Soft sweetness and acidity are intertwined.
The umami is also felt, but it does not come forward.
It is sharp and easy to drink.
Personally, however, I would like to see more lingering flavors.
It is recommended to be served lukewarm.
The sweetness and acidity are enhanced when drunk.
It is thick and firm.
I prefer it lukewarm.
Nara 2024 Tenpyo Festival at the Autumn Soraku Festa
I ordered the first glass as an aperitif.
It looked maidenly and I imagined it to be fruity and soft, but it had a surprisingly sharp taste and seemed to go well with nabe (hot pot).
It was an easy-drinking sake with no sharp characteristics, and just plain delicious!
Sake we drank at the sushi restaurant (4)
This one was a complete change of pace from the other two, with a slightly dry sake that seemed to accept all kinds of food.
The first sip is quite refreshing. It is as habit-free as if it were water. From the second sip, I felt a soft sweetness and a gentle bitterness in the aftertaste. It is just the right sake, not too spicy and not too sweet. It doesn't fight with the ankou ponzu (pickled gizzard fish paste) served with the entrée. It looks simple and can be enjoyed in a relaxed manner.
This is Jungin Omachi.
Omachi from Okayama Prefecture
Polishing ratio 50%.
Compared with Natsu Jungin.
The aroma is fresher and softer than that of Natsu Jungin, and I personally prefer this one.
