This is Miyazumi's Fukunoka, a limited edition of this season's fresh sake! This is the first time I have had it in about two years! The berry aroma is gorgeous, followed immediately by a moderate bitterness, but the final taste is tangy, sharp, and has a short aftertaste. The sweetness and umami come out with each successive saké (cup). It is much more gorgeous than the last time I drank it, and it is outstandingly delicious.

The first Jikin in a long time was opened 🎉. On the first day of opening the bottle, there was a gorgeous heady aroma. The first sip is sweet and delicious, but a slight acidity also appears, and the last sip is dry and bitter with a short aftertaste. After two or three more sips, the sweet and sour strawberry flavor, just like the pale pink label, makes you want more! The second day starts with sweet and sour strawberries 🍓 The flavor is more rounded than the first day. As I drank more, it gradually changed from strawberry to apple 🍏The balance of sweet and sour and bitter is very good and stable 🥰.

Takasago純米大吟醸 生

We will be drinking Takasago by Kiyamasa Shuzo, a well-known brewer of Jikin! On the first day of opening the bottle, there is almost no standing aroma, and the sourness and slight bitterness typical of the Nama-moto style of sake brewing are present, followed by a fusion with the concentrated umami. As the temperature rises, sweetness is added to the acidity, making it even more delicious. The last taste is tangy, spicy and bitter, which is quite to my liking 😋. On the second day, the acidity settles down and the sweetness opens up to become even more delicious! It is a very rare and beautiful sake, so I will enjoy it slowly 😊.

Sealed off a nice first Suiboku Ash with Turtle Tail 🎉. The aroma is subdued and calm. It starts with the acidity typical of Shinmasa, and a hint of bitterness slowly emerges along with a hint of the aroma of the wooden vat. The mouthfeel is clear and silky. You can enjoy its delicate and complex umami. The price is a little expensive, so we would like to enjoy it in small sips.

Today's wine is Dewa Sanzan by Ni-Usagi, a junmai ginjo polished to 55%. The mellow aroma of muscat and sweetness spread across the palate, but soon the spicy bitterness rushed in, and in the end, only the aroma of muscat passed through the nostrils. As you drink more, the aroma becomes less intense, and the dryness is more pronounced. As the label on the back says, it is a delicious sake with a very good balance of conflicting flavors such as sweet and spicy.

Dai-Shichi Namaeshige Junmai Hon Nama is freshly pressed and only available for limited shipment at this time of the year. It has a refreshing acidity and a soft sweetness, followed by a firm umami and bitterness. As the temperature rises, a moderate astringency and spiciness appear, making it easy to drink without getting tired of it. The acidity, sweetness, bitterness, astringency, and spiciness are all so delicious that we can't stop drinking 😆. It is a delicious sake that is fresh and smooth to drink, but also has a powerful flavor 🥰.

The aroma is mild. The first sip is sweet, but gradually a gentle sweetness and moderate acidity spreads. The last part has a good spiciness and a nice sharpness. Although it is unfiltered, there is no heaviness, and it is smooth to the palate. After a few days of drinking, the sweetness has gone away and the acidity has risen, but it is also delicious. Hana Yuu is good, but Suiyu is as good as it gets.

Miyazumi Unfiltered Nama â A fresh, raw sake. It has a young melon aroma and a refreshing sweet flavor that gradually gives way to a moderate acidity. The last part is a powerful umami with a bitter bitterness that disappears cleanly and beautifully. As the temperature rises, the complex intertwining of umami flavors leaves you wanting another glass 😆 This is a gem that can only be enjoyed at this time of year 🥰.

Ishikawa's Tedorigawa is a light nigori type, limited to spring. There is some ooze at the bottom of the bottle, but we did not shake it to avoid the danger of opening the bottle. The refreshing aroma and gentle sweetness of rice spread gradually with a spicy, sour and bitter aftertaste. Shake the bottle to mix in the oriki, and you will enjoy the soft, rich flavor with a slight sparkle. It is very delicious with a clean, smooth mouthfeel that is less floral. We wish you a warm spring in Hokuriku.

