Faint apricot? Slightly subdued fruitiness. When I drank it at an event in town last year, it seemed a bit fresher, but there is a sense that it has aged slightly. It has a slightly gassy feeling, a soft and long-lasting citrus acidity, and a gentle sweetness that is well-balanced and expands in the mouth. It was a delicious sake with a malted rice aroma and a firm full-bodied flavor.

It has a slightly thickened, smooth mouthfeel, a sweet, whey taste with a hint of gas, and a slight peach flavor, similar to the Sairai The Poler. With all due respect, I was surprised at how modern the flavor was, which I didn't expect from the label. Cool retro label in the style of a big fishing flag 🤗. It is a light sake with a deep, full-bodied, sharp, and slightly dry taste. It has a round and slightly sweet mouthfeel at first taste, a light matured feeling, slight apricot, cocoa, and rich umami...all intertwined with a fine acidity that lingers on the tongue. I felt it was a refined taste for a junmai sake.

I heard that it was brewed by combining two types of yeast in one tank. I found a bottle that was brewed in January and had been sitting for 6 months at a sake store... I was attracted by the label on the back and picked it up 🤗. It has a light tang at the throat. The image of gorgeous fruit on the back label is a bit subdued. It is full-bodied, sweet, rich and mellow 😚.

It has been a long time since I visited a small sake store in a shopping street. I was greeted by a poster 🤗It is a sake from a brewery in Ibaraki, not far from Tochigi. It was made in March 🙄 It was probably a spring sake ⁈It had a subtle apple-like ginjo aroma, a calm taste as if it had been laid down at a low temperature for a while, a little apricot? It has a sweetness like cotton candy and umami. It has a light, crisp taste with a moderate acidity derived from the nama-moto (sake brewing process). The bitterness in the aftertaste reminded me of pickled plum seeds in plum wine or plum syrup with soda. Easy to drink at 14 degrees al.

I was really curious about this one that some people mentioned in the March Kansai Off-line Meeting report (‼️). I was looking for a liquor store that sold this sake, and I found one in the city of Utsunomiya 👍Kotori-San happened to stop by that liquor store on the Tochigi Citizen's Line and I asked him about Nishibori, and he said they sell it, so I asked Nobby to rush over to the store 😊. So I asked Nobby to come over 😊. I checked out the sakewa and found out what everyone thought of it 🤔, and they all praised it highly, saying it was "mildly gorgeous and has a nice sweetness😊It left the strongest impression on them😊And everyone was talking about their love for Tochigi🥰, which made me happy again 🥹. I will make love to you with all my heart Yes, it's a good thing I'm not a fan of Tochigi! The sweet aroma heightens my anticipation! I'm so happy to hear that 🜂! This is delicious 😚 This sweetness is not too much and Nobby also enjoyed drinking it! I thought that a glass of this outside would certainly have a strong impact on people in the Kansai region 😊. It's too thick at 17 degrees to drink all at once😅I drank half of it and switched to the next one! I had the rest on Sunday and it was as good as ever👍 I love Tochigi 🥰, nurtured in Kansai.

I've been waiting for this with map painting in mind. Tottori Sake🤗 Junmai Daiginjo (no sake rice listed) sake was stored in sherry casks for about a month. The aroma of maturity with acidity and koji aroma is gently wafting through the air. It has a fruity and sweet aroma reminiscent of raisins and plums, and a slightly tangy and oily aroma of dried fruits. It also has a slightly oily flavor with a hint of dried fruit. It has a sense of wooden barrels, astringency, and a lingering taste of mild acidity... It is easy to drink at al 14 degrees Celsius. The next day it was mellower and more flavorful. It was nice to have a fresh taste of something different once in a while. Kottori from my favorite beef bone ramen shop. It was gutsy and thick like a corned beef and 🧄 potage!

90% of the brewing volume is consumed in Tochigi prefecture. This time, we chose Soyojo's "Namahashiroshi" series. On the first day, the first aroma was a light ripe aroma with a flavor reminiscent of dried apricot, and the moment it hit the palate, it had a strong sourness. This is the kind of sourness that is typical for a sake made from a sake yeast yeast (⁉️). It makes my teeth feel scratchy like after eating a lemon... The second day, I think it's a mid-palate. Gradually it becomes soft sweetness. The aftertaste is slightly bitter. The quality of the sake is light even in its original state. Even though it is a low-polished sake, it does not have a graininess or a cloying taste, and it is a light sake with an Alc. of 17, so it is a food sake that goes well with food. On the third day, oh? The sweet and sour flavors have come together...or maybe I'm getting used to the flavors? The lactic acidity and creamy richness also started to show up. The last cup was my favorite. The dumplings are so big you could break your chopsticks🤣I'm full! Rice: 100% Yamadanishiki, Special A district    (Yoshikawa, Hyogo Prefecture) Rice polishing ratio: 70 Alcohol content: 17 Sake meter: +3 Yeast: Kyokai No.7

KAWABU - Chill Kawabu Brewery is well known for its "Hokosugi" brand. The brewery plans to launch the high-class brand "Shiki" in 2021, and in 2022, "KAWABU" will be born, bearing the brewery's name. The elegant aroma with gorgeous fruitiness is mellow and sweet, with hints of white peach, lychee, and grape. The lees of the ogara-mushi (strained lees) are small, but there is the tangy stimulation of the raw sake. The taste eventually changes to sweet and sour like apples. I was curious to see what kind of sake brewed with local ultra-soft water was like, so I stopped by a liquor store and found this one. We had it while learning about the history of the Oke-sale. The style of the sake is soft, but the bitterness cuts through it. The top-tasting aroma is a gentle melon-like ginjo aroma. The mouthfeel is slightly smooth, sweet, and thick with a lingering bitterness and a slight mushroom-like taste. Alcohol content 17%.
