This sake is made by a sake brewery called Popular Sake Brewery in Nihonmatsu City, Fukushima Prefecture. This brewery uses traditional methods, making only ginjo-shu and only by hand. This is the first time I have encountered it.
What kind of sake is it? It is not gassy, but has a sweet ginjo aroma.
Let's try it!
Oh, it has quite a lot of acidity. It's a fruity sake with a nice mouthfeel. Perhaps because of the acidity, it has a clean aftertaste.
It is not too sweet and has a nice mouthfeel. ‼️ You can have many glasses of this!
This sake was purchased during a visit to Fukushima Prefecture.
Popular Ichigold Popular Junmai Daiginjo, a sake brewed in Nihonmatsu City, Fukushima Prefecture.
It has a gorgeous aroma, elegant and subtle sweetness, and spiciness. It also has an aroma that only a wooden vat can give.
We prefer it when it is slightly warmer than when it is cooled down.
Postscript
The next day after opening the bottle, the aroma of koji, sweetness, and especially sourness increased, and the overall balance shifted in the direction we prefer.
Sake at soba noodles restaurant.
It is a refreshing sake that goes well with Japanese cuisine. It is not too sweet and makes the food more delicious. Thank you 😆😆.
