It's been a while since I've had Tobiroki Black Label, but this is the first time I've had it in a No. 4 bottle. When chilled, it has a gentle melon aroma and sweetness. In the latter half, as the temperature rises, the umami bitterness and umami astringency become stronger, and the umami spiciness lingers for a long time. It is darker in every way than the Izumikawa Junmai Ginjo from the same brewery. It has a very beautifully balanced umami, spicy, bitter, and astringent taste, with a rich umami mouthfeel.

It's my first W! The first sip with a sweet aroma, it has a matured honey-like sweetness and a delicious bitterness and spiciness that is not overpowered by the sweetness. Shizenigo Hozhun Junmai by Oki Daikichi Shoten, a well-known brand of Masamune Instrument. It has a very gentle sweetness. The beautiful acidity and bitterness spread afterward, and the crispness disappears in a blink of an eye! However, since it is a junmai spec sake, you can enjoy the umami gradually as the temperature rises. On the second day, the dry and astringent taste prevails over the sweetness, which is also to my liking 😋. It is a good sake for midsummer with a refreshing and crisp overall taste 😊.

Chiebijin's noble brew, DOLCE. Slightly yellow in color when poured into a glass. It has a rich sweetness mixed with a chocolatey bitterness that is just right, with a slight acidity and spiciness lingering in the end. As the label on the back says, it is outstanding when paired with chocolate 🍫, and surprisingly it also goes well with the peaches I got from my parents🍑✨. It is interesting to discover new things when you try to marry with various things without being bound by stereotypes 😆.

The sake I chose when I returned home for Obon was Gold Junmai Daiginjo by Popular Sake Brewery. This sake brewery is very particular about the traditional method of making sake, and everything is made in wooden vats. It is a junmai daiginjo that is polished to 50%, so there is no cloying taste at all ✨It starts with an elegant sweetness and rice flavor, with the aroma of the wooden vat and a slight bitterness at the end. Delicious 😊.

Asahiran" by Hiran is an unfiltered draft made from old-fashioned Asahi rice that has not been bred. The top aroma is modest. When chilled, it has a slightly strong sweet umami flavor, which is followed by a moderate acidity. The flavor changes a little with each sip, and as the temperature rises slightly, the aroma and umami become more apparent, and in addition, a spicy bitterness emerges, which is mixed in a complex way to make it truly ready to drink! This was another great Asahiran that is full of Mori Sake Brewery's specialties.

We will have a bottle of Kenkunichi made from rice called Jinriki, which was edible in the Meiji era. When the bottle is first opened, a beautiful grapefruit-like acidity spreads. Following the previous test brew, Shunyo x Yumachi, this time it's Shunyo x Aizan with Junmai-shu specs gakky♪ It started with strawberry-like sweet and sourness with the usual slight gas. After the spicy and tangy taste came the last of umami bitterness and umami acidity. As the sake cup continues to rise in temperature, the strawberry feeling and the sweet umami of the rice come more to the fore. After finishing one cup, you will want to drink the next one 😋 It is also so delicious that you can drink as many cups as you want.

We had a junmai daiginjo made from Miyakanbai 🌸 Miyamanishiki polished to 45% by the Kanbai Shuzo brewery in Osaki City, Miyagi Prefecture, which we had been wanting to try for a long time. The floral aroma is refreshingly sweet and sour with a delicious bitterness! The clarity is high, the sweetness is moderate, and the acidity is just right!

The first Kaze no Mori in a long time is a colander of Rohafu 507! The first sip is a bit sweet, but as you continue drinking, the sweetness becomes clearer, and then the umami acidity and umami bitterness start to show up. The freshness is the same as usual, with no unpleasant taste at all ✨but the aroma and umami are strong👍. After returning home, I wondered what to drink and chose "Karahashi" by Homare Shuzo, which I had never had a chance to drink before! It is a junmai ginjo made from Omachi. The first sip gives the impression of sweetness with no sourness. As you continue drinking, the spiciness comes out and the trinity of sweetness, umami, and spiciness comes together, which is just the right balance and delicious. There are other sake rice varieties in the Karahashi series besides Omachi, so you have to try them 😆.

The white label on this instrument Masamune is Daiginjo Hakutsumi. It is a Daiginjyo with Yume no Kaori polished to 40%, the specs for the Daiginjyo on display. The initial aroma is more subdued than expected when the bottle is opened, but once you take a sip, you will notice a slight melon aroma and a gentle sweetness. Then came the bitterness and a sharp, sharp taste, with a lingering spiciness on the tongue, which was also pleasantly intoxicating. ☺️ The taste is more subdued than the Kurotsuji I had previously, but the al strength is 15%, and it is still very drinkable. Gakki was also brilliant this time 😆.