The first sip opens with a fruity aroma and is sweet and sour and very juicy in the beginning! The full-bodied sweet flavor gradually gives way to a complex, tangy bitterness. The freshness of the sake makes it clear and well-balanced. And with a moderate alkalinity of 15 degrees, it gently soaks through. ☺️ It was a stable taste that did not betray our expectations 😆.

We will have our first Gagakuyo. It has a refreshing sourness of grapefruit with a moderate sweetness. The soft umami and bitterness disappear beautifully. The low alcohol content of 12.5 degrees makes it light and easy to drink. It is easy to drink it in large gulps, but when the temperature begins to rise, the flavor expands and it is just ready to drink.

Michisakari香るしぼりたて 純米大吟醸

Sanzenmori has a spring-like label. The first aroma is a sweet fruity peach aroma 🍏 The second sip has a green apple-like aroma with only a hint of sweetness 🍏 The second half of the bottle is even less sweet and the dry bitterness prevails. The sake is super dry, with a sake strength of +16 to +17, and the final taste is crisp and sharp! It was delicious with a gorgeous aroma of freshly squeezed sake and a dry, delicious bitterness 😊.

It has been a while since Ippodo's last light nigori. The top clear water has a sweet and sour taste, and the sweetness is slight. When mixed with orikori, the sweet-savory taste of the koji is enhanced with a hint of bitterness. The fresh and refreshing sweetness and bitterness finish off the nigori, making this nigori sake to my liking! It's so delicious that it will be gone in no time. I can't stop refilling 😋.

It is a Jungin Nama-shu brewed with Misato Nishiki from Hanayuup ❤️ with a bright red-pink label. When the bottle was first opened, it had a fruity aroma and was very juicy! I thought it would end up just being sweet, but later on, a slight sourness and a dry, bitter astringency also followed. After a few days from opening the bottle, the sweetness that was prominent on the first day was suppressed, and the bitter-sweetness and astringency became balanced and delicious. Fresh and gorgeous, it is easy to drink and delicious!

Junodai Unrefined Nama, polished to 35% rice polishing ratio. It has a gorgeous standing aroma and a fruity overtone! The sweetness and umami rush together, and the spicy bitterness gives it a sharp kick. The first half is sweet, but the second half is spicy, so you will never get tired of drinking it. As the temperature rises, the floral and spicy flavors merge! The glass is quickly emptied, so you will want another glass as soon as possible. It is a delicious sake with no peculiarities at all, and it goes down smoothly because it is so smooth and easy to drink.

When poured into a glass, Kasumizake becomes slightly cloudy. The sweet taste fills the mouth with a refreshing sweetness, which is followed slowly by a bitter taste. The sweetness and bitterness are well balanced and delicious 😋. After about 2 days from opening the bottle, the curd is removed and the taste becomes even softer and mellower. It is a fresh and beautiful sake that you can have many more cups of. ☺️

Karahashi label by Homare Sake Brewery. Unfiltered unpasteurized sake made from sake rice Yume no Kou. Fruity ginjo aroma. The aroma of melon and sweetness, followed by a slight sourness and bitterness, finally fading away with a slight spiciness. Although it is unfiltered raw, there is no bitterness or peculiarity, and the impression is of a soft, sweet, umami taste. After a few days of drinking, the balance between sweet and spicy has improved. It is a delicious sake that is so easy to drink that it makes you want to drink more and more. ☺️

Izumikawa's Funakuchi. It is a slightly orizumi (orizumi is a slightly cloudy, raw sake), so the first thing to drink is the top clear liquid. The aroma is still young and melon-like, with a soft sweetness and a tangy, spicy bitterness. The balance of sweetness, spiciness, and bitterness gradually improves. When mixed with ori, it becomes slightly cloudy. The spiciness subsides and the sweetness increases, creating a mellow mouthfeel that keeps you coming back for more. It is a very fresh and delicious sake that can only be drunk at this time of the year.
