Tonight is Zenkichi! We will have hiyaoroshi made from 100% Miyamanishiki. The sweetness and bitterness are well balanced. The last taste is spicy and has a good sharpness! The flavor and aroma are both rich and concentrated. It was the perfect Zenkichi for a long autumn evening 🍶🌙.

Ozeyuki is a pure Daihiya Oroshi, a long time coming! From the first sip, the mouth is filled with ripe pear🍐, then acidity and bitterness reminiscent of green apple 🍏, and finally a gentle sweetness and a slight bitterness with a nice sharpness. Only pure Dai is soft and smooth✨Ozeyuki hiyaoroshi is full of richness and umami! Delicious 😋.

It has been a while since I have had Morishima! It seems to be the only junmai sake in the Morishima range. It has just a hint of sweetness and a gentle acidity. It finishes with a delicious bitterness and a lingering taste like white grapes. Overall, the taste is calm. It seems to be bottle-warmed and fire-quenched, but it is fresh as if freshly pressed and very tasty to the palate 😋.

Sono Kangiku's Ken Aizan. Last year it was fire-aged, but this year we will have an unfiltered, raw version of a special order purchased from Yajima Sake Shop! It starts with a hint of grape aroma and a soft sweet flavor! The mouthfeel is smooth and light. As you continue to drink, the bitter and astringent taste and aroma gradually appear, and the last part has a lingering alu feeling and a tangy, spicy aftertaste. I am sure you will not be able to stop refilling and will empty the bottle as soon as possible 😋.

It has been a long time since I have been to Kaze no Mori. We were served a test brew, which is usually brewed with ultra-hard water but this time with soft water. When poured into a glass, it was effervescent and fresh. The sweetness is followed by a bitter and astringent taste that is quite delicious. The 90% low-polished rice is also rich and complex.

The year-round version of Collage Junmai Ginjo The aroma of young melon is almost nonexistent, but when you take a sip, the umami slowly rushes in from the spicy bitterness. Compared to the seasonal sake, it has a calm and gentle flavor, making it a good sake for a mealtime drink.

I added wine yeast for Chardonnay and Akita yeast at different times, and the rest, God willing, I will make love to Yamamoto's Japanese rhyme, so I will have it in a wine glass! The aroma when you open the bottle is definitely that of wine 🍷. The sweetness of the rice is like sake at first, but the acidity and astringency gradually follow, and the second half of the bottle has a white wine-like atmosphere. It is not Niimasa no Hi🎉No.6, but we will have a cosmos of COLORS. When the bottle is opened, the acidity is soft. It has a gentle sweet umami taste and a slight umami astringency, and it disappears nicely. At first I thought the acidity was weak, but as the temperature rises, the beautiful acidity takes effect, and the aroma of the wooden vat doubles the flavor! It is still a beautiful and clear sake. ☺️

Suehiro Shuzo's Genzai. They also won a gold medal at the New Sake Competition for their Genzai daiginjo, but this is not that award-winning sake, but an affordable special junmai. It starts off with a piquant and refreshing sweet and sour taste! The taste is powerful with a strong sense of presence, but the alcohol content of 15 degrees makes it easy to drink and enjoy 👌. We are looking forward to adding this sake to our lineup next year and beyond 😊.

It was a hot day, so we opened a bottle of Ozeyuki's Summer Gin, our first in a while! This is the first summer sake of the season. ⛱️ Slightly sweet standing aroma... 😋 The balance of crisp, soft sweetness and refreshing bitterness is very well balanced and juicy delicious 😋. The slightly light alkalinity of 15 degrees Celsius and the pure, clear, transparent mouthfeel make it a delicious summer sake that goes down a treat 😊.

The last spring sake of the season was Tokachi Sakura Light Nigori from Kamikawa Taisetsu Brewery, a newcomer to our group. When served without stirring, it has a soft sweetness, followed by a good amount of bitterness with spiciness. The balance is very nice and delicious! After stirring and pouring the second cup, the light nigori with the ori can be seen well, and the sweetness and umami have increased to the point where the spiciness disappears 😆. It was a spring sake with a light and soft mouthfeel but with a strong flavor 🌸🌸🌸

This is Miyazumi's Fukunoka, a limited edition of this season's fresh sake! This is the first time I have had it in about two years! The berry aroma is gorgeous, followed immediately by a moderate bitterness, but the final taste is tangy, sharp, and has a short aftertaste. The sweetness and umami come out with each successive saké (cup). It is much more gorgeous than the last time I drank it, and it is outstandingly delicious.

The first Jikin in a long time was opened 🎉. On the first day of opening the bottle, there was a gorgeous heady aroma. The first sip is sweet and delicious, but a slight acidity also appears, and the last sip is dry and bitter with a short aftertaste. After two or three more sips, the sweet and sour strawberry flavor, just like the pale pink label, makes you want more! The second day starts with sweet and sour strawberries 🍓 The flavor is more rounded than the first day. As I drank more, it gradually changed from strawberry to apple 🍏The balance of sweet and sour and bitter is very good and stable 🥰.

We will be drinking Takasago by Kiyamasa Shuzo, a well-known brewer of Jikin! On the first day of opening the bottle, there is almost no standing aroma, and the sourness and slight bitterness typical of the Nama-moto style of sake brewing are present, followed by a fusion with the concentrated umami. As the temperature rises, sweetness is added to the acidity, making it even more delicious. The last taste is tangy, spicy and bitter, which is quite to my liking 😋. On the second day, the acidity settles down and the sweetness opens up to become even more delicious! It is a very rare and beautiful sake, so I will enjoy it slowly 😊.

Sealed off a nice first Suiboku Ash with Turtle Tail 🎉. The aroma is subdued and calm. It starts with the acidity typical of Shinmasa, and a hint of bitterness slowly emerges along with a hint of the aroma of the wooden vat. The mouthfeel is clear and silky. You can enjoy its delicate and complex umami. The price is a little expensive, so we would like to enjoy it in small sips.

Today's wine is Dewa Sanzan by Ni-Usagi, a junmai ginjo polished to 55%. The mellow aroma of muscat and sweetness spread across the palate, but soon the spicy bitterness rushed in, and in the end, only the aroma of muscat passed through the nostrils. As you drink more, the aroma becomes less intense, and the dryness is more pronounced. As the label on the back says, it is a delicious sake with a very good balance of conflicting flavors such as sweet and spicy.

Dai-Shichi Namaeshige Junmai Hon Nama is freshly pressed and only available for limited shipment at this time of the year. It has a refreshing acidity and a soft sweetness, followed by a firm umami and bitterness. As the temperature rises, a moderate astringency and spiciness appear, making it easy to drink without getting tired of it. The acidity, sweetness, bitterness, astringency, and spiciness are all so delicious that we can't stop drinking 😆. It is a delicious sake that is fresh and smooth to drink, but also has a powerful flavor 🥰.
