We will have a bottle of Kenkunichi made from rice called Jinriki, which was edible in the Meiji era.
When the bottle is first opened, a beautiful grapefruit-like acidity spreads. The sweetness is moderate, and the bitterness and astringency come later, but they disappear quickly and without unpleasant taste. The rice flavor is also present, and sometimes a tangy, pungent taste emerges, making it an excellent wine to drink!
