We opened a bottle of Shizenkou's 馥郁 Junmai, which we drank a year ago and enjoyed so much that we decided to slowly savor it in a bottle this time. The first impression is of sweetness, but as you continue drinking, the acidity and bitterness mix with the umami to create a multi-talented flavor. The balance of sweetness, umami, acidity, and bitterness is so good that you will never get tired of drinking it. On the second day after opening the bottle, the umami deepens and the spiciness comes out moderately, which makes the sake go further. It goes well with Japanese food such as simmered dishes with dashi broth! It is a delicious sake that is soft and easy to drink at 15 degrees alc. ☺️

The annual winter event, Hirotogawa Nigori Nama Sake! I opened the bottle gently, and as expected, it was overflowing 😅The abundant carbonation is proof that the sake is still alive. The sweetness and richness of the rice spread through the supernatant, followed by a slight bitterness. The aroma is elegant and wonderful. When stirred further, the sweetness is reduced and the umami bitterness increases, leaving it clean and crisp. It is a very delicious nigori sake with a smooth mouthfeel.

The first Kuroemon! When poured into a glass, it has a slightly yellowish color. A honey-like aroma emerges, with sweet and bitter tastes and slight acidity. The last is again an aroma of matured honey. It seems to have been aged for about 2 years in 2021BY, and the aroma is rich, mellow, and powerful. Even when heated up, the strength remains the same and the flavor is even richer 👍.

This is an original from Gonoi Sake Brewery and brewed by Akebono Shuzo with a central label. This nigori sake is made with Mizuho Kogane and contains a lot of ori. The supernatant is sweet, sour, and juicy, with a delicious bitterness in the latter half. The top clear layer alone is delicious with just the right amount of oriki! Shaking the bottle and stirring it makes it even richer and more fragrant, and you can't stop drinking more. The balance between fresh, refreshing sweetness and umami-bitterness is very nice, and we have found a high-level nigori sake 😋.

Ura-Roman is a blend of several Junmai Ginjo classes from the Romain series. When poured cold in a glass, it has a gorgeous aroma, followed by a full sweet umami flavor, then acidity, spiciness, and finally umami bitterness, with a good balance of sweet, spicy, and sour. When heated, the sweet umami expands and the spiciness sharply cuts through the sweet umami. Heated sake is perfect for this time of year when the weather is getting colder. ☺️ You can enjoy the different tastes of cold and heated sake 😊♪

Today's sake is a special junmai from Hirotogawa. It has a light, refreshing mouthfeel that is hard to believe it is 16 degrees alc. The umami of the rice spreads slowly, followed by a slightly tangy, bitter taste. The aroma is modest at first, but as the temperature rises, a slight melon aroma emerges. The melon aroma and flavor is stronger on the second day after opening the bottle. It is a beautiful sake that is soft and fresh and should not be drunk too much 🥰.

We will have a freshly squeezed raw sake from Shiboritake! The aroma when the bottle is just opened is gorgeous🌸The alcohol level is 20°, which is a strong style, but it has a light, refreshing taste with a slight sweetness and umami bitterness from the rice. The spiciness and sharpness of the sake makes it easy to drink without getting tired of it. It is a strong umami-guchi sake that makes you feel warm immediately, probably because you drank it on an empty stomach. ☺️

The first Sairai in a long time is an unfiltered, unpasteurized sake. It has a gorgeous aroma of grapes, acidity, sweetness, and bitterness. As you drink more, the spiciness and the umami double in size. The rich, dark flavor and aroma unique to unfiltered sake was delightful and delicious 😊.

It's been a while since I've had mansaku flowers♪ I'll take the handwritten pink label. The aroma is slightly green apple. The sourness comes first, and then the complex umami spreads out mixed with bitterness, and as the temperature rises, the umami becomes even stronger. Although it has been fire-aged once, it is as fresh as a fresh sake. It is smooth, refreshing and delicious. ☺️

The first bottle for November is a junmai nama sake from Daishichi. This is a cold-aged nama sake. Since it requires refrigeration, it has a slightly fruity aroma like muscat when you sip it while it is chilled. I never expected to smell muscat from that Daishichi! This is delicious! As you continue to drink, you will be surprised to find a complex umami flavor with a firm acidity and spiciness! It is a fresh and refined version of the usual Daishichi sake. The sake is Daishichi, and the umami comes first 😆.

This year, I was able to get the red label of Denshogiku, which I couldn't drink last year! The bottle was opened with a pop and a bang. ‼️ I have a feeling that it is full of gas. After stirring it well and pouring it into a glass, it has a sweet aroma. It has a slight bitterness, so you can drink it without getting tired of it. The aroma and taste are deeper and richer than the usual Kangiku, so be careful not to drink too much.

Sannomaru Autumn hiyaoroshi from Kaito Otokoyama Shuzo. There is almost no standing aroma, but the hint of aroma is pear. It is a junmai sake that was fire-aged before storage and bottled fresh. It has a rich flavor, but it is still fresh, so it is not hard to drink and before you know it, you will be back for more.

The aroma of grape is very strong, and when you drink it, the bitter taste follows the pear-like sweetness, and it finishes with a nice dry astringency. The first Tasake in a long time is Akita Sake Komachi♪ It starts with a fresh apple-like aroma and a gentle sweetness, followed by a soft acidity from the mid-palate. The second half of the bottle starts with bitterness, and the last half is tangy and spicy, and it disappears quickly and crisply. The aroma and flavor deepen as the saké is poured over and over. It is a refreshing and clean sake with a strong umami flavor.

It was October, so I opened a bottle of Juro Man, an autumn sake from the Loman series! The first sip is a perfectly ripe melon! The second sip is also a perfectly ripe melon without any blurring! It is a Junmai Daiginjo with good cost performance and good taste, and is one of the recommended autumn sakes 😆.

Kangiku Kenaiyama! It was still on the store shelves, so I bought it immediately 🎉. The bottle opened so vigorously that it was hard to believe it was fire-aged once 🎉The harmony of elegant sweetness, acidity, and bitterness is wonderful. The astringency that comes out in the last part also serves as an accent and makes you want to take another sip without getting tired of it. The aroma is sweet, but the taste is less sweet than one would expect from a Kangiku with a complex and deep flavor.

Sake Mirai by Musical Instrument Masamune. This is probably the first time we have used Sake Mirai 🎉. The aroma of grapes fills the mouth and after the soft sweetness, it gradually changes to a young melon as a moderate acidity and bitterness appear. As the temperature rises, the umami bitterness increases even more 🎉. At 15 degrees Celsius, it is easy to drink and the sweetness, acidity, and bitterness are well balanced and harmonized. This sake future label also does not betray expectations 😆.

Aizu Musume: This is a souvenir-domesticated sake freshly stored that I purchased when I stopped by Aizu Wakamatsu on my way home for the Obon holiday. There is almost no standing aroma, but a hint of muscat spreads at first, and the spiciness and bitterness gradually emerge with the umami of rice. The last part is sharp and spicy with a nice sharpness. Although we thought it was a dry sake, it is slightly sweet with a numerical value of -2 degrees. However, the alcohol content is 17 degrees, making it an excellent sake to drink! It is a powerful umashi sake 👊.
