Elegant and refreshing sweetness with a sense of shwashy gas. And a slight bitterness. It goes down the throat smoothly and without resistance. It has a gentle alkalinity of 15 degrees, but the aroma and flavor are well concentrated and beautiful ✨.

Naraman Junmai Ginjo brewed with Sake Mirai. The aroma is of modest green apple 🍏 When cold, the sweet and sour taste and bitterness are restrained and light, but as the temperature rises, the sweet and delicious taste slowly builds and the bitterness becomes more pronounced. The last part is sharp and spicy, and it disappears beautifully. The more you drink, the more delicious it becomes ✨.

After returning home, I wondered what to drink and chose "Karahashi" by Homare Shuzo, which I had never had a chance to drink before! It is a junmai ginjo made from Omachi. The first sip gives the impression of sweetness with no sourness. As you continue drinking, the spiciness comes out and the trinity of sweetness, umami, and spiciness comes together, which is just the right balance and delicious. There are other sake rice varieties in the Karahashi series besides Omachi, so you have to try them 😆.

The white label on this instrument Masamune is Daiginjo Hakutsumi. It is a Daiginjyo with Yume no Kaori polished to 40%, the specs for the Daiginjyo on display. The initial aroma is more subdued than expected when the bottle is opened, but once you take a sip, you will notice a slight melon aroma and a gentle sweetness. Then came the bitterness and a sharp, sharp taste, with a lingering spiciness on the tongue, which was also pleasantly intoxicating. ☺️ The taste is more subdued than the Kurotsuji I had previously, but the al strength is 15%, and it is still very drinkable. Gakki was also brilliant this time 😆.

Junmai Daiginjo made by polishing Futato's Aizan to 48%. The first time the bottle is sealed, it is very bubbly and slightly effervescent. After the sweet grape-like aroma and sweet flavor spread out, a refreshing acidity and slight astringency appear and disappear beautifully. The flavor is also very rich, so you feel it is good right away after taking a sip 😋 The sweetness and flavor are well balanced with the acidity and bitterness, and the sake goes down without getting boring! I think I'll try to chase two hares this year.

The first of the 2023 test brews from Masamune Instrumental is a junmai-shu made with a new variety, Shunyo. Immediately after opening the bottle, there is a slight gassy, muscat-like aroma of white grapes. It has just the right balance of slightly sweet flavor and slight acidity and bitterness, and the lingering aftertaste is short and disappears cleanly. The sake is easy to drink at 14°C and has a clear taste with no cloying flavors ✨When the temperature rises a little, the complex umami flavor comes out and the sake goes further 😋.

Junmai Nama Moto from Daishichi Sake Brewery in Fukushima, Japan, is a matured, rich, full-bodied sake for warming, but this is a limited shipment of pure sake that needs to be kept chilled! This one is a limited-edition, must-be-cooled sake! The aroma immediately after sealing seems to be the same as that of the regular version, but once you take a sip, the fresh acidity and the deliciously spicy bitterness mingle together and disappear beautifully. On a hunch, I drank it in a wine glass, which was also a great match! It tastes like a classic modern, clean, slightly dry white wine 😆. It was a fresh yet powerful modern version of Daishichi, different from the usual Daishichi koisho 🥰.

We will be having Kitashizuku 45 from the Sanzen Sakura Sake Brewery, which moved its sake brewery from Gifu Prefecture to Hokkaido in the 143rd year since its establishment. The top aroma is modest, but a gorgeous fragrance spreads as you take a sip, followed by a hint of honey and a raw aroma. As you continue drinking, the temperature rises and the sweetness becomes richer, with a pleasant acidity and bitterness at the end. The final taste is pleasantly acidic and bitter, with a clean, refreshing flavor and a crisp finish.

