The fragile label made me think it would be more modern, but perhaps that's because it is made with 80% polished rice. This is the first junmai ginjo with a 13° alcohol content at Zenkichi 🤗. [I received a gift of "Kaju crab miso" as a souvenir. Then, I wondered if this would go well with it. I thought it would go well with this one, so I drank it cold. It has a slightly classical taste, with a sourness and a strong alcohole flavor that comes out in the nose. It is a dry Otoko (men's) sake with a hot and dry taste. Perhaps it is because it is a cold-stored sake, but when the temperature is lowered...what do you expect? The mouthfeel is soft and fluffy, and the sweetness and richness of the rice can be felt. The crab miso was also delicious dissolved in miso soup!
