Alcohol content: 15%. Everyone loves Sentori. It is called "Mukonin" because it is made of Yamada Nishiki, not Kame-no-o or Omachi, which have strong personalities. The standard line is Yamada-Nishiki, which is a luxury. One of the 2018 brewing at the time of the release of the movie "In This Corner of the World". The film depicts the life of Suzu-san, who came to marry in the wartime military port city of Kure. I remember seeing it for the first time in the movie theater and was hit by a wave of emotion that cannot be described in words of emotion, and it dragged me back to the point of going to see it again a week later. It has aged well over the past 6 years and has turned into a sweet, rich, mellow beer. Miyake Honten, which brews Senpuku, is a sake brewery in Kure, Hiroshima Prefecture, where the film is set. The company was in charge of brewing sake for the Imperial Navy's naval vessels, and for a time before World War II, it was the largest sake brewery in Japan in terms of production, earning it the title of "King of Sake. This sake is a drink that brings back memories and history. Rice polishing ratio: 60 Rice used: Senbon-Nishiki produced in Hiroshima Prefecture Alcohol content: 16.5%.

Taisetsukei Brewery is located in Azumino, Shinshu. It is a very alpine sake brewery that takes its name from the Hakuba Daisetsuekei mountain range and advocates "mountain sake. This product bears the name of Mt. It has an apple-like ginjo aroma, a characteristic of the Alpine yeast born in Nagano. It is sweet, fruity, and easy to drink, but because it is a pure sake, you will find yourself getting drunk before you know it, making it a bit of a dangerous drink.

The name "Asakai" is said to be derived from the name of a boat that the founder, a samurai from the Nanbu domain, used to row early in the morning when he quit his job as a samurai and started brewing sake. I bought a small bottle with a beautiful design of the character for "iwa," which means "rock" in Japanese. It had a sweet and bitter taste that spread gradually and gently.

Thank you Jay & Nobby and Eririn for your comments. As you pointed out, this is the Dragon Eye in Hachimantai, Iwate! It seems that the eye opened earlier than usual, perhaps due to global warming. Iwate Blue was recommended to drink cold sake, so we plunged it into the snow and had it with a kink in it😅.

Toyobai, a sake from Tsugaru. A strong punch at 18% by volume. And it has a sake degree of 10%. And yet it slides right down your throat. Not something you want to drink on your third glass 💦.

This is a product of the Niida family, which aspires to brew sake in Fukushima using 100% natural rice. It comes in a single cup that looks like a milk bottle. We had it with dumplings as an entrée. It does not have a sharp taste, but it is well-balanced and somewhat comforting.

Thank you for your comment, Hirupeko! The frog is also used in the logo design of the Niida family, and is a symbol of the natural rice that the brewery is committed to. I once participated in a rice cultivation training program when I was a student, and I remember that there were frogs all over the place. The blue flowers are nemophila, as you pointed out. It is one of the joys of this season, as the flowers go well with the early summer sky. I see it planted in many parks these days.

It is a Junmai Ginjo from Kangiku Meijo, a sake brewery near Kujukurihama, Chiba. It is said to have the image of an airplane flying in the sky in early summer, but the bottle seemed to be a bit foamy and the cork started to inflight the moment we opened it. Be careful when opening the bottle. As the label suggests, it tastes refreshing and juicy, and is a good summer sake that is best served chilled. It relieved my depressed mood after a rainy GW.

Also outdoor drinking. This is a product of Sakura Masamune, the original Masamune of Nada. Association No. 1 yeast was originally isolated from Sakura Masamune's sake mother, but it has long since been lost and has been restored after several decades. The taste is light, light and dry, with just the right amount of acidity to keep you from getting tired of drinking it. I drank it with curry, and felt it went well with fatty food.