We had a glass of Tenmei, made with 37% Yume-no-Ko (dream fragrance) from the Aizu Sakashita region. The clear sweetness, soft rice flavor, and beautiful acidity blend together to create what can only be described as "delicious. As the temperature rises, the bitterness also comes out, and the whole wine is organized and disappears beautifully. On the second day, the spiciness and umami become even more intense! This Junmai Daiginjo is carefully produced in small batches. The golden label on the bottle was a rich and delicious taste with a lot of spirit and Tenmei ✨.

We opened a mouthful of Jikin Hachitan-Nishiki today and enjoyed it right away! It has a clear sweetness, followed by a soft acidity and bitterness. None of the sweetness, acidity, or bitterness stands out, but the balance of the three tastes are in harmony with each other and are intricately intertwined to create a wonderful umami taste. The aftertaste is very refreshing while leaving a fruity aroma in the nostrils. It is a beautiful sake that leaves a lasting impression, not a strong statement, but still tastes great. ☺️

The first Zenkichi I finally got to drink! When poured into a glass immediately after sealing, it has fine bubbles and a slight sparkle. In addition to the honey-like aroma, it has a sweetness and a slight acid bitterness, and the aftertaste is short and fades away. It has a smooth and clean texture despite being a draft sake, and it is very easy to drink with no dullness at all! It was a very tasty Zenkichi that we couldn't resist having another glass 😊.

I'll have a glass of Tobiroki 😆 unfiltered raw after a long time. The mouthfeel is smooth and light. It has a thick, sweet flavor that spreads and finishes with a slight sourness and a sharp, umami bitterness. As you continue to drink, the flavor becomes more complex and thicker, with a tangy spiciness of 17 degrees alcoh. It is no exaggeration to say that Tobiroki introduced the world to the unfiltered, unpasteurized sake that has now become commonplace! It is a delicious sake with a rich umakuchi taste and presence, yet it is beautifully smooth and can be savored slowly 😋.

Risshun morning pressing, this year at Senkou! It is full of transparency and freshly pressed, and the taste couldn't be fresher! Finally, I could drink it... Tobiraman! A light nigori sake made with Nagasaki's edible rice, Nikomaru, at 14 degrees Celsius. When served cold, it has a light taste with a full aroma and the richness of nigori rice. It has a complex flavor with a good balance of sweet, sour, and bitter tastes. Warming it up a little brings out the sweetness and acidity and enhances the flavor. You can enjoy it at various temperatures from cold sake to hot sake. ☺️

I would love to drink the Tachiharu Asashibori, but I have to hold back and drink the Hirotogawa first 😆. The aroma and flavor are mild and fresh when the bottle is cold. As the temperature rises, a refreshing acidity appears and the flavor becomes more intense and bitter. On the second day, the freshness remains the same, and the sweetness, umami, acidity, and bitterness are well balanced and harmonized, and the umami of the rice also comes out, making it even more delicious. It is so easy to drink that it is hard to believe that it is 16% alc.

Kaze no Mori, which I sometimes want to drink. Today, we will have Omachi 607. This time, it was reissued as a Challenge Edition under the name "Shiborika". When poured into a glass, the aroma of muscat rises. A sip of this sake immediately reveals a strawberry-like berry aroma, followed by a subtle sweetness and umami, and a pleasant bitterness to finish it off. It is a good value for a reissued sake. It is smooth and clear with a powerful and gorgeous aroma and taste, and is a delicious sake that you can taste the moment you drink it.

Hououmida after a long time Junmai Daiginjo-Unfiltered Unrefined Nama-shu made from 100% Aizan. Packaged in a magnum champagne bottle, it has an appearance not unlike a Japanese sake 😁. Immediately after opening the bottle, it has a rich aroma, a thick sweet-tart bitterness with no acidity, and a long aftertaste. As the temperature rises, it gradually becomes more pineapple-like. After a couple of days, a slight sourness is added and the balance of sweetness, umami, sourness and bitterness improves, and the curd is removed, making it even softer and smoother. It was a freshly squeezed, yet rich and umakuchi (delicious) sake.
